RED SNAPPER COOKED EN PAPILLOTE WITH JULIENNED VEGETABLES

Red Snapper Cooked en Papillote with Julienned Vegetables image

Provided by Food Network

Categories     main-dish

Time 45m

Yield 6 servings

Number Of Ingredients 9

6 whole baby red snappers, 8 to 12 ounces each, cleaned and scaled
Salt
Freshly ground black pepper
24 small sprigs fresh tarragon or basil
1 carrot, cut into thin julienne strips
1 small leek, thoroughly washed, cut into thin julienne strips
1 small turnip, cut into thin julienne strips
Extra-virgin olive oil
2 lemons, thinly sliced

Steps:

  • On the thickest part of each side of the snappers, cut a 1/2-inch-thick incision along its length. Season the snappers inside and out with salt and pepper and tuck 3 tarragon sprigs inside each fish's body cavity.
  • Cut 6 pieces of aluminum foil, each large enough to completely enclose each fish. Preheat the oven to 450 degrees F.
  • Arrange half of the julienned vegetables in beds in the center of each piece of foil and place a fish on top. Drizzle the fish generously with olive oil. Arrange the remaining vegetables on top, then cover with lemon slices and the remaining herbs.
  • Close the foil around each fish, double pleating the edges together to form airtight packages. Place the packages on a baking sheet and bake them until they have puffed up like balloons, about 15 minutes.
  • Serve each foil package on a dinner plate. Let each guest carefully open the package to eat the fish, easing the fillets off the bone along the top incision and then pulling out the spine and ribs in a single piece.

Categories     side-dish

Time 55m

Yield 6 servings

Number Of Ingredients 12

1 ounce olive oil
2 ounces dried shrimp, chopped
1/4 cup diced onion
1/4 cup diced celery
1/4 cup diced carrots
2 cups water
1 1/2 cups grated turnips (daikon)
2 tablespoons minced cilantro
1 tomato, diced
Six 3-ounce moi fillets, scaled
1 bunch watercress, chopped
2 heads Manoa lettuce

Steps:

  • In a stock pot, heat oil to medium high temperature then add dried shrimp into pot stir until oil coats shrimp, about 2 to 3 minutes. Then, add onion, celery, and carrots to mixture and saute for another 5 minutes, or until slightly translucent. Add water and bring to a boil. Lower heat to a simmer, and cook for 20 to 25 minutes. Strain. Place strained mixture over low heat in a saucepan. Add daikon, cilantro and tomato and cook just until ingredients are heated through. Reserve.
  • Method for moi: Place a nonstick pan over low heat and coat with olive oil. Place fillet, skin side down, in the pan and cook until golden brown. Turn fish over and cook until cooked through and golden brown.
  • On medium high heat saute watercress and Manoa lettuce in olive oil for 5 to 10 seconds, just to wilt. Place greens in the middle of a plate and top with sauteed moi. Pour the shrimp nage around fish and greens.

SEA SCALLOPS A LA NAGE WITH JULIENNED VEGETABLES

Sea Scallops a la Nage with Julienned Vegetables image

Provided by Food Network

Categories     main-dish

Number Of Ingredients 10

One 11/4 pounds sea-scallops with shell
Salt and pepper
2 medium leeks, including 1 inch of green
2 large carrots, peeled
1 celery stalk
1 bouquet garni: 3 fresh thyme sprigs or 1/2 teaspoon dried, a small bunch of parsley, and a bay leaf tied up with string (or in cheesecloth for dried thyme)
1 cup dry white wine
1 tablespoon finely chopped parsley
1/4 cup tarragon butter
1 medium turnip

Steps:

  • Cut the leeks in half lengthwise and hold them under running water while flipping through the leaves to rinse out any sand. Cut the leaves 2 or 3 at a time into fine julienne. If the leaves are more than 4 or 5 inches long, fold them under to make them easier to julienne.
  • Julienne the carrots and turnip into 3- inch lengths. The easiest way to do this is first to slice them with a benriner cutter (a Japanese slicer) and then with a chef's knife. Cut the celery stalk into 4-inch sections and julienne it as finely as possible. Combine the julienned vegetables, bouquet garni, and just enough water to cover- about a quart- in a 4-quart pot. Simmer gently, partially covered, for 15 minutes. Add the wine and simmer for 10 minutes more. Strain the vegetable broth, reserving the cooked vegetables and broth. About 10 minutes before you're ready to serve, put the cooked vegetables with 1/4 cup of the broth in a covered saucepan over low heat.
  • Bring the remaining vegetable broth to a simmer in a saute pan just large enough to hold the scallop in a single layer. (If the pan is too large, there won't be enough liquid to cover.) Gently slide the scallops into the simmering broth. If there's not enough liquid to cover the scallops. Poach the scallops for 8 minutes. Spread 3/4 quarters of the julienned vegetables in shells. Carefully arrange the scallop on the vegetables.
  • Add the chopped parsley to the simmering poaching liquid, season the liquid with salt and pepper, swirl in 1/4 cup tarragon butter and ladle enough over the fish to come about a third of the way up the sides of the fish. Arrange the rest of the julienne over the fish.
