Scallops with Parsnip Puree image

Add scallops to your weeknight rotation: They're low in fat, calories and cholesterol. (Plus they cook quickly!)

1 1/4 pounds parsnips, peeled and chopped
1 cup milk
Kosher salt
2 tablespoons unsalted butter
Freshly ground pepper
2 tablespoons plus 1 teaspoon vegetable oil
1 1/2 pounds large scallops, "foot" muscles removed
1/4 cup blanched hazelnuts, chopped
1 tablespoon chopped fresh thyme
1 tablespoon honey
1/4 cup plus 1 tablespoon sherry vinegar
1 small shallot
3 cups watercress, thick stems removed

Steps:

  • Combine the parsnips, milk and a large pinch of salt in a medium saucepan. Cover and bring to a simmer, then reduce the heat to low and cook, stirring occasionally, until tender, about 20 minutes. Transfer the mixture to a blender or food processor, add the butter and puree. Season with salt and pepper.
  • Meanwhile, heat 2 tablespoons vegetable oil in a large nonstick skillet over high heat. Season the scallops with salt and pepper, add to the skillet and cook, undisturbed, until well browned, about 3 minutes. Flip and cook through, about 1 more minute. Divide among plates.
  • Add the remaining 1 teaspoon vegetable oil and the hazelnuts and thyme to the skillet. Cook, stirring and scraping up the pan, until the nuts are toasted, about 1 minute. Scrape the mixture into a bowl.
  • Return the skillet to the heat and stir in the honey and 1/4 cup vinegar. Cook, swirling the pan, until thick, about 1 minute.
  • Thinly slice the shallot and put in a large bowl with the remaining 1 tablespoon vinegar, 1/4 teaspoon salt and a few grinds of pepper. Add the watercress and toss. Add the watercress salad and parsnip puree to the plates. Sprinkle with the hazelnut mixture and drizzle with the honey syrup.

One 16-ounce bag of edamame is enough for both puree and salad; cook it all at once, and then divide it accordingly.

1/2 cup frozen shelled edamame, cooked according to package instructions
1/2 red bell pepper, stemmed, seeded, and finely diced (1/3 cup)
1 tablespoon toasted black sesame seeds
1 tablespoon fresh lime juice
1/2 teaspoon Asian chili paste, such as sambal oelek (see the Guide)
1/4 teaspoon coarse salt
1/4 teaspoon freshly ground pepper
2 1/2 cups frozen shelled edamame, cooked according to package instructions
1/4 cup fresh lime juice (from 2 to 3 limes)
1/3 cup water
2 tablespoons whole fresh mint leaves
1/2 teaspoon Asian chili paste, such as sambal oelek
1/4 teaspoon coarse salt
1/2 teaspoon freshly ground pepper
12 sea scallops, tough muscles removed
1 teaspoon coarse salt
1/2 teaspoon freshly ground pepper
1 tablespoon extra-virgin olive oil
Lime wedges, for serving

Steps:

  • Make the salad: Combine edamame, bell pepper, sesame seeds, lime juice, chili paste, salt, and pepper.
  • Make the puree: Process edamame, lime juice, water, mint, garlic, salt, and pepper in a food processor until smooth. (The puree should be warm from the just-cooked edamame; reheat it in a saucepan over low heat if necessary.)
  • Make the scallops: Season both sides of each scallop with salt and pepper. Heat oil in a large nonstick skillet over medium-high heat until very hot but not smoking. Add scallops, and cook until golden brown, 1 to 2 minutes per side.
  • Divide warm edamame puree among serving plates. Top with scallops and salad, and serve with lime wedges.

PAN-FRIED SCALLOPS WITH PARSNIP PURéE & PANCETTA CRUMBS



Pan-fried scallops with parsnip purée & pancetta crumbs image

Cook scallops in the professional way then plate up restaurant-style with breadcrumbs and a smear of vegetable purée

1 tbsp vegetable oil
9 large scallops , coral removed (see tip, below)
juice ½ lemon
50g pancetta , cut into 5cm slices
50g fresh breadcrumb
1 tbsp thyme leaf , chopped
200g parsnip , cut into chunks
200ml full-fat milk
small knob of butter

Steps:

  • To make the pancetta crumbs (which you can do up to a day ahead), set a large frying pan over a medium heat. Add the pancetta and sizzle for 5 mins, turning, until coloured. Sprinkle the breadcrumbs into the pan and continue frying and stirring until browned and crisp. Blitz the mixture in a food processor to fine crumbs. Mix in the thyme and store in an airtight container if making ahead.
  • To make the parsnip purée, tip the parsnips into a small saucepan with the milk and some seasoning. Bring to the boil, reduce heat and simmer for 10-15 mins until the parsnips are tender. Purée the mixture in the food processor, then add the butter. Rub through a fine sieve into a clean saucepan, ready to reheat.
  • Heat the oil in a large frying pan over a high heat. Season the scallops and lay them in a circle around the edge of the pan (see step 1). When the last scallop has been added, leave for 1 min until browned. Then, starting with the first scallop, gently turn (step 2). When all the scallops are cooked, transfer to a warm plate and quickly add the lemon juice to your hot pan, scraping the bottom to form a sauce and adding a splash of water if needed.
  • Reheat the parsnip purée, then swipe onto 3 plates (step 3). Top with the scallops, pancetta crumbs and juices from the pan. Serve straight away.

  • Bring small saucepan of water to boil over high heat. Add edamame and 1/4 teaspoon salt and cook until edamame are tender, about 10 minutes. With slotted spoon, remove 1/4 cup of edamame and reserve.

Add 8 scallops and sear until deep golden brown and barely translucent in center, about 2 minutes per side. Transfer scallops to plate and loosely cover with sheet of foil. Cook remaining 8 scallops.
  • Spoon edamame puree evenly onto 4 plates and top each serving with 4 scallops. Sprinkle with reserved edamame and remaining 1/4 teaspoon pepper. Cut remaining lemon half into 4 wedges and place alongside scallops.
