Grilled Tandoori-Spiced Chicken over Green Papaya Salad image

1 whole chicken, cut into 4 sections, skin removed
1 tablespoon ground ginger
1 teaspoon cumin seeds
1 teaspoon coriander seeds
2 teaspoons paprika
1 teaspoon turmeric
5 green cardamom pods
1/2 teaspoon cayenne
1 tablespoon minced garlic
2 lemons, juiced
1/4 cup vegetable shortening
Salt and freshly ground black pepper
Yogurt sauce, as an accompaniment, recipe follows
Green Papaya Salad, as an accompaniment, recipe follows
1/2 cup plain yogurt
1 lemon, zested
1 tablespoon lemon juice
1 teaspoon minced garlic
1 tablespoon chopped cilantro
Pinch cayenne
Salt and freshly ground black pepper
2 large garlic cloves, forced through a garlic press
1/3 cup fresh lime juice
3 tablespoons Asian fish sauce (preferably nuoc mam)
1 tablespoon plus 1 teaspoon sugar
2 small thin fresh red or green Asian chile (1 or 2 inches long) or Serrano chile, or to taste, seeded and finely chopped (wear rubber gloves)
1 1/2 pounds green papaya, peeled, seeded, and coarsely shredded in a food processor (about 4 cups)
2 carrots, finely shredded
2/3 cup cilantro leaves, washed well and spun dry
4 tablespoons roasted peanuts, crushed

Steps:

  • With a sharp paring knife, make 2 to 3 (1/2-inch deep) diagonal cuts in each piece of chicken, being careful not to cut all the way through.
  • In a small saute pan set over moderate heat, combine the ginger, cumin, coriander, paprika, turmeric, cardamom pods, and cayenne. Cook, gently shaking the pan, until you can smell the spices, approximately 1 minute.
  • Transfer the spices to a spice/coffee grinder and grind the spices finely.
  • Transfer the chicken pieces to a large resealable plastic bag and add the spice mixture, garlic, and lemon juice and toss to coat thoroughly, making sure the rub penetrates the cuts. Marinate the chicken in the refrigerator, for at least 5 hours or overnight.
  • Preheat grill.
  • Remove chicken pieces from the plastic bag and pat them dry. Season with salt and pepper, to taste. Rub the chicken pieces thoroughly with half the shortening.
  • Grill chicken on an oiled rack 5 to 6 inches over glowing coals or on a gas grill for 7 to 10 minutes per side. While grilling, brush on the remaining shortening. When the chicken pieces are cooked through, transfer to a platter. Let chicken stand while preparing salad.
  • In a sieve, drain the yogurt for 15 minutes. In a bowl, combine yogurt, lemon zest, lemon juice, garlic, cilantro, cayenne, salt, and pepper, to taste.
  • In a large bowl, whisk together the pressed garlic, lime juice, fish sauce, and sugar, and blend until the sugar is dissolved.
  • Add chile, papaya, carrot, and cilantro to the dressing, tossing well. Salad may be made 2 hours ahead and chilled, covered. Bring salad to room temperature before serving. Serve salad sprinkled with peanuts.

GRILLED VANILLA-GINGER PINEAPPLE

Sherry Yard has a wonderful recipe in her first cookbook, "The Secrets of Baking," called Roasted Voodoo Vanilla Pineapple. She roasts her pineapple with the dried vanilla pods that you save after you've scraped out the seeds, and fresh ginger. She inserts the pods into the flesh of the pineapple, a great idea if you're roasting the pineapple for a long time. I decided to use vanilla extract instead of the pods, because during the relatively short time on the grill they infused only the section of the pineapple they had been stuck into. I add vanilla to the ginger syrup and baste the pineapple with this sweet and pungent mix. You could also simply drizzle the pineapple with honey.

1 teaspoon vanilla extract
1/4 cup ginger palm sugar syrup or honey

  • Cut ends off pineapple. Quarter lengthwise, peel and core.
  • Prepare a hot or medium-hot grill. (If you are using the grill after cooking meat or fish, allow residue to burn off and scrape away with a spatula.) Stir together vanilla extract, ginger palm sugar syrup or honey, and cayenne.
  • Brush pineapple wedges lightly with butter or oil and place on grill. Cook for 6 to 8 minutes per side, basting with the syrup, until you see grill marks and the pineapple is lightly colored. Remove to a platter or to plates and brush on remaining syrup or honey. Garnish with fresh mint, and serve warm.

  • Preheat oven to 450 degrees. Stir together sugar and ginger in a small bowl. Arrange papaya halves, cut sides up, in a 10-by-13-inch baking dish. Sprinkle sugar mixture evenly over halves.

2 medium papayas, cut in half and seeds removed
1/3 cup honey
1 tablespoon fresh ginger, minced (or 1 tsp dried ground ginger)

Steps:

  • For roasted papaya:.
  • Preheat the oven to 350 degrees F, and spray a baking sheet with cooking spray.
  • Combine the honey and ginger, and brush over the papayas.
  • Place on the baking sheet, cut side up, and bake 15 minutes, or until nicely browned.
  • Serve warm.
  • For grilled papaya:.
  • Preheat a grill or indoor grill pan to medium-high heat. If using a grill pan, spray it with cooking spray.
  • Combine the honey and ginger and set aside.
  • Place the papayas on the grill (or grill pan), cut sides down, and grill 4 minutes. When you turn the papayas cut-side up, brush the honey mixture over the papayas, and grill 4 more minutes.

Seeds of 1 large papaya
1 clove garlic, minced
Zest and juice of 1 lime
Zest and juice of 1 lemon
1/4 cup canned coconut cream, skimmed from the top of the can* (See Cook's Note)
2 tablespoons freshly chopped cilantro leaves
1 tablespoon minced fresh ginger
4 boneless, skinless chicken breasts
1 tablespoon vegetable oil, plus more as needed
1/4 cup Papaya BBQ Sauce, recipe follows
1/4 cup Spiced Cashew Nuts, coarsely chopped, recipe follows
1 tablespoon fresh cilantro leaves, for garnish, optional
1 tablespoon vegetable oil
1 sweet onion, finely diced
3/4 cup sugar
1 Scotch Bonnet pepper, seeded, deveined and quartered
Zest and juice of 2 limes
Zest and juice of 1 lemon
1 cup water
1/2 cup seasoned rice wine vinegar
5 cups large diced papaya
2 teaspoons kosher salt
1 teaspoon butter
1/2 cup unsalted cashews
Pinch ground paprika
Pinch kosher salt

Steps:

  • For the marinade: In a bowl, combine the papaya seeds, garlic, lime zest, lime juice, lemon zest, lemon juice, coconut cream, cilantro, and ginger, and mix thoroughly. Add the chicken breasts to the bowl, and toss to coat in the marinade. Cover the bowl with plastic wrap, and place in the refrigerator to marinate for a minimum of 1 hour or up to 24 hours.
  • For the chicken: Heat and a grill over medium-high heat and lightly grease the grate with oil. Remove the chicken from the marinade, and lay the breasts on the hot grill. Discard the marinade. Baste each chicken breast with 2 tablespoons Papaya BBQ Sauce, and continue grilling, turning once and basting occasionally with the remaining sauce, until the meat is cooked through. Transfer the chicken to a serving platter and garnish the chicken with the chopped Spiced Cashew Nuts and cilantro leaves, if using.
  • Heat the oil in a pot over medium heat, and add in the onion. Cook, until the onions are translucent, stirring continuously to ensure the pieces do not brown. Sprinkle the sugar, scotch bonnet, lime zest, and lemon zest over the onions, and stir until the sugar dissolves. Pour in the lime juice, lemon juice, water and vinegar. Bring the ingredients to a boil. Add in the diced papaya, and adjust the seasonings with the salt, if desired. Bring the mixture to a boil again, reduce the heat, and allow the mixture to simmer for 15 minutes. Take the pan off the heat, and let the mixture cool slightly. Carefully transfer the mixture to a blender, and puree the sauce until smooth. Transfer the BBQ sauce to a bowl, and set aside.
  • In a small frying pan, melt the butter over medium heat. Drop the cashews into the pan, and toast until golden brown. Remove the pan from the heat, then sprinkle over the paprika, and salt, and gently toss to coat.

3 green onions, chopped
4 large garlic cloves, chopped
1 small onion, chopped
4 to 5 fresh Scotch bonnet or habanero chiles, stemmed and seeded
1/4 cup fresh lime juice
2 tablespoons soy sauce
3 tablespoons olive oil
1 1/2 tablespoons salt
1 tablespoon brown sugar
1 tablespoon fresh thyme leaves
2 teaspoons ground allspice
2 teaspoons black pepper
3/4 teaspoon freshly grated nutmeg
1/2 teaspoon ground cinnamon
FOR CHICKEN
4 chicken breast halves with skin and bones (3 pounds), halved crosswise
2 1/2 to 3 pounds chicken thighs and drumsticks
Papaya Salsa (recipe follows)
Special equipment: Gas or charcoal grill (optional)

Steps:

  • MAKE MARINADE
  • Blend all marinade ingredients in a blender until smooth.
  • MARINATE AND GRILL CHICKEN
  • Divide the chicken pieces and marinade in 2 sealable plastic bags. Seal the bags, pressing out excess air, then turn bags over several times to distribute marinade. Put bags of chicken in a shallow pan and marinate, chilled, turning once or twice, for 1 day.
  • Let chicken stand at room temperature 1 hour before cooking.
  • COOK CHICKEN USING CHARCOAL GRILL
  • Open the vents on the bottom of the grill and on the lid. Light a large chimney of charcoal briquettes (about 100) and pour them evenly over one side of a bottom rack (you will have a double or triple layer of charcoal).
  • When the charcoal turns grayish white and you can hold your hand 5 inches above the rack for 3 to 4 seconds, sear the chicken in batches on a lightly oiled rack over the coals until well browned on all sides, about 3 minutes per batch. Move the chicken as seared to the side of the grill with no coals underneath, then cook, covered with the lid, until cooked through, 25 to 30 minutes more.
  • Serve the chicken with the papaya salsa.
  • COOK CHICKEN USING GAS GRILL
  • Preheat the burners on high, then adjust heat to moderate. Cook chicken until well browned on all sides, 15 to 20 minutes. Adjust the heat to low and cook chicken, covered with lid, until cooked through, about 25 minutes more.
  • Serve the chicken with papaya salsa.
  • COOK CHICKEN USING AN OVEN
  • If you can't grill, you can roast the chicken in two large shallow (1-inch-deep) baking pans in the upper and lower thirds of a 400°F oven, switching the position of the pans halfway through the roasting, 40 to 45 minutes total.
