CAMPFIRE PINEAPPLE UPSIDE-DOWN CAKES

Steps:
- Place 1 teaspoon butter in 1 side of sandwich iron. Hold over fire to melt; remove from fire. Carefully sprinkle 1 tablespoon brown sugar over melted butter. Top with pineapple ring; add cherry to center of pineapple. Top with cake (flat side up); close iron. , Cook pineapple side down over a hot campfire until brown sugar is melted and cake is heated through, 5-8 minutes. Invert iron to open, and serve cake on an individual plate.

Steps:
- Slice cakes into 12 even pieces.
- Tear 12 equally sized pieces of heavy duty aluminum foil (I always use Reynolds as what passes for "heavy duty" in the store brand variety is somthing a kin to tissue paper).
- Spray each piece of foil with cooking spray.
- Place 1 slice of cake on each piece of foil.
- Top each piece of cake with a heaping tablespoon of pineapple.
- Place one tablespoon of brown sugar and one tablespoon of butter on top of pineapple.
- Wrap securely in foil and heat in embers until topping is melted.
- This recipe can also be baked at home in a conventional oven. Bake at 350 for 15-20 minutes.

We make this whenever we go camping and it really does taste just like pineapple upside down cake. We usually put the packets on the grill grate on the camp fire ring if there is one; if not, we use our BBQ grill.

Steps:
- Cut 12 large squares of aluminum foil.
- Cut doughnuts in half the way you would a bagel.
- Spread the cut side of each doughnut half with 1 tsp of butter and sprinkle with 1/2 tbsp of brown sugar.
- Top half of the doughnuts with a pineapple slice, then with the other halves of the doughnuts.
- Seal each doughnut tightly in foil.
- Lay over medium coals for about 10-15 minutes, turning halfway through. Open carefully as it will be very hot.

THE ULTIMATE PINEAPPLE UPSIDE-DOWN CAKE .
I come from a family of cooks. All of my Dad's sisters and brothers were great cooks. My favorite cook is my Aunt. She gave me her awesome made from scratch Pineapple Upside-Down Cake recipe, and I tweeked it to make it "fast and Easy" without losing her cake's flavor. Try my take for fast and easy, and for flavor. This is very traditional. But very good and rich! Do NOT use a different kind of pineapple, and do not add other stuff like coconut, or more pineapple to the batter. This will not make it better, it will be overkill. Use this recipe ONLY if you want to impress somebody. The stemmed cherries give it a gourmet look on top. Great dish for a bring-a-dish to work, or a family get together. Put it on the table then, stand back and listen to the compliments. Don't worry if someone else brings another to the table...as YOURS will look better!

- Slice the butter into a 10" cast iron skillet. Turn to med. heat.
- Add the sugar, and mix together til butter is melted. Remove pan from burner.
- Place the 9 slices slightly overlapping all around the edge of the pan.
- Put the 10th slice in the center of the pan.
- Put one of the cherries in the center of each of the slices, tucking the stem UNDER the pineapple slices.
- Mix the batter according to the instructions on the box, EXCEPT sub the water on the box for the HEAVY SYRUP in the can. DO NOT add more water to this syrup. (If you add more water, you will dilute the flavor).
- Add the nuts to the batter and mix.
- Pour the batter on top of the slices.
- Use the same baking time as a bundt cake.
- Do Not use or sub anything else to this moist, rich cake.
- My Cast iron skillet is the traditional southern way to make this cake, and it usually is done in about 43 minutes, no longer.It distributes the heat evenly, and therefore makes the best cake.
- Using about 1 tablespoons of nuts, put them all around the center slice for looks.

- Preheat oven to 375°.
- To prepare TOPPING:.
- Melt butter on low eat in 12-inch cast iron skillet with oven-proof handle.
- Remove from heat. Stir in brown sugar.
- Spread to cover bottom of skillet.
- Arrange well drained pineapple slices, maraschino cherries in skillet; set aside.
- To prepare CAKE:.
- Combine cake mix, pudding mix, eggs, water and oil in large mixing bowl. Drain pineapple juice in 1 cup mixing cup and fill with enough water to equal one cup of liquid.
- Beat at medium speed with electric mixer for 2 minutes.
- Pour batter evenly over fruit in skillet.
- Bake at 350° for 1 hour or until toothpick inserted in center comes out clean.
- Cut into wedges.
