SHEET-PAN GLAZED MEATLOAF
Cooking meatloaf in a sheet pan cuts down the cooking time dramatically, making this a perfect weeknight dinner. Shaping it thin and flat ensures that you get enough sticky-sweet glaze in every bite.

- Position a rack in the upper third of the oven and preheat to 375 degrees F. Mix 1/2 cup of the ketchup, the breadcrumbs, milk, eggs, parsley, and 1 tablespoon Worcestershire sauce together in a large bowl and set aside until the breadcrumbs have absorbed the liquid, about 3 minutes.
- Add the ground beef and pork, onion, garlic, 1 tablespoon salt, and 1/2 teaspoon pepper to the bowl and mix until well combined (do not overmix).
- Transfer the meat mixture to an 18-by-13-inch sheet pan (see Cook's Note) and press it into an even layer covering the entire surface. Whisk the remaining 1 1/2 cups ketchup, 1 tablespoon Worcestershire, brown sugar, cider vinegar, and chipotle powder in a small bowl. Brush the meatloaf with the sauce.
- Bake until the meat is cooked through, about 20 minutes, then turn on the broiler setting and broil until the top becomes caramelized and dark in spots, 3 to 4 minutes more, turning the pan periodically for even broiling. Let rest 5 minutes before serving.
CHEESY DIJON-BALSAMIC SHEET PAN MEATLOAF
Spreading the meatloaf out in a sheet pan makes for a much faster cooking time, as well as more surface area for the tangy Dijon balsamic sauce and melted cheese. This recipe yields enough for a crowd -- or for excellent meatloaf sandwiches the next day.

- Mix together the breadcrumbs, milk, parsley, eggs, 1/4 cup of the French Style Dijon Balsamic Vinaigrette and 1/4 cup of the ketchup in a large bowl. Set aside until the breadcrumbs have absorbed the liquid, about 3 minutes.

- Bake until cooked through, about 20 minutes, then turn the oven to broil. Scatter the cheese over the top and broil, turning the pan periodically for even browning, until the top is caramelized and dark in spots and the cheese is melted, 3 to 4 minutes. Sprinkle with chopped parsley.
SHEET PAN MEATLOAF
This meatloaf cooks in about 1 hour and has minimal cleanup required. It's perfect for a weeknight meal. Pair with three-ingredient macaroni and cheese, and a vegetable to round out this meal.

- Preheat oven to 375 degrees F (190 degrees C).
- Combine ground beef, eggs, bread crumbs, onion, 2 tablespoons BBQ sauce, Worcestershire sauce, garlic powder, salt, and pepper in large bowl and mix by hand.
- Line a sheet pan with foil and spray with cooking spray. Shape meatloaf mixture evenly into a rectangular shape.
- Bake in the preheated oven for 45 minutes. Brush with remaining BBQ sauce (or more as needed) and bake until internal temperature reaches 165 degrees C (73 degrees C), about 15 more minutes.
- Slice meatloaf and serve with extra BBQ sauce if desired.

- Preheat oven to 425°. In a large bowl, combine eggs, tomato juice, oats, onion and salt. Add beef; mix lightly but thoroughly. Shape into six 4x2-1/2-in. loaves; place on a sheet pan or large shallow roasting pan. Combine ketchup, brown sugar, mustard and nutmeg; brush over loaves. , Combine potatoes with 2 tablespoons oil, 1/4 teaspoon garlic salt and 1/8 teaspoon pepper; toss to coat. Add to pan in a single layer. Bake 25 minutes., Combine asparagus with remaining 1 tablespoon oil, 1/4 teaspoon garlic salt and 1/8 teaspoon pepper; toss to coat. Add to pan. Bake until a thermometer inserted into meat loaves reads 160° and vegetables are tender, 15-20 minutes. Let stand 5-10 minutes before serving.

- Preheat oven to 375°F with racks in center and upper third positions. Lightly grease a 13- x 9-inch rimmed baking sheet with cooking spray; sprinkle ½ cup of the panko evenly on bottom of baking sheet. Stir together onion, Parmesan, milk, parsley, garlic, eggs, Italian seasoning, Worcestershire sauce, and remaining 1 cup panko in a large bowl to combine. Add beef, pork, and 1 tablespoon of the salt to mixture, stir to combine. Transfer meatloaf mixture to baking sheet, and press into an even layer out to edges of baking sheet.
- Whisk together ketchup, brown sugar, vinegar, black pepper, and remaining 1 teaspoon salt in a medium bowl. Spread ketchup mixture evenly over meatloaf. Bake on center rack in preheated oven until cooked through and a thermometer inserted in thickest portion registers 160°F, about 40 minutes. Remove from oven, and turn oven to broil. Broil on top rack until glaze becomes caramelized, about 3 minutes. Remove from oven, and let stand 5 minutes before serving.
