Steps:
- Sift dry ingredients together in bowl.
- Add egg yolk, milk and butter. Mix thoroughly.
- Beat egg white until stiff. Stir 1/4 into batter to lighten it. Then gently fold in remaining egg white.
- Pour 1/3 cup batter onto heated iron.
- Note: I use the blender to beat my egg whites when making several batches. It is much faster than beating by hand.

- Preheat waffle iron and read manufacturer's instructions. Melt butter in microwave. In a large bowl, combine flour, baking powder, salt and sugar. In another bowl, beat together milk and eggs. Whisk liquid mixture into dry ingredients until just combined. Stir in melted butter. Brush hot waffle iron with butter. Spoon about 1/2 cup of batter onto iron and close to cook. This first waffle will be the tester. Cook waffle until golden brown. Remove to plate and keep warm
WAFFLES I
You can keep the batter covered in the fridge for up to a week. Just be sure to whisk well before using again. You may also use whole wheat flour for this recipe.
