Steps:
- Saute onions in hot oil until tender; do not brown.
- Stir in remaining ingredients; bring to boil. Reduce heat and simmer, uncovered, 45 to 60 minutes, until mixture begins to thicken. Cool and pour into pint jars with tight-fitting lids. Store in refrigerator. Keeps a year.
- Use as you would any barbecue sauce: to grill poultry, beef, pork; to mix with ground beef to make barbecued beef. Or just as a sauce spooned over roasted or broiled meats.

SIMPLE BARBECUE SAUCE
Smoked paprika is the secret weapon in this simple barbecue sauce, which goes beautifully with pork and chicken. WEST TEXAS BARBECUE SAUCE
This is one of my favorite tomato-based barbecue sauces. It's great on turkey, chicken, pork and, of course, beef! This is the sauce on turkey meatballs.

- 2. I enjoy using a mortar and pestle to grind the black pepper and cumin fresh but you can use pre-ground pepper and cumin.

RASPBERRY BARBECUE SAUCE

- Preheat oven to 425°. Place garlic on a double thickness of heavy-duty foil; drizzle with oil. Wrap foil around garlic. Bake 15-20 minutes. Cool 10-15 minutes., Place softened garlic in a small saucepan. Add remaining ingredients. Cook over medium-low heat 15-20 minutes until sauce is thickened and bubbly. Remove from heat; cool slightly., Transfer to a food processor; cover and process until smooth. Strain seeds. Store in an airtight container in the refrigerator.

SEMINOLE GOLD BARBECUE SAUCE
I've always been fond of the Mustard based barbecue sauces found in South Carolina. This sauce reminds me of that sauce. Excellent on pork and chicken. Being a graduate of Florida State, I call it "Seminole Gold"

Steps:
- In a heavy non-reactive saucepan, combine mustard, brown sugar, vinegar and beer.
- Season with chili powder, black, white and cayenne pepper.
- Bring to a simmer over medium high heat.
- DO NOT BOIL, or you will scorch the sugar and peppers.
- Reduce heat and simmer for about 20 minutes.
- Mix in the Worcestershire sauce, butter, and liquid smoke.
- Simmer for another 15 to 20 minutes.
- Add a few dashes of the hot sauce to taste.
- Pour into an airtight jar and refrigerate over night to allow flavors to blend.
- This will keep in fridge for a couple of weeks.

- In a Dutch oven, heat butter over medium heat. Add garlic and shallot; cook and stir until softened, 5-7 minutes. Add brown sugar. Reduce heat to medium-low; cook, stirring occasionally, until deep golden brown, 15-17 minutes., Add remaining ingredients; simmer 10 minutes. Remove from heat. Puree sauce using an immersion blender or cool slightly and puree in batches in a blender. Strain through a fine-mesh strainer. Return to pan; cook and stir until liquid is reduced by a third, 30-40 minutes., Refrigerate, covered, until serving. Serve with grilled meats.
