BUTTERSCOTCH APPLE PUDDING



Butterscotch Apple Pudding image

A self saucing pudding to warm you on cold days. As the pudding bakes it forms a butterscotch sauce under the apple studded crust. This comes from another of my Alison Holst recipe books from the 1970's. Still making in the 2000's :)

Number Of Ingredients 10

1 cup flour
2 teaspoons baking powder
1/4-1/2 teaspoon nutmeg or 1/4-1/2 teaspoon ginger
1/2 teaspoon salt
2 -3 apples, diced (cooking ones are best, but I use whatever I have on hand)
1/2 cup milk
1 cup brown sugar
1/2 teaspoon cinnamon
2 tablespoons butter
2 cups water

Steps:

  • Sift the flour, baking powder, spice and salt together.
  • Peel, core & dice apples and toss them into the flour mixture.
  • Add milk and mix with a knife to blend all the ingredients.
  • Spread mixture into a greased baking dish approx 9" (23cm) square or a round one of similar size.
  • Measure the topping ingredients in the order given into a saucepan and bring to the boil.
  • Pour boiling mixture carefully over the batter in the pan.
  • Bake uncovered at 375'- 400'F (190' - 200'C) for approx 45-60mins, or until topping is firm in the centre and golden brown.
  • Serve warm with sweetened whipped cream or vanilla ice cream.

This is one of my Mom's recipes and one that both Dad and I really enjoyed. Always looked forward to the fall and apples from MacIntosh tree out back! Sometimes Mom called it Apple Pudding other times she called it Apple upside-down cake, either way it was a cake texture with baked apples and a carmel type sauce. Always a treat to come home from school and smell this in the oven! Serve it warm as is or with vanilla ice cream!

6 apples, peeled and sliced
1/2-1 teaspoon cinnamon
4 tablespoons butter, softened
1/2 cup brown sugar
1 egg, lightly beaten
1/2 cup milk
1/2 teaspoon vanilla
1 cup all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1 cup brown sugar, packed
1 tablespoon all-purpose flour
1 tablespoon butter
1 teaspoon vanilla
1 1/2 cups hot water

Steps:

  • Place apples in 2 litre casserole dish. Sprinkle with the cinnamon.
  • Cream butter and sugar then add the next 6 ingredients and mix well. Spoon over apples.
  • Mix brown sugar and flour thorougly in a bowl. Stir in butter, vanilla and water. Pour over batter and leave to sit on top. Bake uncovered in a 350 F oven for 30 minutes or until apples are baked and pudding is firm to the touch.

1 egg, well beaten
1 cup sugar
3 medium cooking apples, pared, cored and diced
2 tablespoons flour
1 teaspoon baking powder
1 pinch salt
1/2 cup chopped pecans
whipped cream

Steps:

  • Preheat the oven to 350°F Butter a 9 inch pie pan.
  • Beat eggs and sugar together until light and frothy. Add apples, flour, baking powder, salt and pecans. Spread in the pan and bake at 350 F until brown and crusty, about 25 minutes. Serve warm, but not hot, with whipped cream.

1/2 cup water
1/2 cup firmly packed brown sugar
1/4 cup milk
2/3 cup flour
1/2 cup quick-cooking oatmeal
1/2 cup chopped pecans
1/4 cup sugar
1 teaspoon cinnamon
1/2 cup butter or 1/2 cup margarine, melted
1 (3 1/2 ounce) package butterscotch pudding mix or 1 (3 1/2 ounce) package vanilla pudding mix (not instant)

Steps:

  • Combine first 5 ingredients in large bowl; mix well.
  • Pour into ungreased 9-inch square baking pan.
  • Combine remaining ingredients in medium size bowl; mix until crumbly.
  • Sprinkle over apples.
  • Bake at 350F for 45-50 minutes,or until apples are tender and topping is brown.

4 cups sliced peeled tart apples
1/2 cup packed brown sugar
2/3 cup plus 1 tablespoon all-purpose flour, divided
1/2 cup water
1/4 cup milk
1/2 cup quick-cooking oats
1 package (3-1/2 ounces) cook-and-serve butterscotch pudding mix
1/4 cup sugar
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 cup butter, cubed

Steps:

  • Place the apples in an ungreased 11x7-in. baking dish. In a large bowl, whisk the brown sugar, 1 tablespoon flour, water and milk. Pour over apples. , In another bowl, combine oats, pudding mix, sugar, cinnamon, salt and the remaining flour. Cut in butter until mixture resembles coarse crumbs. Sprinkle over apples. , Bake at 350° for 45-50 minutes or until topping is golden brown and fruit is tender. Serve with ice cream if desired.
