Steps:

  • Soak 1/4 thinly sliced red onion in cold water, about 10 minutes. Whisk 1/4 cup orange juice, the juice of 1 lime, 1 tablespoon honey, 2 teaspoons dijon mustard, 1/2 teaspoon salt, and pepper to taste in a bowl. Whisk in 3 tablespoons olive oil. Drain the onion; toss with 2 bunches watercress, 2 sliced avocados, 2 segmented oranges and the dressing. Top with chopped toasted hazelnuts.

1 large egg
1/4 cup sugar
1-1/2 teaspoons honey
1 teaspoon ground mustard
1/2 teaspoon cornstarch
2 tablespoons water
2 tablespoons cider vinegar
2 tablespoons mayonnaise
2 tablespoons sour cream
4-1/2 teaspoons butter
4 cups broccoli florets (about 1 medium bunch)
1 cup salted cashews
1 cup cubed Swiss cheese
1 can (11 ounces) mandarin oranges, well drained
1/2 cup raisins
6 bacon strips, cooked and crumbled
1/2 cup chopped red onion, optional

Steps:

  • In a heavy saucepan, combine egg, sugar, honey, mustard and cornstarch with a whisk until smooth. Gradually whisk in water and vinegar. Cook and stir over medium heat until a thermometer reads 160° and mixture is thickened. Remove from the heat; stir in mayonnaise, sour cream and butter until blended. Cool. , Meanwhile, in a large bowl, combine broccoli, cashews, cheese, oranges, raisins, bacon and onion if desired. Just before serving, add dressing and toss to coat.

2 bunches watercress
1 bunch broccoli
1 orange, peeled, pith pared, flesh cut into 1/2-inch pieces
1 clove garlic, crushed
1 teaspoon soy sauce
1 to 2 tablespoons balsamic vinegar
1/4 cup fresh orange juice
1/4 to 1/3 cup sesame oil
2 tablespoons toasted sesame seeds
Coarse salt and freshly ground peppr to taste

Steps:

  • Trim the stalks from the watercress. Wash and dry the leaves. Strip the stalks from the broccoli and divide the florets into tiny pieces the size of a thumbnail.
  • Place the broccoli and watercress in a salad bowl along with the pieces of orange.
  • Combine the remaining ingredients. Mix well, remove the garlic clove and pour the dressing over the watercress.

Horseradish gives this salad a bit of a kick and complements the peppery snap of the watercress. Fresh orange sections add a nice contrast of sweetness.

2 fruit, (2-5/8" dia, sphere)s medium oranges
1 teaspoon vegetable oil
1 teaspoon prepared horseradish
1 teaspoon honey
⅛ teaspoon salt
1 dash pepper
2 cups small broccoli florets
¼ cup thinly sliced red onion, separated into rings
2 cups trimmed watercress

Steps:

  • Peel and section oranges over a large bowl, and squeeze membranes to extract juice. Set orange sections aside, and reserve 1 tablespoon juice. Discard orange membranes.
  • Add the oil and the next 4 ingredients (oil through pepper) to reserved orange juice. Stir well; set aside.
  • Steam the broccoli, covered, 11/2 minutes or until crisp-tender. Rinse broccoli under cold water; drain well.
  • Add the broccoli, orange sections, onion, and watercress to the orange juice mixture, and toss well. Divide the salad evenly between 2 plates.
