SAUSAGE GRAVY
A classic Southern-style American dish and a diner staple, homemade sausage gravy is creamy, salty, and the ultimate in breakfast comfort foods.

- In a cast iron skillet over medium-high heat, brown the sausage breaking it up as you cook until it's no longer pink. Do not drain the fat.
- Melt the butter, and sprinkle the flour over the cooked sausage. Cook the flour for 2 minutes, then slowly add milk and stir constantly as you pour it in to avoid clumps.
- Bring the mixture to a boil, reduce heat and simmer until it's thickened.
- Season with garlic powder, salt, and pepper. Taste before adding salt, some sausages are saltier than others and may not need additional salt added.
- Serve immediately after cooking over split biscuits.

- With your finger, tear small pieces of sausage and add them in a single layer to a large heavy skillet. Brown the sausage over medium-high heat until no longer pink. Reduce the heat to medium-low. Sprinkle on half the flour and stir so that the sausage soaks it all up, then add more little by little. Stir it around and cook it for another minute or so, then pour in the milk, stirring constantly.
- Cook the gravy, stirring frequently, until it thickens. (This may take a good 10 to 12 minutes.) Sprinkle in the seasoned salt and pepper and continue cooking until very thick and luscious. If it gets too thick too soon, just splash in another 1/2 cup of milk or more if needed. Taste and adjust the seasoning.
- Spoon the sausage gravy over warm biscuits and serve immediately!

- Place sausage in a large, deep skillet. Cook over medium high heat until evenly brown. Remove sausage, drain and set aside.
- Pour off most of the fat from the pan, leaving about 2 to 3 tablespoons. Return pan to medium-low heat and add flour. Using a whisk, stir vigorously until roux forms, scraping bottom of pan. Reduce heat to low and let roux cook at least 5 minutes, stirring occasionally. Grandma always "burned" hers a little on purpose.
- Add milk in a stream, whisking the whole time. After adding about 2 1/2 cups, turn heat to medium and continue cooking, stirring constantly. Bring gravy to a boil and cook to desired thickness. Add more milk if a thinner gravy is desired. You may also add some of the cooked and crumbled sausage to the gravy.

- Cook sausages: Heat oil in a large skillet / fry pan over medium high heat. Add sausages and cook, turning, until browned as much as possible all over and cooked through. Cook time will differ depending on sausage size - mine take around 8 minutes.
- Remove sausages onto a plate. Turn heat down to medium.
- 2 tbsp oil remaining: You need around 2 tbsp oil left in the skillet. If you have much less, add a bit of butter or oil.
- Saute onion and garlic: Add onion and garlic, cook until golden brown - around 4 minutes.
- Cook off flour 2 minutes: Add flour and mix through. Then cook, stirring constantly for 2 minutes.
- Gradually add beef stock: Add about 3/4 cup of beef broth and mix into the onion so it becomes a sludge. Then add remaining beef broth and mix until combined. If it's lumpy, use a whisk to help make it smooth.
- Thicken gravy: Simmer, stirring, for 2 to 3 minutes until the gravy thickens but is slightly thinner than you want - it will thicken more as you serve it.
- Season: Add salt and pepper. Stir, taste, then add more salt if you want.
- Serve sausages with plenty of gravy, with mashed potato and peas on the side. (Low carb option - Creamy Cauliflower Mash)

- Fry sausages for 15 mins or until browned, then remove from pan and keep warm. Heat onions in same pan, then add flour, stirring for 1 min. Add thyme, then gradually add stock. Bring to boil then simmer for 5 mins until smooth. Add Worcestershire sauce, season and serve with sausages.
- For the onions: Makes 600g, which is 3 batches. Prep time 5 mins, cook time 30 mins. Melt the butter in a large, deep frying pan and stir through the onions. Cover with a lid and cook gently for about 10 mins, until softened. Remove lid, add sugar, then cook 15-20 mins, stirring, until all of the liquid has evaporated and onions have turned golden. SHELTON SAUSAGE GRAVY
This recipe has been in my family for at least two generations, possibly more, as my grandmother cannot remember which of my family members gave it to her! As she has been diagnosed with ALS (Lou Gehrig's disease) and is advancing in its progression quickly, she can't make it anymore, but my mother and I carry on the tradition for her! This recipe is a testament to her memory. She is still with us as of this posting, but in the future, I'll be able to remember her every time I make it. Emotional attachments aside, it's the best sausage gravy I've ever eaten, hands down, and tends to contain more sausage than even the best restaurants can fit into their versions! It isn't healthy - at all - but you'll at least die happy! Of course it's recommended that you bake your own biscuits from scratch, but failing that, frozen biscuits will work just as well. (You can probably use the refrigerated tube kind too but I always use frozen, they're just better somehow in my opinion!)

- In a large skillet, cook the sausage, but do not brown or crisp. When using pork, this distinction is very clear when you see it in the pan, so don't worry about missing the mark.
- Add the onion and cook until transparent.
- Drain off all but 2 tablespoons of fat from the pan.
- Add the flour and stir it in well, then cook on medium heat for 6-7 minutes.
- Add the milk all at once and add seasonings.
- Cook until thickened. This takes awhile because of the amount of liquid - for me it usually takes anywhere from 10-20 minutes. Keep an eye on it and your patience will be rewarded.
- Place 3 biscuit halves on each plate and top with gravy. Serve and enjoy!

- In a large skillet brown sausage over medium heat. Crumble sausage as it browns so you have many small pieces of sausage. When sausage has browned and cooked thoroughly remove sausage from pan. Measure out rendered fat in the pan.
- Add butter if necessary so the amount of fat is equal to two tablespoons. For example, if you render only 1 tablespoon from the sausage, add 1 tablespoon of butter. If adding butter allow butter to melt completely. Add 2 tablespoons of all-purpose flour to skillet. Stir flour and fat together, and cook over medium heat for about two minutes. The flour will begin to brown and become fragrant. Add 1/2 cup of milk to the pan, stir until the milk thickens. Add 1/2 cup to milk to the pan, and stir until the second addition thickens. Add remaining milk to pan, allow to thicken and add sausage.
- Cook for 1 to 2 minutes, and taste gravy and adjust seasonings with salt and pepper if necessary. Serve gravy over toast or biscuits.
