MULTI-GRAIN BREAD WITH SESAME, FLAX AND POPPY SEEDS



Multi-Grain Bread with Sesame, Flax and Poppy Seeds image

An easy Multi-Grain Bread recipe

Yield Makes 1 Loaf

Number Of Ingredients 11

1/2 cup unsweetened multi-grain cereal (such as 7-grain)
2 cups boiling water
1 envelope dry yeast
4 1/3 cups (about) bread flour
1 tablespoon olive oil
1 tablespoon dark brown sugar
1 1/2 teaspoons salt
2 teaspoons sesame seeds
2 teaspoons flax seeds*
2 teaspoons poppy seeds
2 cups water

Steps:

  • Place cereal in large bowl. Pour 2 cups boiling water over. Let stand until mixture cools to between 105°F. and 115°F., about 20 minutes.
  • Sprinkle yeast over cereal. Add 1 cup bread flour, oil, sugar and salt and stir until smooth. Gradually mix in enough remaining bread flour to form dough. Cover dough; let rest 15 minutes.
  • Turn out dough onto floured surface. Knead until smooth and elastic, adding more flour if sticky, about 10 minutes. Oil large bowl. Add dough to bowl; turn to coat. Cover bowl with clean kitchen towel. Let dough rise in warm area until doubled, about 1 hour.
  • Mix all seeds in bowl. Punch down dough. Turn out onto lightly oiled surface. Knead briefly. Shape into 12x4-inch loaf.Sprinkle baking sheet with 2 teaspoons seeds. Place loaf atop seeds. Cover with towel. Let rise in warm area until almost doubled, about 30 minutes.
  • Position 1 oven rack in center and 1 just below center in oven. Place baking pan on lower rack and preheat oven to 425°F. Brush loaf with water. Sprinkle with remaining seed mixture. Using sharp knife, cut 3 diagonal slashes in surface of loaf. Place baking sheet with loaf in oven. Immediately pour 2 cups water into hot pan on lower rack in oven (water will steam).
  • Bake loaf until golden and crusty and tester inserted into center comes out clean, about 35 minutes. Transfer to rack and cool.(Can be made 1 day ahead. Wrap in plastic; store at room temperature.)

1 (1/4 ounce) package active dry yeast
1 teaspoon white sugar
3/4 cup water (110 degrees F/45 degrees C)
1 1/2 cups buttermilk
2 tablespoons margarine, melted
3 tablespoons honey
2 teaspoons salt
2 tablespoons sesame seeds
2 tablespoons flax seeds
2 tablespoons poppy seeds
2 tablespoons toasted wheat germ
2 tablespoons sunflower seeds
2 cups whole wheat flour
4 cups bread flour

Steps:

  • In a small bowl, dissolve the yeast and sugar in the warm water.
  • Let stand until creamy, about 10 minutes.
  • Combine buttermilk, butter or margarine, honey and the yeast mixture in a large bowl.
  • Add the salt, all of the seeds and the whole wheat flour and wheat germ.
  • Stir to combine.
  • Add the bread flour, 1/2 cup at a time, mixing well with a wooden spoon after each addition.
  • When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 6 minutes.
  • Lightly oil a large mixing bowl, place the dough in the bowl and turn to coat with the oil.
  • Cover with a damp cloth and put in a warm place to rise until doubled in volume, about 1 hour.
  • Preheat oven to 375 degrees F.
  • Grease two 9x5 inch loaf pans.
  • Deflate the dough and turn it out onto a lightly floured surface.
  • Divide the dough into two equal pieces and form into loaves.
  • Place the loaves into the prepared pans.
  • Cover with a damp cloth and let rise until doubled in volume, about 40 minutes.
  • Bake at 375 degrees F for about 30 minutes or until the tops are brown and the bottom of a loaf sounds hollow when tapped.
  • Makes 2 loaves.

Steps:

  • Place all ingredients (except sunflower seeds) in the pan of the bread machine in the order recommended by the manufacturer. Select Basic White Cycle; press Start. Add the sunflower seeds when the alert sounds during the Knead Cycle.

Escape to the kitchen this weekend to whip up this traditional English loaf

Number Of Ingredients 6

500g strong white bread flour
7g sachet easy-bake dried yeast (or 2 tsp Quick dried yeast)
1½ tsp salt
1 tbsp soft butter
1 tbsp sunflower seeds
1 tbsp each of sesame and poppy seeds, plus extra for sprinkling

Steps:

  • Mix the flour, yeast and salt in a large mixing bowl. Put in the butter and rub it into the flour. Mix in the seeds. Make a dip in the centre of the flour and pour in almost 300ml hand warm (cool rather than hot) water, with a round-bladed knife. Then mix in enough of the remaining water and a bit more if needed, to gather up any dry bits in the bottom of the bowl, until the mixture comes together as a soft, not too sticky, dough. Gather it into a ball with your hands.
  • Put the dough onto a very lightly floured surface and knead for 8-10 mins until it feels smooth and elastic, only adding the minimum of extra flour if necessary to prevent the dough sticking. Place the ball of dough on a lightly floured work surface. Cover with an upturned, clean, large glass bowl and leave for 45 mins-1 hr or until doubled in size and feels light and springy. Timing will depend on the warmth of the room.
  • Knock back the dough by gently kneading just 3-4 times. You only want to knock out any large air bubbles, so too much handling now will lose the dough's lightness. Shape into a ball, then cover and leave for 10 mins.
  • Shape by flattening the dough into a rectangle about 25 x 19cm using your knuckles. Fold both shorter ends into the centre like an envelope, make a ¼ turn, then flatten again into the same size and roll up very tightly, starting from one of the short ends. Seal both ends by pressing down firmly with the side of your hand. Lay the loaf on a baking parchment-lined baking sheet with the join underneath. Using a very sharp knife, make 7-8 diagonal slashes down the length of the loaf, deep enough to open up slightly. Cover and leave for 40-45 mins, or until about doubled in size. Finish by brushing between slashes with water, then sprinkling with alternate lines of seeds.
  • Put a roasting tin in the bottom of the oven 20 mins before ready to bake and heat oven to 230C/210C fan/gas 8. Put the risen bread in the oven, carefully pour about 250ml cold water into the roasting tin (this will hiss and create a burst of steam to give you a crisp crust), then lower the heat to 220C/200C fan/gas 7. Bake for 30-35 mins or until golden. Remove and cool on a wire rack. If you tap the underneath of the loaf if should be firm and sound hollow.

1 1/4 cups water
2 tablespoons oil
2 tablespoons honey
1 1/2 teaspoons salt
1 tablespoon poppy seed
1/3 cup flax seed
2 cups whole wheat bread machine flour
1 cup white bread machine flour (or you can use all whole wheat flour if you prefer)
2 teaspoons bread machine yeast
2 tablespoons sunflower seeds

Steps:

  • Place ingredients in bread machine pan in the order given.
  • If you use all whole wheat flour the bread will have a slightly denser texture, but it is still very nice.

This bread has a wonderful crunch of sunflower seeds and a hint of orange flavor. The hearty loaf is terrific plain or toasted and slathered with butter or orange marmalade.

3 1/2-4 cups all-purpose flour
1 (1/4 ounce) package active dry yeast
1/2 cup milk
3 tablespoons sugar
2 tablespoons margarine or 2 tablespoons butter
1/2 teaspoon salt
1 egg
1 tablespoon finely shredded orange peel (set aside)
1/2 cup orange juice
2/3 cup shelled sunflower seeds
melted margarine (optional) or butter (optional)
honey (optional)

Steps:

  • In a large mixing bowl combine 1-1/2 cups of the flour and the yeast.
  • In a small saucepan heat and stir milk, sugar, the 2 tablespoons margarine or butter, and the salt just until warm (120 degree F to 130 degree F) and margarine almost melts.
  • Add to dry mixture in mixing bowl and add egg and orange juice.
  • Beat with an electric mixer on low speed for 30 seconds, scraping side of bowl constantly.
  • Beat on high speed for 3 minutes.
  • Using a wooden spoon, stir in sunflower seeds, orange peel, and as much of the remaining flour as you can.
  • Turn the dough out onto a lightly floured surface.
  • Knead in enough of the remaining flour to make a moderately stiff dough that is smooth and elastic (6 to 8 minutes total).
  • Shape into a ball.
  • Place in a lightly greased bowl, turning once to grease the surface of dough.
  • Cover; let rise in warm place until double in size (1-1/4 to 1-1/2 hours).
  • Punch dough down.
  • Cover; let rest 10 minutes.
  • Meanwhile, grease an 8x4x2-inch or 9x5x2-inch loaf pan.
  • Shape dough into loaf; place in prepared pan.
  • Cover; let rise in warm place until double in size (30 to 45 minutes).
  • If desired, brush top with melted margarine or butter.
  • Bake in a 375 degree F oven for 35 to 40 minutes or until bread sounds hollow when lightly tapped.
  • If necessary, cover with foil the last 15 minutes of baking to prevent over.
  • browning. Immediately remove from pan.
  • Cool on wire rack. If desired, serve with honey. Makes 1 loaf (16 servings).
