To infuse peas with flavor, simmer them with dried spices, which pack a more intense punch than fresh. Smoked paprika delivers the essence of ham hocks or bacon while keeping this classic side dish vegan.

1 pound dried black-eyed peas, rinsed
4 dried bay leaves
2 tablespoons vegetable oil
1 tablespoon garlic powder
1 tablespoon onion powder
1 teaspoon smoked paprika
½ teaspoon cayenne pepper
1 tablespoon kosher salt

Steps:

  • Place peas in a large bowl and add enough cold water to cover by 2 inches. Soak overnight.
  • Drain the peas. Add 8 cups water to a large pot, cover and bring to a boil over high heat. Add bay leaves, oil, garlic powder, onion powder, paprika, cayenne and the drained peas. Return to a boil, then reduce heat to maintain a simmer. Cover and cook, stirring occasionally, until the peas are tender, 45 minutes to 1 hour. Add salt. Discard the bay leaves.

1 cup frozen black-eyed peas, thawed
1 tablespoon seafood seasoning (from 6-oz container)

Steps:

  • In deep 2-quart saucepan, heat oil to 325°F. Line plate with layers of paper towels to absorb oil after cooking peas.
  • Carefully place peas in hot oil; cook 3 to 4 minutes.
  • Using wire strainer or skimmer, transfer peas to plate. Immediately sprinkle with seasoning.

1 lb fresh black-eyed peas (frozen will also work)
1/2 cup vegetable oil
1 medium onion, chopped
2 medium fresh tomatoes, chopped
1 small green bell pepper, chopped
1 pinch curry powder
salt
water (to cover peas)

Steps:

  • Boil black-eyed peas in plenty of water on high heat for 15 minutes.
  • Salt to taste.
  • Reduce heat to simmer and cook for 45 minutes, until peas are tender.
  • In a large skillet or saute pan, saute onion for 3 minutes, and add tomatoes, green pepper, curry and salt.
  • Cook 8 minutes and add drained, cooked, black-eyed peas.
  • Cook an additional 5 minutes.
  • Serve hot. This dish is typically served with Dodo (fried plantain).

Southern-Style Black-Eyed Peas image

I have been making these Southern black-eyed peas for years and years, and they are always a big hit for family dinners! Don't skip the cumin, which is the "secret" ingredient.

1 pound dried black-eyed peas
1 tablespoon vegetable oil
1 medium onion, chopped
5 cloves garlic, minced
1 pound smoked ham hocks
6 cups water
1 tablespoon seasoned salt
1 teaspoon onion powder
1 teaspoon ground cumin
1 teaspoon freshly ground black pepper
¼ teaspoon crushed red pepper
3 leaf (blank)s bay leaves

Steps:

  • Soak black-eyed peas in a bowl of water for at least 2 hours, or overnight.
  • Heat oil in a large, heavy saucepan over medium heat. Saute onion and garlic in the hot oil until onion is translucent, about 5 minutes. Add smoked ham hocks and water. Bring to a boil. Cover, lower heat to a simmer, and cook for 1 hour.
  • Drain peas and add to the pot along with seasoned salt, onion powder, cumin, black pepper, red pepper, and bay leaves. Bring to a boil. Cover, lower heat to a simmer, and cook for 1 hour. Uncover the pot and cook until beans are tender, about 30 minutes more. Remove bay leaves and ham hocks before serving.

  • Rinse and sort black-eyed peas. Place peas in a Dutch oven. Add chicken broth and (if necessary) enough water to cover the peas by about 1 inch. Bring to a boil; boil for 2 minutes. Remove from heat, cover with a lid, and let the peas soak for 1 hour. Do not drain.
  • In a large cast iron skillet (or other heavy skillet), cook bacon over medium-high heat until crisp. Remove bacon with a slotted spoon, reserving rendered fat in pan. Add onion to the drippings and cook over medium-high heat until tender, about 5-7 minutes. Add garlic and cook, stirring constantly, for 1 more minute.
  • Transfer onion, garlic and drippings to the Dutch oven with the black-eyed peas and broth. Stir in bay leaves, thyme, and 1 additional cup of water. Bring to a boil; reduce heat to low, and simmer (covered) until the peas are tender – about 30-40 minutes, stirring occasionally. Add extra water to the pot, as necessary, to keep the peas moist (but not too soupy). By the end of the cooking time, the peas will have absorbed most of the liquid in the pot. Remove from heat, discard bay leaves, stir in vinegar and Creole seasoning. Taste and season with salt and pepper, if necessary.
  • Garnish with crispy bacon and fresh herbs or sliced green onions. Serve with hot sauce on the side.
