BAKED APPLES
This recipe is for whole baked apples stuffed with buttery brown sugar oat crumble. For extra flavor, feel free to swap the water with warm apple cider.

- Preheat oven to 375°F (191°C).
- Using a handheld or stand mixer with a paddle attachment, or simply using a fork or spoon, beat/mash the butter, sugar, cinnamon, and nutmeg together until combined. Stir in the oats, then the raisins/dried cranberries/nuts, if using. Set aside.
- This can be tricky, but I recommend using a sharp paring knife and a spoon. (Or an apple corer.) I find cookie scoops can easily break or crack the apples. Using a sharp paring knife, cut around the core, about halfway or 3/4 down into the apple. Use a spoon to carefully dig out the core. Takes a bit of patience and arm muscle. Once the core is out, use a spoon to dig out any more seeds.
- Place cored apples in an 8-inch or 9-inch baking pan, cake pan, or pie dish. Spoon filling into each apple, filling all the way to the top. Pour warm water into the pan around the apples. The water helps prevent the apples from drying out and burning.
- Bake for 40-45 minutes or until apples appear slightly soft. Bake longer for softer, mushier baked apples. The time depends on how firm your apples were and how soft you want them to be.
- Remove apples from the oven and, if desired, baste the outside of the apples with juices from the pan. This adds a little moisture to the skin, but it's completely optional.
- Serve warm with salted caramel, whipped cream, or ice cream. Cover and store leftovers in the refrigerator for up to 2 days.
LARRA'S BAKED SPICED APPLES AND ORANGES
I had oranges and apples in the house and couldn't find a recipe that used them both so I created this one. This is a great side-dish for a holiday gathering or would even be good as a dessert over French vanilla ice cream -- or even better if you cook this the night before and heat it up before serving. - Preheat the oven to 325 degrees F (165 degrees C).
- In a large bowl, toss together the apples, oranges, brown sugar, Cheddar cheese, and walnuts. Spread evenly in a 9x13 inch baking dish. Sprinkle crushed crackers evenly over the fruit.
- Melt the butter in a small saucepan over medium heat and whisk in flour, cinnamon, nutmeg, cloves and baking powder. Drizzle over the crackers, then drizzle the creamer over the casserole. Cover with a lid or aluminum foil.
- Bake for 1 hour in the preheated oven. Remove from the oven and uncover. Stir gently to fold in the crust.

CRANBERRY & MARZIPAN BAKED APPLES
A new take on baked apples, great served with clotted cream or custard

- Chop marzipan into small chunks and mix with the cranberries, flaked almonds and honey.
- Core apples and mark a line around the circumference of each using a sharp knife. Set the apples in a shallow ovenproof dish that fits them snugly and stuff the cavities with the cranberry mix.
- Pour the water into the dish. Bake at fan 170C/conventional 190C/gas 5 for 30-40 minutes until the apples are tender. Cool for 10 minutes before serving with custard or clotted cream.
BAVARIAN (GERMAN) BAKED APPLES WITH MARZIPAN
This is from "Bavarian Cooking". I haven't made it yet. For the wine, the German Forum recommends chardonnay, followed by pinot grigio. Riesling might be too sweet.

- Wash the apples; core with apple corer. Remove stem, crown and core, but not the bottom.
- Knead marzipan with sugar and Arrack (or rum) until it crumbles. Add the ginger. Mix.
- Fill apples with the mixture. Place in ovenproof dish. Pour wine around apples. Sprinkle apples with almond flakes and dot with little pieces of butter.
- Cover with foil. Bake at 420 for about 1/2 hour (time depends on kind of apple use).

MARZIPAN & MINCEMEAT APPLES
With only four ingredients, this is a great use for leftover mincemeat

- Cut the apples in half widthways. Remove and discard cores, then stand the apples in a microwave-safe dish. Break the marzipan into small chunks and mix with the mincemeat and lemon zest. Spoon into the centre of the apples and pour over the lemon juice.
- Cover the dish with cling film, pierce several times and microwave on High for 4½ minutes. If you don't have a turntable and the apples are not cooking evenly, turn the dish halfway through.
- Remove the cling film and leave to stand for 5 minutes before serving.

- Scoop out the core from top of the apple, leaving a well. Do not cut all the way through. Stuff each apple with 2 tablespoons brown sugar and 1 tablespoon butter. Place in a shallow baking dish and sprinkle with cinnamon.
