Seared ahi tuna is a quick, easy, and healthy meal. Marinated with soy sauce, ginger, sesame, and scallions, this fish steak is cooked medium rare for less than 4 minutes. Serve with Jasmin rice, salad, and veggies for a complete meal.

2 (8 oz) Ahi Tuna steaks ((about 3/4 to 1-inch thick steaks) )
1 tbsp Olive oil
¼ tsp Kosher salt
½ tsp Black pepper
¼ cup Soy sauce
2 tbsp Rice vinegar
2 tbsp Mirin ((or honey) )
2 tsp Sesame oil
2 tbsp Fresh ginger (thinly sliced)
2 tbsp Fresh garlic (thinly sliced)
2 tbsp Scallions ((green onions) )
1 tbsp Chily flakes (or 1/2 tsp cayenne powder)

Steps:

  • In a small bowl - combine all the tuna steak marinade ingredients - soy sauce, rice vinegar, mirin, sesame oil, sliced ginger & garlic, scallions, and chilly flakes.Pro tip - Use glass or plastic, never metal when marinating. Otherwise, the acid ingredients in the marinade can react with the metal.
  • Place the tuna steaks in the marinade and turn them over a few times to coat well. Leave to marinate for 15 minutes up to an hour. Pro tip - You can marinate the tuna for up to 3 hours in the fridge.
  • Sear tuna steaks - Heat a cast-iron skillet on medium-high heat. Add the olive oil and let the pan become very hot. Place the two tuna steaks in the skillet. Season with kosher salt and black pepper. Pro tip - The pan must be smoking hot this will give a nice sear and color on the tuna.
  • Cook the steak for 1 to 1 1/2 minutes on each side. (medium-rare) Pro tip - You can do up to 2 minutes on each side if you like it less rare. I would not recommend more than 2 minutes.
  • Remove from the pan and let rest for 5 to 7 minutes. Then, slice and garnish with chopped scallions.
  • Serve with plain jasmine rice, a side salad, and a vegetable side dish for a complete meal.

600g sweet potatoes , peeled and chopped
Butter
A thumb-sized piece ginger , peeled and grated
Vegetable Oil
1 bunch spring onions , chopped into 2cm pieces
2 tuna steaks
4 tbsp soy sauce

Steps:

  • Add the potatoes to a pan of boiling water and cook until tender.
  • Drain then put back in the pot with a knob of butter and the ginger then mash until smooth. Keep warm.
  • Heat a little oil in a wide pan and add the onions. Cook for about 5 minutes until softened. Move the onions to the edge of the pan and turn up the heat. Add the tuna and cook for 1 minute each side for rare, 2 for medium. Add the soy sauce to the pan and turn the tuna and onions to coat.
  • Serve the tuna topped with the onions and the mash on the side.

3 tbsp soy sauce
1 tbsp rice wine vinegar
1 tbsp caster sugar
2 tuna steaks , each about 140g/5oz
500g potato
100ml semi-skimmed milk
2 tsp wasabi paste (see Know-how)
1 spring onion , finely sliced
frozen broad bean or soya beans, to serve

Steps:

  • Mix together the soy sauce, vinegar and sugar. Pour over the tuna and marinate for at least 20 mins or up to 2 hrs in the fridge. Place the potatoes in a pan of lightly salted boiling water, then cook for 10-15 mins until soft. Drain well. Heat the milk in the pan and mix in the wasabi, return the potatoes to the pan, then mash until smooth. Stir through the spring onion and keep warm.
  • Heat a non-stick griddle pan until smoking hot. Remove the tuna from the marinade. Cook on the griddle for 2-3 mins on each side until seared on the outside, but still pink inside. Cook the broad or soy beans according to pack instructions, then serve alongside the tuna and mash.

  • Spread sesame seeds in shallow baking dish or pie plate. Pat tuna steaks dry with paper towel; use 1 tablespoon oil to rub both sides of steaks, then sprinkle with salt and pepper. Press both sides of each steak in sesame seeds to coat.
  • Heat remaining 1 tablespoon oil in 12-inch nonstick skillet over high heat until just beginning to smoke; swirl to coat pan. Add tuna steaks and cook 30 seconds without moving steaks. Reduce heat to medium-high; continue to cook until seeds are golden brown, about 1 1/2 minutes. Using tongs, carefully flip tuna steaks; cook, without moving steaks, until golden brown on second side, about 1 1/2 minutes for rare (opaque at perimeters and translucent red and cool at center when checked with tip of paring knife) or 3 minutes for medium-rare (opaque at perimeters and reddish pink at center). To serve, cut into 1/4-inch-thick slices and drizzle with ginger soy sauce.

¼ cup soy sauce
¼ cup extra-virgin olive oil
2 tablespoons lemon juice
2 teaspoons Asian (toasted) sesame oil
2 teaspoons molasses
1 teaspoon cayenne pepper, or more to taste
6 thin slices fresh ginger, minced
2 cloves garlic, minced
2 1-inch-thick tuna steaks, thawed

Steps:

  • Mix soy sauce, olive oil, lemon juice, sesame oil, molasses, cayenne pepper, ginger, and garlic together in a bowl.
  • Place tuna steaks in a large resealable bag or airtight container; pour marinade over steaks. Marinate steaks at room temperature for 20 minutes.
  • Heat a non-stick pan over medium heat. Remove steaks from marinade and arrange in the hot pan; gently shake pan to avoid sticking. Cook approximately 1 1/2 minutes and flip. Cook other side until tuna is desired doneness, 1 to 2 more minutes. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C).
