SEAFOOD FRA DIAVOLO WITH PASTA
This is a recipe I found on AllRecipes. I've changed it a bit to suit my family's tastes. It is a WONDERFUL sauce that truly enhances the seafood you use in it. I choose to use primarily scallops and calamari rings with a bit of shrimp in it, however, you can probably add any seafood you like to it and still have it come out wonderful! Serve this one up with some fresh bread and you'll be in heaven!

Steps:
- In a large saucepan, heat 2 tablespoons of the olive oil with the garlic and shallots over medium heat.
- When the garlic starts to sizzle, pour in the tomatoes and tomato sauce.
- Season with salt and red pepper.
- Bring to a boil.
- Lower the heat, add the red wine and tomato paste and simmer for 30 minutes, stirring occasionally.
- Meanwhile, bring a large pot of lightly salted water to a boil.
- Cook pasta for 8 to 10 minutes, or until al dente; drain.
- In a large skillet, heat the remaining 2 tablespoons of olive oil over high heat.
- Add the shrimp, calamari and scallops.
- Cook for about 4 minutes (or until done), stirring frequently, or until the shrimp turn pink.
- Add seafood to the tomato mixture, and stir in the parsley.
- Cook for 3 to 4 minutes, or until the sauce just begins to bubble.
- Serve sauce over pasta.

- How to make it 1. Prepare linguine by boiling per directions on package 2. In a large skillet, heat olive oil on medium high add garlic to oil and brown 3. when garlic is browned, add the tomato paste, stirring in add red wine and stir in until well mixed 4. turn down heat to medium. 5. Mix in parsley, basil, cayenne, and marjoram. 6. add water to sauce, allow to return to bubble 7. add shrimp, scallops and crab meat thoroughly coating with sauce and cook about 5 minutes until scallops firm up 8. Drain pasta and toss into skillet. 9. Mix until well coated with sauce and place on a large plate 10. sprinkle on cheese 11. sprinkle on crushed red pepper to taste

- 1. A side suggestion: keep a few peaces of uncooked fish,salmon has a stronger flavor for later, if needed In a deep pan add a 1/3cup of water and add seafood to simmer for 10 minutes.The purposes of this method is to draw the flavor from the seafood into the water.Remove seafood from pan and set aside for later, be sure to not break up fish to much.
- 2. Now this part is essential to this recipe!the water should have a Strong flavor. If not add those few peaces of uncooked fish and simmer 5 minutes more,remove those peaces and set aside.
- 3. To flavored water add 1/4 cup heavy cream and enough Parmesan cheese to thicken the sauce.If you need more sauce add remaining heavy cream.The Parmesan cheese can be added as well,or when serving your dish.
- 4. Cook your multicolor tortellini to package directions drain and set aside for later.Now that you have made your sauce,gently add seafood and tortellini to mixture. Sprinkle top with Parmesan cheese and serve. I serve hot bread and salad with this dish. enjoy!

- Heat olive oil in a large skillet over medium-high heat. Cook and stir shallot and garlic in hot oil until tender, about 5 minutes. Add red pepper flakes; cook and stir to release flavor, about 1 minute. Stir fire-roasted tomatoes and tomato paste into the shallot mixture. Thin the sauce by stirring white wine into the mixture; cook and stir until sauce becomes thick and bubbly, 4 to 5 minutes.

SEAFOOD AND TORTELLINI IN CREAM SAUCE
I was just looking for something to do with the seafood I had in my freezer, I found a bag of tortellini in there too and we were in business. Just kinda made this one up from stuff I had in the kitchen one day. We decided it was worth making again.

- 1. Cook tortellini according to package directions, drain and set aside. Meanwhile, melt half of the butter in pan and cook shrimp and diced onion, just until onions are tender and shrimp is pink. Remove shrimp & onions to a warm plate, reserving pan drippings.
- 2. Add more butter to pan, melt and add flour whisking until well blended with butter. Gradually pour in milk, whisking constantly. Add parmesan cheese, salt & pepper. Stir over medium heat until thick and bubbly.
- 3. Combine all ingredients in a pan except the colby-jack cheese. Mix thoroughly.
- 4. Sprinkle with colby jack and heat just until the cheese is melted. Serve with crusty garlic bread.
DIABLO SAUCE WITH PASTA
This sauce rocks and is so easy and versitile. It came from a restaurant that my husband and I loved and when we moved I talked the chef into giving me the list of ingredients so I could recreate it at home! The original recipe is made with fish, but I love it with shrimp. You will make it again and again!

Steps:
- Prepare pasta as directed.
- Lightly pan fry your shrimp, chicken, or fish in olive oil.
- Sometimes I lightly bread my chicken, sometimes I don't.
- Mix flour into marinara so that it blends well in the sacue and doesn't get lumpy.
- Now, combine all ingredients except mushrooms in a large skillet over medium heat.
- Stir and bring to simmer for about 3-5 minutes.
- Add mushrooms and continue to simmer for about 5-8 more minutes or until desired consistancy.
- This sauce is not overly thick so don't add too much flour.
- If preparing with sauteed shrimp I add that for just a minute before pouring over pasta or if I'm serving with chicken or fish I just lay either over a small bed of pasta and cover with sauce and maybe a sprinkle of parmesean cheese.
- Enjoy!

- In a large high sided skillet over medium high heat, add tomato sauce, diced tomatoes, wine, garlic, Italian seasoning and crushed red pepper.
- heat until just starting to bubble, add mussels and clams, cook until they start to open.
- Lower temperature to medium and add shrimp and squid, cook 4-5 minutes until shrimp and squid cook,be careful not to over cook shrimp and squid to avoid them becoming chewy and not tender.
