BUTTER PECAN COOKIES

These Butter Pecan Cookies are a Swedish classic! A buttery, brown-sugar-rich shortbread dough, nestled under a pecan half. Only 6 ingredients! So easy.

Number Of Ingredients 6

1 cup salted butter (softened)
2/3 cup brown sugar (packed)
1 egg yolk
2 cups all-purpose flour (spooned and leveled)
1/2 teaspoon salt (I use kosher salt)
50-60 pecan halves

Steps:

  • In a large bowl or stand mixer, cream butter and brown sugar. Beat it for at least 2-3 minutes, stopping to scrape the sides and bottom.
  • Add the egg yolk and beat well.
  • Add the flour & salt. Mix until it forms a ball, scraping the sides and bottom of the bowl. When all the flour is incorporated, stop beating. (Over beating makes for a tough dough.)
  • Cover the bowl and chill for about an hour. (If you are doubling the recipe, be sure to chill for more like 2-3 hours. They will bake flat if the dough is not cold. You can freeze the dough too, if you want.)
  • Preheat your oven to 350 degrees F. Line 2 large baking sheets with silicone baking mats or parchment paper.
  • Form the dough into 1 inch balls. Place on the cookie sheet with one inch of space in between each cookie.
  • Flatten each ball once with a fork. If the fork is sticking, dip it in flour, then press on the cookie.
  • Press a pecan on top, perpendicular to the fork marks.
  • Bake at 350 for 6-8 minutes or until they are no longer shiny on the top or edges.* I don't let mine get brown, or if they do, it is a very small amount on the bottom edges.

1 cup cake flour
¼ teaspoon salt
⅛ teaspoon baking powder
½ cup butter, softened
½ cup white sugar
1 teaspoon vanilla extract
24 whole pecans

Steps:

  • Sift cake flour, salt, and baking powder into a medium bowl.
  • Combine butter, sugar, and vanilla extract in a large bowl; beat with an electric mixer until smooth and creamy. Add dry ingredients and mix thoroughly. Shape dough into a 1-inch diameter log, wrap with plastic wrap, and place in the refrigerator until firm, 1 hour to overnight.
  • Preheat the oven to 275 degrees F (135 degrees C). Line 2 cookie sheets with parchment paper.
  • Remove dough from the refrigerator and slice into 24 slices. Place on the prepared cookie sheets and press a pecan firmly into each slice.
  • Bake in the preheated oven until edges are golden, about 40 minutes. Cool on the baking sheet for 1 minute before removing to a wire rack to cool completely.

1 cup heavy cream
1 cup sour cream
1 1/3 cups sugar
2 Tbsp shortening
1 large egg yolk
1 tsp vanilla extract
2 tsp baking powder
1 tsp baking soda
1/4 tsp salt
3 cups all-purpose flour ((plus more for rolling & shaping))

Steps:

  • Start the night before by mixing together the heavy cream and sour cream in a small bowl. Whisk until smooth, then cover with cling film and refrigerate.
  • When ready to start, set the cream mixture out to room temperature. Next, preheat your oven to 475°F (246°C) and line your baking sheets with parchment paper or silicone baking mats.
  • In a large bowl cream together the sugar, shortening, and egg yolk.
  • Stir in the vanilla extract, baking powder, baking soda, and salt into the cream mixture then transfer the wet ingredients into the creamed sugar. Mix until well combined. Add the flour until completely incorporated into the dough, which should be sticky when done. *You can chill the dough for an hour before handling it to make the next step easier if desired.
  • Since the dough is sticky, use a well-floured surface to roll the dough out onto. Pull off roughly 1 1/2-inch ball-shaped portions of the dough and roll them in the flour to coat all sides. Then move them to the side of your working surface where there is less flour and roll them out to a rope shape (approximately 8-9 inches long). Shape the rope into an '8' or 'infinity sign' or fold over like a pretzel shape, or you can also shape them into round coils - but these take longer to bake.
  • Place each shaped dough piece onto your prepared baking sheets then bake for 5-6 minutes, or until the bottom just begins to turn a light golden color. *Depending on the thickness of the 'ropes', the cooking time can be longer.
  • Remove from the oven when done and allow to cool on the baking sheet for about 5 minutes before transferring to a wire cooling rack to cool completely.

1 egg, separated
2 cups all-purpose flour
1/2 cup finely chopped pecans

Steps:

  • Cream the butter, sugar, and egg yolk together until well combined.
  • Gradually stir in the flour.
  • Beat the egg white until frothy.
  • Roll the dough into 1in. balls. Dip into the egg white, the roll in the chopped pecans.
  • Place 2 inches apart onto ungreased baking sheets; flatten slightly.
  • Bake at 375*F (190*C) for 9-12 minutes or until the edges are lightly browned. Remove to wire racks to cool.

Steps:

  • In a large bowl, cream butter, sugar and vanilla until light and fluffy. Gradually add flour. Stir in pecans., Shape rounded teaspoonfuls of dough into 2-1/2-in. logs and shape into crescents. Place 1 in. apart on ungreased baking sheets. , Bake at 325° for 20-22 minutes or until set and bottoms are lightly browned. Let stand for 2-3 minutes before removing to wire racks to cool. Dust with confectioners' sugar before serving.

1 cup vegan margarine, room temperature (recipe's author uses Earth Balance)
1/2 cup confectioners' sugar
1 tablespoon water
2 teaspoons vanilla extract
2 cups all-purpose flour
1 cup pecans, chopped

Steps:

  • Cream earth balance vegan margarine with 1/4 cup powdered sugar, add water and vanilla and mix.
  • Add flour and mix well.
  • Finally mix in pecans. (The batter will appear dry!).
  • Form into 1-inch diameter balls, place on an ungreased cookie sheet and chill for one hour.
  • Bake in a slow oven (roughly 300 degrees Fahrenheit) for 20 minutes or until lightly browned.
  • While still hot, roll in remaining confectioners' sugar.
  • Store in an airtight container.

Steps:

  • Sift together flour and salt.
  • Beat together butter and sugar with an electric mixer until pale and fluffy. Beat in ammonium carbonate and almond extract until combined well. Mix in flour mixture at low speed just until blended, then stir in coconut. Form dough into a disk and chill, wrapped in plastic wrap, until firm, about 1 hour.

1 tablespoon plus 1 cup butter, softened, divided
1 cup packed brown sugar

1 cup pecan halves

Steps:

  • Place chopped pecans and 1 tablespoon butter in a baking pan. Bake at 325° for 5-7 minutes or until toasted and browned, stirring frequently. Set aside to cool. , In a large bowl, cream brown sugar and remaining butter until light and fluffy. Beat in egg yolk and vanilla. Gradually add flour and mix well. Cover and refrigerate for 1 hour or until easy to handle. , Roll into 1-in. balls, then roll in toasted pecans, pressing nuts into dough. Place 2 in. apart on ungreased baking sheets. 1 cup cold lightly salted butter, cut into chunks
1 3/4 cups powdered sugar
2 cups flour
1 teaspoon vanilla extract
1 cup ground pecans

Steps:

  • Preheat the oven to 325 degrees. In a bowl, cream together butter and 3/4 cup of the powdered sugar. Add the flour, vanilla and ground pecans. Stir to combine.
  • Shape dough into balls, using a slightly rounded teaspoon for each. Place 2 inches apart on a parchment-lined cookie sheet. Bake until the edges turn gold, about 20 minutes.
