For a taste twist on traditional ham and eggs, Carol Towey substitutes hard salami and shredded Swiss cheese for this buttery breakfast dish she serves in Pasadena, California.

1 small onion, chopped
2 tablespoons butter
3 eggs
1/4 cup 2% milk
1/4 cup diced hard salami
1/4 cup shredded Swiss cheese

Steps:

  • In a small skillet, saute onion in butter until tender. In a small bowl, whisk eggs and milk. Add salami and cheese; pour into skillet. Cook and stir until eggs are completely set.

A tasty variation on scrambled eggs. We like this for lunch or dinner, as we don't usually eat a big breakfast.

1 Tbsp unsalted butter
4 large eggs
2 Tbsp cream (or milk)
1/2 c diced salami
1 c shredded cheese (i used a mix of chedder and jack)
salt and pepper, to taste

Steps:

  • 1. Melt butter in a 10-inch skillet over medium heat.
  • 2. Whisk eggs and cream in a bowl.
  • 3. When butter is melted, add eggs to pan and let cook without stirring for 1 minute. When edges start to firm, add salami and cheese and stir lightly until eggs are done to your liking. (I like mine soft and bit wet).
  • 4. Season with salt and pepper and serve with toast.

Turkish Scrambled Eggs With Spicy Tomatoes and Capers (Menemen) image

Fabulous recipe from Milk Street TV, mildly-adapted for ingredients more readily available in the U.S. (cf. poblano peppers). It might remind you a tad of Shakshuka, only with scrambled eggs. If you can't find aleppo pepper, it's worth ordering on line, as it has a wonderful fruity flavor without a lot of heat.

4 tablespoons olive oil, extra virgin, divided, plus more to serve
2 poblano chiles, stemmed, seeded and finely chopped
1 bunch scallion, thinly sliced
3 garlic cloves, minced
1 tablespoon aleppo pepper or 1 teaspoon red pepper flakes
kosher salt, to taste
white pepper, to taste
1 plum tomato, cored and finely chopped
2 tablespoons capers, drained
8 large eggs
1/3 cup feta cheese, crumbled
3 tablespoons dill, chopped

Steps:

  • In a 12-inch nonstick skillet over medium, heat 2 tablespoons of the oil until shimmering. Add the poblanos, scallions, garlic, Aleppo pepper, and ½ teaspoon each salt and white pepper. Cover and cook, stirring, until the chilies are softened but not browned, 6 to 8 minutes. Transfer to a medium bowl and stir in the tomatoes and capers; set aside. Wipe out the skillet.
  • In a medium bowl, whisk the eggs and ¾ teaspoon salt. Return the skillet to medium and heat the remaining 2 tablespoons oil until shimmering. Pour the eggs into the center of the pan. Using a silicone spatula, continuously stir the eggs, pushing them toward the middle as they set at the edges and folding the cooked egg over on itself. Cook until just set, about 1½ minutes. The curds should be shiny, wet and soft. Taste and season with salt and pepper, then divide among warmed serving plates.
  • Top each serving with a portion of the poblano mixture. Sprinkle with feta and dill, then drizzle with oil.

My mother made this for us growing up and now I make it for family! So simple, no butter or oil needed since you fry the salami in a dry pan. We use kosher beef salami. It comes packaged like a thick sausage or in slices.

1/4 cup beef salami, diced or cubed
2 eggs

Steps:

  • Beat the eggs in a bowl and set aside.
  • In a small frying pan, over medium heat, add the salami. Using a spatula, brown the salami on all sides. This won't take long.
  • Once it is browned, add the eggs to the salami.
  • Use the spatula to move the eggs around in the pan until they are set to your taste.
  • Turn out to a plate as soon as they are done and enjoy!

2 tablespoons olive oil
1 small onion, chopped
2 red bell peppers, chopped
2 poblano or Anaheim chiles, chopped
1 fresh hot green chile (like jalapeño), chopped, optional
1 tablespoon minced garlic
Salt and ground black pepper
4 eggs, beaten

Steps:

  • Put oil in a large skillet over medium-high heat. Add onion and cook, stirring occasionally, until it's translucent, 1 or 2 minutes.
  • Add peppers, chiles and garlic, and sprinkle with salt and pepper. Cook, stirring occasionally, until peppers are brightly colored but not too soft, 4 to 6 minutes.
  • Reduce heat to medium-low and pour in eggs. Cook, stirring occasionally with a wooden spoon or rubber spatula, until eggs are cooked, 3 to 8 minutes. Serve on toast or over rice, or wrapped in a flour tortilla.

My late father used to make salami and eggs for breakfast. I can't find kosher salami in rural Maine, so I substituted Genoa Salami. Hubby added the jalapeno and then I came up with adding capers, so this is really a collaborative effort!

5 large eggs, beaten with a little milk
1 jalapeno pepper, minced (seeds and ribs removed)
1 1/2 ounces genoa salami, thinly sliced
1 -2 tablespoon capers, drained
1 -2 teaspoon oil

Steps:

  • Dice the salami and mince the jalapeno.
  • Heat the oil in a non-stick skillet over medium heat. Add pepper, salami and capers and fry until the salami starts to darken.
  • Add eggs and turn heat to low.
  • Scramble gently until the eggs are the consistency you prefer. Season with a little salt and pepper and serve!
