- In a large bowl, combine the tuna, egg, bread crumbs, onion, celery, red pepper, mayonnaise, chili sauce and seasonings; mix well. Shape into four patties (mixture will be soft). , Coat a nonstick skillet with cooking spray; fry patties for 3-4 minutes on each side or until cooked through. Serve on buns with tomato and lettuce if desired.

- Combine tuna, eggs, bread crumbs, Parmesan cheese, celery, lemon juice, seafood seasoning, mustard, pepper, and dill in a bowl; stir gently until fully and evenly combined. Shape mixture into 4 patties.
- Heat oil in a nonstick skillet over medium-high heat. When oil is hot, gently lay 2 tuna patties into the skillet. Don't over crowd - only add as many patties as comfortably fit with room to flip them.
- Cook tuna patties until golden brown, 3 to 5 minutes per side, adjusting the heat as needed if they're cooking too quickly. Repeat with remaining patties, adding remaining oil as needed.

- In a small bowl, stir together the soy sauce, mirin, honey and sesame oil. Divide into two equal parts. Stir the rice vinegar into one part and set aside as a dipping sauce.

- Remove the skin from the potato and break it up with a fork.
- Mix tuna with onion, egg and potatoe.

TUNA PATTIES
Simple dinner idea. We serve this with a veggie (usually broccoli or spinach) and either mac & cheese or fried potatoes. You can use cracker crumbs instead of breadcrumbs. It's just to soak up some moisture. The patties can be made earlier and set in the fridge. I've never frozen them, so you'll need to do your own experimentation for that! You can cook these in a George Foreman grill, or in a skillet or frying pan. We like them fried!

- Mix all ingredients.
- Use more or less breadcrumbs, as needed, to soak up the moisture from the tuna and egg until it is the consistency of a "patty" (I'm sorry I can not explain this better!).
- Make into patties 1/2 inch thick.
- Sprinkle both sides of patties with pepper, and pat it inches.
- Warm up oil and butter in a pan over medium heat, enough so it's hot enough to cook but not burn. You know how your own burners work.
- Fry until golden brown, and flip to cook the other side.

BISQUICK TUNA PATTIES
This recipe was given to me by my sister-in-law. I love this, especially in cooler weather. I usually make country gravy (from the package) to pour over the tuna patties. The gravy adds something to it.

I decided to make tuna patties the other night, even though I never liked them as a kid. I decided to add some of my favorite ingredients to them to see if they would enhance the flavor of the patties. They were wonderful!!!! :-) ENJOY! )prep time does not include time to boil potato. Steps:
- Boil potato until soft (as you would for mashed pots.); Mash.
- Saute chopped onion for 2-3 minutes.
- add onion to mashed potato.
- Add cayenne pepper to the mashed potato as well; mix thoroughly.
- Open can of tuna and drain liquid.
- Put tuna in a medium bowl.
- Add potato and stir until mixed through.
- add egg and mix through again.
- Add the bread crumbs, parsley, garlic powder, salt, and pepper and mix well with hands (its really the best way to get all of the ingredients mixed VERY well.) If you feel that the mixture is too moist (due to size differences in eggs), you may add some more breadcrumbs (a small amount!), but BE CAREFUL!
- Do not make mixture too dry as you may encounter breakage while cooking patties!
- Put olive oil in a nice sized frying pan, and rub olive oil over the pan with cloth; heat on medium-high.
- Form patties (2-3, depending on how large or small you wish to make them).
- Put patties in the heated pan and cook 6-8 minutes on each side, depending on how large you made each patty.
- If you made 3 patties, 6 mins per size should be just fine.
- Brown nicely on both sides!
- You may need to add a little more oil while cooking, but do not add too much!
- Enjoy alone or on a bun.
- I eat mine on a bun with ketchup!
