SEATTLE HOT DOG RECIPE
A lightly toasted hot dog bun piled with an all beef hot dog, slowly caramelized onions, smokey cream cheese, spicy jalapeños, and don't forget about those salty kettle chips for some crunch!

Steps:
- Heat a large skillet over medium/medium low heat. Once hot, add in butter.
- Once the butter has melted, add in sliced onion and cook for about 15-20 minutes, or until golden brown and caramelized.
- In the last minute or two, deglaze the pan with a couple splashes of dry white wine. Cook until the wine has absorbed.
- Set aside.
- Preheat your grill to high heat.
- Cook hot dogs until warmed through.
- Toast buns until golden brown, this won't take long.
- Place jalapeños on the grill and cook for about 8 minutes, turning every few minutes.*
- Take one toasted bun and smear on bacon cheese cream.
- Place hot dog in the bun and top with caramelized onions, jalapeños, kettle chips, and other additional toppings, as desired!

SEATTLE DOGS
I'm from Seattle and everynight when all the bars are closing, party-goers flock to the multitude of hot dog stands lining the streets (affectionally called "street meat"). The most popular option is the tried and true Seattle Dog. It sounds like a wierd combination but it is oh so delicious! Some places also add sauteed cabbage if you want to give that a try.

Steps:
- Heat the butter and oil in a skillet over medium-high heat. Add the onion and sugar, cook for 20 minutes or until onions are caramelized, stirring regularly. Season with salt and pepper to taste.
- As the onions are caramelizing, heat the cream cheese in a pot until soft and warm but not melted/cooked.
- Cook the hot dogs according to the package directions and toast the buns.
- Spread cream cheese on each warm bun. Top with a hot dog and onions.

- Preheat grill or grill pan for medium-high heat.
- Melt butter in a skillet over medium heat. Add onions, and cook slowly until the onions have softened and turned deep brown, about 15 minutes. Warm the cream cheese over low heat in a small skillet until very soft.
- Grill hot dogs until well browned. Lightly grill hot dog buns on both sides.
- To assemble cheese dogs, spread warm cream cheese on toasted hot dog bun, add hot dog or sausage, top with onions, mustard and sauerkraut, if desired.

- To make the onions: Melt butter in a large heavy-bottomed stainless steel or enameled cast iron dutch oven over medium-high heat. Add onions and a pinch of salt and cook, stirring occasionally, until softened and bottom of saucepan is coated in a pale brown fond, about 15 minutes. Add 2 tablespoons water and deglaze pan by scraping with a wood spoon. Continue to cook, stirring occasionally, until another layer of fond has built up again, 3-5 minutes. Add 2 tablespoons water and deglaze. Repeat process until onions are completely softened and golden brown, about 15 minutes morel. Season onions to taste with salt. Transfer to a bowl and set aside.
- Light one chimney full of charcoal. When all charcoal is lit and covered with gray ash, pour out and spread the coals evenly over entire surface of coal grate. Set cooking grate in place, cover grill and allow to preheat for 5 minutes. Clean and oil the grilling grate. Place cream cheese in a small pot and set pot on grill to warm. Place hot dogs on grill and cook, turning occasionally, until heated through and well browned, about 4 minutes.
- Line 1 bun with warmed cream cheese to taste and top with hot dog, caramelized onions, mustard, and jalapeño slices. Repeat assembly for all hot dogs. Serve immediately.

- 2. Grill the hot dogs and onions at the same time. When almost done, toast the buns on the grill.
- 3. Smear 2 tablespoons of the cream cheese on each of the buns. Place a few slices of jalapeño on each bun. Put the hot dogs on the buns and cover with the grilled onions and top with brown mustard.
