- In a large bowl, beat cream cheese until smooth; stir in the olives and onions. Spread over ham slices. Roll up, jelly-roll style, starting with a short side. Chill for at least 1 hour. Just before serving, cut into 1-in. pieces.

HAM AND CHEESE PINWHEELS

- Lay a large piece of plastic wrap on your counter (I pressed two long sheets together at the edges to create a single larger sheet). Unfold the first sheet of puff pastry in the center of the plastic, then roll it into a 10x12-inch rectangle. Spread with 1 1/2 tablespoons mustard, leaving a 1/2-inch border on all sides. Lay 6 ham slices on top, overlapping as needed. Sprinkle with 1 cup cheese.
- Starting at the long (12-inch) edge, roll the puff pastry into a log. Trim the ends so that they are even, then tightly wrap the log with the plastic wrap. Place in the refrigerator for 20 minutes. Repeat with the second sheet of puff pastry and remaining mustard, ham, and cheese. Preheat your oven to 375 degrees F and line two baking sheets with parchment paper or silicone baking mats.
- Once the log has chilled, using a sharp, serrated knife, carefully cut each log into 1/2-inch-wide slices. (If each log is 12 inches, you will get 24 rolls from each one). Arrange the rolls 1 inch apart on the prepared baking sheets. Bake until the puff pastry is light golden brown and the cheese is hot and bubbly, about 18 minutes. Immediately sprinkle with chopped thyme, parsley, or chives as desired. Let cool slightly. Serve warm or at room temperature.

- Place ham and cheese on each roll bottom. Spread cream cheese over tops. Replace tops. Arrange in a single layer in a greased 13-in. x 9-in. baking pan., In a small bowl, combine the remaining ingredients; brush over rolls. Cover with foil. Refrigerate for several hours or overnight., Bake, covered, at 350° for 20-23 minutes or until heated through.

HAM AND CHEESE IN PUFF PASTRY

- Preheat the oven to 450 degrees F. Place a piece of parchment paper on a sheet pan.
- Lay 1 sheet of puff pastry on a floured board and carefully roll it out to 10 by 12 inches. Place it on a sheet pan and brush the center with the mustard, leaving a 1-inch border around the edge. Place a layer first of ham and then cheese, also leaving a 1-inch border. Brush the border with the egg wash.
- Place the second sheet of puff pastry on the floured board and roll it out to 10 by 12inches. Place the second sheet on top of the filled pastry, lining up the edges. Cut the edges straight with a small, sharp knife and press together lightly. Brush the top with egg wash and cut a few slits in the top to allow steam to escape.
- Bake for 20 to 25 minutes, until puffed and golden brown. Allow to cool for a few minutes and serve hot or warm.
HAM & CHEESE ROLLS
I started making this recipe for my son, who can't eat sweet snacks. It evolved into the "most requested snack" by the whole family. Easy to make and so good!

Steps:
- 1. Heat oven to 375'F.
- 2. Divide dough into 4 squares, pressing seams together to prevent leakage.
- 3. Spread with mustard (as if you were spreading on bread for a sandwich). Now layer half the ham and cheese.
- 4. Roll like a jelly Rolland press dough to cl0se seam and openings at both ends.
- 5. Repeat with second half of dough and fillings.
- 6. Place on baking sheet and bake for 12-15 minutes or until golden brown.
- 7. Cool for 3-5 minutes before slicing into pinwheels about 1" thickness.
- 8. *The beauty of this recipe is that you can substitute the ham for other cold cuts, and the cheese for your favorite. Have fun with the fillings and enjoy.
SHAN'S HAM AND CREAM CHEESE PASTRY ROLLS
This is a simple appetizer recipe. I got this recipe from my mom in law, I changed it a bit and it keeps changing over the years. Serve them hot, and maybe double the recipe they sure go fast.

- Preheat oven to 350.
- In medium bowl, combine cream cheese, ham, parmesan, mustard, ranch, green onion, garlic, hot sauce, jalepeno (if using), cheddar cheese and spices.
- Mix well.
- Roll out dough, separate into 4 rectangles, Press on dotted diagonal lines to seal. ( They are pre-cut into triangles, but its easy to stick together.).
- Spread a quatrer of mixture on each rectangle.
- Roll up staring on long side.
- Cut each roll into 5, 1 inch rolls.
- Place on greased baking sheet.
- Bake for 15 - 20 minutes, or until golden brown.
