My family loves cannoli, but I don't love making the shells. This parfait is an easy way to enjoy the flavor without spending time baking the shells. -Anna Ginsberg, Austin, Texas

1 package (16 ounces) frozen pitted tart cherries, thawed
2 tablespoons sugar
1 tablespoon cornstarch
2 teaspoons lemon juice
PARFAIT:
1 carton (15 ounces) reduced-fat ricotta cheese
1 package (8 ounces) fat-free cream cheese
1/4 cup sugar
2 tablespoons maple syrup
2 teaspoons lemon juice
2 teaspoons vanilla extract
2 cups reduced-fat whipped topping
1/3 cup miniature semisweet chocolate chips
20 chocolate wafers, crushed

Steps:

  • Drain cherries, reserving liquid in a 1-cup measuring cup. Add enough water to measure 1/3 cup; set aside., In a small saucepan, combine sugar and cornstarch; stir in reserved cherry juice mixture until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in cherries and lemon juice. Cool., Place the ricotta, cream cheese and sugar in a food processor; cover and process until smooth. Add the syrup, lemon juice and vanilla; process until combined. Gently fold in whipped topping and chocolate chips., Place 1 tablespoon crushed wafers in each of eight parfait glasses. Top with 1/3 cup cheese mixture and a heaping tablespoonful of cherry sauce. Repeat layers. Refrigerate for at least 2 hours before serving.,

2 cups cold 2% milk
1 package (3.9 ounces) instant chocolate pudding mix
1 can (21 ounces) cherry pie filling, divided
2 cups whipped topping, divided
6 maraschino cherries with stems, optional

Steps:

  • In a large bowl, whisk milk and pudding mix for 2 minutes. Let stand for 2 minutes or until soft-set. Stir in 1 cup pie filling; gently fold in 1 cup whipped topping. , Spoon half of the pudding mixture into six tall glasses or cups. Top with remaining pie filling, pudding mixture and whipped topping. Garnish with cherries if desired.

3 ounces neufchatel cheese
2 cups skim milk, cold
1 (3 ounce) package sugar-free instant chocolate pudding mix
1 tablespoon cornstarch
1/3 cup cherry juice
1 (1 lb) can red sour pitted cherries, water packed
6 (1/16 ounce) packages Equal sugar substitute

Steps:

  • Blend cream cheese with 1/4 cup skim milk on low speed of electric mixer, until smooth.
  • Add remaining milk and pudding mix.
  • Mix 1 or 2 minutes or until smooth.
  • Mix cornstarch in cherry juice until dissolved.
  • Add to cherries and cook until it boils for 1 minute.
  • Remove from heat and stir in Equal.
  • Alternately spoon pudding and cherries into parfait dishes, ending with pudding.
  • Garnish with 2 cherries.
  • Nutrients per serving: Calories 116, fat 3.5gm, cholesterol 14mg, carbohydrate 16g, sodium 304mg.

I thought this up because my grandma loves black forest themed desserts and I have an overabundance of cherry pie filling. You may want to add a little more sweetener to the pie filling or the parfait will be slightly sweet-tart, but I like it this way.

1 package sugar-free instant chocolate pudding mix or 1 package sugar free chocolate fudge pudding and pie filling mix (4 serving size)
2 cups skim milk
24 reduced fat chocolate nilla wafers
1 (20 ounce) can lucky leaf lite no-sugar-added cherry pie filling

Steps:

  • Mix the milk with pudding mix in large bowl.
  • Place 1 nilla wafer in each of 3 parfait glasses.
  • Top each with 2 heaping tablespoons of cherry pie filling.
  • Top each with 3 tablespoons of pudding.
  • Top each with 3 nilla wafers.
  • Repeat until all ingredients have been used up.
  • Refrigerate about 30 minutes to let cookies soften.
  • Enjoy!

  • Dissolve sugar in hot water. Whisk in sifted cocoa powder. Mix in kirsch. Set aside. (Reheat in microwave as needed during assembly.)
  • Use a hand mixer (or stand mixer fitted with a whisk attachment) to mix together heavy cream and confectioners' sugar. Mix on medium speed until cream reaches stiff peaks. Use immediately, or cover and keep chilled in the fridge until ready to assemble.
  • Gather desired serving vessels. Working with one ladyfinger at a time, dip in warm kirsch soaking syrup for 2-3 seconds on each side. (Do not soak for too long because ladyfinger will soften too much.) Place ladyfinger in serving vessel. If necessary, break ladyfinger into smaller pieces depending on size and shape of serving vessel.
