Serabi image

This is one of my childhood favourites and a traditional Indonesian dish. It is eaten as a snack or generally for afternoon tea and not usually as a dessert. Serabi is like a pancake but only cooked on 1 side. I have modified it by adding the fruit so you could also serve it for brunch/breakfast. They are traditionally cooked in an earthenware pan but a standard fry pan is fine.Try and fine light coconut milk.

150 g flour
1 teaspoon baking powder
1 egg
1/4 teaspoon salt
200 ml coconut milk, light
100 ml water
250 ml coconut milk, light
50 g coconut sugar
1 teaspoon sugar
1/8 teaspoon salt
1 pandan leaf (optional)
2 bananas, peeled and sliced
2 apples, sliced

Steps:

  • Mix the coconut milk, water, salt and egg together.
  • Add the sifted flour and baking powder and mix through the wet ingredients. Set aside while you make the sauce.
  • Place all the ingredients except the fruit into a pan and heat until the palm sugar is melted. Add the sliced fruit and cook for about 5 minutes.
  • Heat a fry pan and spray with oil. Traditionally serabi is made small, about 2 tbsp of batter per cake but you can make them larger. Cook like a pancake but on LOW HEAT and cook on 1 side only, do not turn the cake.
  • The top should be covered in little holes.
  • Remove from heat. To serve spoon some sauce into a shallow bowl and then place the serabi on top so they float.

200 g flour
1 teaspoon baking powder
300 ml coconut cream
50 ml pandan extract or 50 ml vanilla extract
50 g eggs
1/4 teaspoon salt
50 g butter (1 big egg)
500 ml coconut milk
100 g brown sugar
25 g granulated sugar
2 vanilla pod
1/2 teaspoon salt

Steps:

  • Pancake :.
  • Mixed and sieved the flour and baking powder in a bowl.
  • beat the egg and the salt until foamy.
  • Mix in the coconut cream and the pandan leaves extract, add in the egg mixture. Pour in the mixture little by little into the flour. Let stand for 1 hour.
  • Heat the small non-stick pan. Grease with butter. Cook the batter like a pancake. Repeat process until the batter are all used (make 20 pancakes).
  • Sauce:.
  • Put to boil all of the sauce ingredients. Let cool.
  • Stack two pancakes in a bowl, pour over the sauce on top!

  • In a mixing bowl, put the flour, salt and beaten eggs together and stir well. You can use a hand whisk to thoroughly mix until there is no flour lump in the batter. Or you can use a blender or a handheld blender to mix.
  • Add the coconut milk little by little as you keep whisking until you get a smooth batter. Set aside.
  • Get your syrup ready by boiling the sugar, salt, coconut milk and pandan leaf together. Stir it every now and then. Once the syrup reaches the boiling point, let it simmer for at least 3 minutes before you turn the heat off. Set aside.
  • Heat your non-stick frying pan, and put a ladle of Serabi batter on it. Cook the pancake about 2 minutes on each side.
