A former co-worker shared this recipe with me. It's easy to make but so delicious-people keep coming back for more! The spread is also good served on crackers or fresh vegetables, and it can be served for any type of party, casual or fancy.

Steps:
- In a small bowl, combine the cream cheese, ketchup, mayonnaise, onion, mustard and garlic salt. Stir in the shrimp. Cover and refrigerate for at least 1 hour. Serve with baguette slices.

- Beat together the cream cheese, sour cream and mayo until smooth and creamy. Spread out on a large plate with an edge or in a 9x13 pan.
- Spread the seafood sauce over the cream cheese mixture gently.
- Sprinkle the shrimp over top of the sauce in an even layer.
- Layer the remaining ingredients however you like. I usually go green peppers, tomatoes, a little cheese, green onions and then the rest of the cheese.
- Refrigerate until serving.
- Serve with Ritz crackers for the BEST taste, but this also works with tortilla chips!

Steps:
- Heat soup in a small saucepan or in a microwave oven.
- In a medium bowl, stir gelatin into cold water. Mix hot tomato soup into the gelatin liquid.
- In a medium size mixing bowl, combine cream cheese and mayonnaise together. Mix soup mixture into the mayonnaise and cream cheese mixture. Mix well. Add shrimp, celery, and green onions.
- Spoon the mixture into a 1 quart mold and refrigerate for at least 1 hour, but preferably overnight. Unmold onto a serving plate before serving.

My Mom Janice, made this easy shrimp spread every Christmas for as long as I can remember. While delicious as soon as it's made, I like to make it the night before to let the flavors blend. I always double this recipe because my Sister likes to take home any leftovers.

- In a large bowl, beat all ingredients except milk until well combined. Add 1-2 tblsp milk depending on the consistency you like. I only add 1 tablespoon.

SAUTéED SHRIMP WITH POLENTA AND MANCHEGO SAUCE
Slightly smoky, subtly Spanish, simply sensational shrimp--a Whole Foods recipe. The elegant stacked presentation is so pretty. Smoked Spanish paprika adds subtle character to this dish and can be used in a host of other recipes such as beans, tacos and salad dressings. Chicken broth may be substituted for the vegetable broth. Serves 4

Steps:
- For the polenta, bring stock and milk to a boil in a small, heavy saucepan over medium heat.
- Reduce heat to simmer and slowly add cornmeal to saucepan, whisking constantly. Cook, stirring constantly, for 20 minutes over medium-low heat.
- If polenta becomes too thick, slowly add as much as 1 more cup of stock.
- Stir in cheese and 2 tablespoons of the butter.
- Add salt and pepper to taste.
- Pour polenta into a greased 8-inch square pan and set aside and let cool until firm, about 45 minutes.
- For the shrimp, rinse shrimp and pat dry with paper towels.
- Sprinkle shrimp with sea salt and paprika and let marinate for 10 minutes.
- Heat olive oil in large heavy skillet over medium heat.
- Sauté garlic for about 30 seconds.
- Add shrimp and sauté until opaque in center, about 2 minutes on each side.
- Remove from heat and keep warm.
- For the sauce, melt 1 tablespoon of the butter in small saucepan over medium heat. Add shallot, garlic, celery, salt, pepper, and paprika and cook until shallot is soft, about 5 minutes.
- Add the other tablespoon of butter and melt into vegetables.
- Whisk in flour.
- Add broth a few tablespoons at a time, very slowly, whisking to combine.
- When thickened, add cream a few tablespoons at a time, following the same procedure as with the broth. When thickened, whisk in the cheese, stirring until melted. Mix in lemon juice.
- Invert baking dish to remove polenta from pan.
- Cut polenta into four squares.
- Heat the remaining 2 tablespoons butter in large skillet over medium heat.
- Sauté polenta in butter until warmed through and golden brown on both sides.
- To assemble, place each polenta square on its own plate, stack shrimp on top of polenta and drizzle with sauce.
- Garnish with paprika, if desired.

NO-BRAINER SHRIMP SPREAD
A variation of the ultimate lazy appetizer recipe from the 80's, when you threw shrimp over a block of cream cheese, poured cocktail sauce over it, and served with crackers. I do it this way for a bigger group and also because it's easier to spread on crackers. Note: Many times I use 3 cans (or 1/4 lb. fresh) shrimp, so I can satisfy greedy shrimp lovers who are there. (Note: You may not need to use the whole bottle of cocktail sauce -- use your judgement adding enough to cream cheese to make it spreading consistency and adding a layer of sauce on top of the mixture.)

- Mix together softened cream cheese, 2/3 of shrimp, sliced onions and 1/2 bottle of shrimp cocktail sauce.
- Mix well, adding more cocktail sauce if necessary to make mixture a spreading consistency.
- Put in a serving bowl, put a thin layer of cocktail sauce over spread to cover top, then arrange remaining shrimp over that to decorate the appetizer.
- Chill, then serve with crackers of your choice.

This is another recipe I found in a pamphlet from the grocery store. I love this served with crackers. I've also served this in a bread bowl with chunks of bread for dipping.

- Preheat oven to 400 degrees.
- Combine all ingredients and stir well to mix.
- Place the shrimp mixture in a 1 quart shallow baking dish.
- Bake at 400 degrees for approx.
- 10 minutes or until hot and bubbly.
- Serve with assorted crackers.
