Categories     Fish     Main Course

Time 13m

Number Of Ingredients 11

24 oz. Salmon fillets (4 - six-ounce fillets)
salt and pepper (for seasoning)
2 tablespoons olive oil ((for the pan))
8 cups mixed greens
1 cup grape tomatoes (optional)
1/4 cup lemon juice (fresh )
1 teaspoon Dijon mustard
2 tablespoons fresh parsley (chopped)
1/2 teaspoon sea salt
1/4 teaspoon black pepper (fresh ground)
6 tablespoons olive oil

Steps:

  • Squeeze the lemon juice into a measuring cup. Add the dijon, parsley, salt, and pepper. Slowly drizzle in the olive oil, whisking constantly. Set aside. This makes not quite 3/4 cup of vinaigrette.
  • In a large non-stick skillet, heat 2 tablespoons of olive oil over medium-high heat.
  • Season the salmon with salt and pepper. Add the salmon skin-side down to the pan and cook 3-4 minutes. Turn the fillets over and cook another 3-4 minutes until they are no longer translucent but still moist in the center.
  • Place about 1 1/2 cups of spring salad mix and a few grape tomatoes on a plate, top it with a piece of salmon. Drizzle with the desired amount of dressing and serve.

Pan-Seared Salmon with Summer Succotash image

Provided by Giada De Laurentiis

Categories     main-dish

Time 45m

Yield 4 servings

Number Of Ingredients 17

1/2 cup creme fraiche
1/4 cup whole-grain mustard
2 teaspoons lemon zest (1 large lemon)
1/4 cup lemon juice (2 lemons)
1/4 teaspoon kosher salt
Four 6-ounce skinless salmon fillets, wild preferred
1/2 teaspoon kosher salt
2 tablespoons extra-virgin olive oil
3 tablespoons extra-virgin olive oil
1 small red bell pepper, diced (3/4 cup)
1 large shallot, diced (1/4 cup)
1 cup corn kernels, cut from 2 cobs, or 1 cup thawed frozen corn
3/4 cup frozen shelled edamame, thawed
1/2 teaspoon kosher salt
1/2 cup baby kale, roughly chopped
2 tablespoons chopped fresh basil
2 teaspoons lemon juice

Steps:

  • Preheat the oven to 350 degrees F.
  • For the sauce: In a medium bowl whisk together the creme fraiche, mustard, lemon zest, lemon juice and salt. Cover with plastic wrap and set aside.
  • For the salmon: Sprinkle the salmon fillets on all sides with the salt. Heat the olive oil in a large oven-proof skillet over medium-high heat. With tongs, gently place the salmon, flesh-side down, in the pan. Allow the salmon to cook, undisturbed, for 3 minutes to form a golden crust. Using a spatula, gently flip each fillet. Transfer the pan to the oven for an additional 5 minutes. Remove from the oven and cover with foil to keep warm.
  • For the succotash: Heat the olive oil in a medium skillet over medium-high heat. Add the red peppers and shallots and cook for 4 minutes, stirring often with a wooden spoon. Add the corn, edamame and salt and cook for another 3 minutes. Remove the pan from the heat and stir in the kale, basil and lemon juice.
  • To serve: Spread 2 tablespoons of the sauce in a circle on each serving plate. Top with 1/2 cup of the succotash, and a salmon fillet. Serve with sauce on the side if desired.

1 orange, juiced
1 (5-ounce) salmon fillet
Nonstick cooking spray
1 ounce black sesame seeds
1 ounce white sesame seeds
4 ounces miso paste
1 tablespoon sesame oil
1 cup rice wine vinegar
3 cups olive oil
1 tablespoon soy sauce
Salt and pepper
1/2 ounce olive oil
1/2 ounce sesame oil
1/2 ounce soy sauce
1 zucchini, cut into julienne
1 yellow squash, cut into julienne
1 carrot, cut into julienne
12 ounces baby field greens
1 plum tomato, sliced
2 ounces toasted cashews
1/2 ounce sweet soy sauce

  • For the salmon: Combine the soy sauce, sesame oil, rice wine vinegar, and fresh orange juice in a shallow dish. Add the salmon and marinate for 24 hours in the refrigerator.
  • Preheat the oven to 350 degrees F. Spray a baking sheet with nonstick cooking spray.
  • Mix the sesame seeds together. Dredge 1 side of the salmon in the sesame seeds and pan sear the seeded side only. • For the vinaigrette: In a food processor, blend the miso paste with the sesame oil and rice wine vinegar. Slowly add the olive oil, soy sauce, and salt and pepper, to taste.
  • For the vegetables: In a skillet over medium-high, saute the zucchini, yellow squash, and carrot in the olive oil, sesame oil, and soy sauce for about 45 seconds.
  • For the salad: In a large bowl, toss the greens with 2 ounces of the miso-soy vinaigrette and arrange on a plate. Place the stir-fried vegetables on top. Sprinkle with the cashews and tomato slices. Arrange the salmon on top and drizzle with a little sweet soy sauce.

PAN SEARED SALMON WITH HARICOTS VERTS SALAD

Pan Seared Salmon with Haricots Verts Salad image

Provided by Robert Irvine : Food Network

Categories     main-dish

Time 2h45m

Yield 6 servings

Number Of Ingredients 14

1 pound haricots verts (very thin string beans)
2 limes
1/4 cup fresh rosemary leaves
1/8 cup fresh tarragon leaves
1/4 cup fresh cilantro leaves
3 tablespoons stone-ground mustard
1/8 cup rice wine vinegar
1 tablespoon chopped fresh ginger
1/2 cup grapeseed oil (or your choice of olive or canola oil), plus 1/4 cup
1/8 cup bottled water
2 tomatoes, seeds removed and finely diced
1 medium red onion, finely diced
Six 6-ounce salmon fillets, skin on
Salt and pepper or adobo seasoning

Steps:

  • First blanch the haricots verts in salted boiling water until al dente (or cooked to your liking). Once this is done, drain the beans into a strainer or colander and then they should be shocked by dunking the strainer of beans into a waiting bowl of ice water to stop the cooking process, which will also help them retain a great color. Drain and set aside in refrigerator until needed.
  • Place 1 of the limes in a small microwave-safe bowl and microwave it until the essential oils in the skin are released. These limes will be hot coming from the microwave, so you can let them cool before squeezing them. Turn on the blender and through the feed tube, add the rosemary, tarragon, cilantro, stone-ground mustard, rice wine vinegar, and fresh ginger, and blend together until a smooth paste has formed. At this point the limes should be cool enough to squeeze. With the power on, add the lime juice through the blender feed-tube, and then very slowly add the oil and water until the mixture thickens and can coat the back of a spoon. Adjust the seasoning with salt and pepper. Set aside in refrigerator until needed. (When chilled, the dressing should resemble something like mayonnaise.)
  • Reserve some of the dressing to drizzle on the plate later. Then, mix the beans, tomato, and onions with the dressing (adjusting the amount to your preference) and refrigerate for only a couple of hours. (Don't mix too far ahead, because the salad ingredients will bleed and you will have a very runny dressing).
  • Heat a large saute pan or heavy skillet for about 3 minutes over high heat. Season the salmon fillets with your choice of seasoning. Add the oil carefully, a little bit at a time, to the pan swirling it around to coat the sides. Place the salmon, flesh side down, and leave untouched for about 3 minutes. (Do not shake the pan! You are trying to get the fish's natural sugars to come to the surface in this browning process.) After about 3 minutes, use a spatula to turn the fish over and cook the other side. The fish will cook quickly, although cooking time will vary according to the thickness of the fillet. Do not overcook it. When you touch the flesh and it springs back, it is done. Remove the fish to a platter and let it rest for a couple of minutes. This rest time is very important; it will allow the juices to flow back into the fish. (Don't worry, it won't get cold!)
