SEARED TUNA WITH WASABI-BUTTER SAUCE

Seared Tuna with Wasabi-Butter Sauce image

I've had the seared tuna in nice restaurants, but this is better than all of them. One tablespoon of wasabi sounds like a lot of heat, but somehow this cooking method mellows it to almost nothing, just leaves the flavor. Really really great.

Time 40m

Yield 6

Number Of Ingredients 10

2 tablespoons white wine vinegar
10 fluid ounces white wine
¼ cup minced shallots
1 tablespoon wasabi paste, or to taste
1 tablespoon soy sauce
1 cup unsalted butter, cubed
salt and black pepper to taste
1 tablespoon olive oil, or as needed
1 cup chopped cilantro leaves
6 (6 ounce) fresh tuna steaks, 1 inch thick

Steps:

  • Combine the white wine vinegar, white wine and shallots in a small saucepan over medium heat. Simmer until the liquid is reduced to about 2 tablespoons. Strain out shallot and discard, return liquid to the pan.
  • Stir the wasabi and soy sauce into the reduction in the pan. Over low heat, gradually whisk in butter one cube at a time allowing the mixture to emulsify. Be careful not to let the mixture boil. When all of the butter has been incorporated, stir in cilantro, and remove from heat. Pour into a small bowl, and set aside.
  • Heat a large skillet over medium-high heat. Brush tuna steaks with olive oil, and season with salt and pepper. Place in the hot skillet, and sear for 3 to 5 minutes on each side. Be careful not to overcook, this fish should be served still a little pink in the center. Serve with sauce.

WASABI SESAME CRUSTED SEARED AHI TUNA SALAD

Wasabi Sesame Crusted Seared Ahi Tuna Salad image

Provided by Food Network

Categories     main-dish

Time 1h

Yield 4 servings

Number Of Ingredients 21

3/4 cup wasabi sesame seeds
1/3 cup coarsely cracked black pepper
1/3 cup coarse Hawaiian sea salt
Four 6- to 8-ounce 1 1/2-inch-thick ahi tuna steaks
Vegetable oil, for oiling the grill
4 tablespoons sesame oil
1/2 cup honey
1/2 cup red wine vinegar
1/2 teaspoon ground black pepper
2 tablespoons Dijon mustard
1/2 cup soybean oil
2 ounces spring mix
4 tablespoons capers
2 large carrots
2 large tomatoes
1 small red cabbage
1 cucumber
1 romaine heart
1/2 medium red onion, finely diced
1 lemon
2 avocados

Steps:

  • For the fish: Blend the wasabi seeds, cracked black pepper and Hawaiian sea salt in a medium bowl. Place the ahi steaks in the bowl, and carefully roll and flip the steaks to ensure they are completely coated. Remove the steaks to a plate and refrigerate until ready to cook.
  • For the vinaigrette: Mix together the honey, vinegar, pepper and mustard in a small bowl, then stream in the oil, whisking constantly.
  • For the salad: Slice, dice, chop and mix the spring mix, capers, carrots, tomatoes, cabbage, cucumber, romaine and onion, to your liking, then toss with some vinaigrette and plate four salads. Place one lemon wedge on the side of each plate and quarter the avocados. Slice each quartered avocado 3 to 6 times, creating an avocado fan out of each quarter. Set aside.
  • Before heating your grill, you will need to scrape, clean and then oil it. Once clean, preheat to medium-high and close until ripping hot, about 10 minutes. Fold a clean dish towel into a squarish 4-by-6-inch block. Pour 2 cups vegetable oil into a bowl and dip one side of your dish towel block in the oil.
  • Open the grill and begin coating grill grates with the oiled towel block. Repeat until grill grates are slick and clean. Pour the sesame oil on a small plate. Place each steak in the sesame oil on both sides, then on the grill.
  • Cook for 1 minute on each side. Then pull immediately from grill, slice 1/8- to 1/4-inch-thick with a heavy sharp blade and place directly on your plated salads. Top each salad with an avocado fan. Lastly, pair your dish with a nice Chardonnay or a local IPA. Cheers and enjoy!

WASABI GLAZED SEARED AHI TUNA APPETIZER

Wasabi Glazed Seared Ahi Tuna Appetizer image

The Wasabi Glazed Seared Ahi Appetizer recipe is as delicious as it is pretty.

Provided by Valentina K. Wein

Categories     Appetizer

Time 20m

Number Of Ingredients 7

2½ teaspoons wasabi paste
2 teaspoons low-sodium Tamari or soy sauce
1 tablespoon unsalted butter
¾ teaspoon honey
1 pound Ahi tuna fillet, (sushi grade (about 1-inch thick - see notes))
grapeseed, or other neutral oil for the pan
salt and freshly grated black pepper

Steps:

  • Add the wasabi and Tamari (or soy sauce) to a small sauté pan and use a small whisk to blend until it's smooth.
  • Place the pan over low-medium heat and add the butter. Swirl the pan around until the butter has melted and is completely incorporated.
  • Whisk in the honey and set aside to cool to room temperature.
  • While the glaze is cooling, cut the Ahi into small cubes, about 1-inch -- and season them with salt and pepper. (It's very easy to cut into cubes if it's semi-frozen. Just be sure they're thawed by the time you sear them.)
  • Coat the bottom of a medium-sized sauté pan with the oil and place it over high heat. Once the pan is very hot, add the Ahi and sear all but two opposing sides. (If you don't hear a sizzling sound when the tuna hits the pan, it's not hot enough -- wait for the sizzle!) Only cook it through a bit, less than ⅛-inch, probably no more than 10 seconds per side. You can use a fork to simply roll them to sear each side. You'll want to remove them from the pan the instant they're done, so doing this in small batches is a good idea. Place them directly on a plate or serving platter, raw side up. (You can also cut the tuna into strips, and slice them into cubes after searing them.)
  • Drizzle the cooled wasabi glaze over them, add toothpicks and serve.

SEARED AHI TUNA SALAD WITH WASABI VINAIGRETTE

Seared Ahi Tuna Salad With Wasabi Vinaigrette image

I combined a few recipes to come up with this. The dressing is so good. I used 1 TBS wasabi paste, which makes it a little spicy, so reduce amount if you like less spicy.

SEARED TUNA WITH A SOY AND WASABI GLAZE

Yield 2 people

Number Of Ingredients 11

• 2 fresh tuna steaks
• olive oil
• salt & pepper
• About 4 handfuls of frozen peas
• Handful of fresh mint
• Lump of butter (about 50g)
• Splash of double cream (about 2tbsp)
• 1tbsp wasabi paste
• Juice of half a lemon
• 75g cold butter
• 2 tbsp soy sauce (or tamari if you're gluten free)

Steps:

  • The first step is to make your pea pureé (or "Oh yum, mushee peas!" as my dad said). Boil about 4 handfuls of frozen peas in salted water until they start floating on the surface. While you're waiting, chop up a handful of fresh mint. When the peas are done, drain them and either mash them by hand or use one of these handy whizzers. Pop in a chunk of butter & a splash of double cream. Mix it all together & pop to one side, somewhere warm. Now you'll want to make your sauce. In a little saucepan over a medium heat combine your butter, lemon, soy & wasabi. Make sure the butter's cold when it goes in or the glaze wont work properly. Keep mixing it until you have a nice, glossy, rich sauce & put to one side (somewhere warm again). Get a heavy based frying pan really nice & hot, so it's just starting to smoke. While it's heating up, drizzle your tuna in olive oil and rub it all over. Sprinkle with salt n pepper on both sides. When the pan's ready, place your steaks in there gently. Leave to fry on each side for about 1-2mins, depending how rare you like your fish. Pop a scoop of peas in the middle of your plate and gently place the tuna on top. Give your sauce one last stir, and pour over the top.
