SCALLOPS WITH ORANGE-BUTTER SAUCE
This is a rich meal of orange-flavored scallops, high in vitamin B-12, accompanied by couscous.

Steps:
- In a small skillet, heat oil over medium-high. Season scallops with salt and pepper; cook until browned and opaque throughout, 2 to 3 minutes per side. Transfer to a plate; cover loosely with foil. Cut orange segments into 1/2-inch pieces.
- Reduce heat to medium, add wine to skillet, and cook 30 seconds. Add butter and 3 tablespoons orange juice and cook, swirling, until sauce is thickened, 1 minute. Remove from heat and add chives and orange pieces. Season with salt and pepper and spoon over scallops and couscous.

SCALLOPS L'ORANGE
Scallops delicately flavored with orange zest and white wine. I used an Italian Soave, you can sub with dry vermouth. Recipe from "Food and Wine"

Steps:
- Heat oil in a nonstick skillet over medium high heat until very hot.
- Season scallops with salt and pepper.
- Add half the scallops to the pan and cook 1 minute or until browned.
- Turn and cook 2 minutes or until browned and cooked through.
- Remove from pan and repeat with remaining scallops.
- Wipe out pan, add butter and melt over medium heat.
- Add wine, scallions and orange zest and cook 2 minutes.
- Add scallops, cook 1 minute remove to a serving plate.
- Sprinkle with remaining scallion and orange zest and serve.

SCALLOPS IN ORANGE HOLLANDAISE
Steps:
- For the sauce. Melt the butter on stove in saucepan. Set aside and keep it warm.
- Whisk the egg yolks and place in a double boiler or bowl over boiling water whisking vigorously to keep it from becoming scrambled. Once thickened remove from heat and whisk in the lemon juice then drizzle the butter in slowly whisking constantly. Whisk in the orange juice and zest. Set aside and keep warm.
- Pat the scallops dry and season with salt. Place a skillet over high heat and add the olive oil and butter. Turn the heat to medium and add the scallops sear 2 to 3 minutes per side.
- To plate add some hollandaise to the plate and top with scallops.
ORANGE GLAZED SCALLOPS
One of my new inventions this dish is awesome! I invented on New Years Day that I was spending at Lake Norman, NC. with my boyfriend then I wanted to surprise him and make something different for dinner so I came up with the idea of making scallops. This orange glaze pairs up so well with scallops. So easy to make yet delicious. You must try!!!

Steps:
- In a small sauce pan add the 3 Tbsp of butter, orange juice, 1/2 tsp of salt, 1/2 tsp pepper and minced garlic then bring to boil for 2 minutes then reduce the heat and let it simmer for about 10 minutes stirring occasionally. Sit aside.
- Wash and gently dry the scallops then season with the rest of the salt and pepper.
- In a hot frying pan add the olive oil and 1 tbsp of butter to melt then add the scallops let it cook for about 3-4 minutes each side then add the orange glaze then flip one more time.
- Serve with mashed potatoes or fresh steamed veggies.

EASY SEA SCALLOPS WITH CRAB HOLLANDAISE
This uses the large sea scallops, not bay scallops. I served with parmesan orzo and steamed asparagus. An easy romantic dinner for two.

Steps:
- 1. Rinse and pat dry scallops. Heat a heavy skillet (cast iron works great) over medium-high heat. When hot, add about 1/2 tablespoon oil and heat until simmering.
- 2. Place scallops in hot pan and sear until browned, about 5 minutes. Turn them over and repeat. Sprinkle with salt and pepper, if desired.
- 3. Mix sauce mix and milk in medium sauce pan over medium heat. Add butter and tarragon and cook, stirring constantly, until sauce boils and butter is melted.
- 4. Stir in crabmeat and cook until heat through.
- 5. Divide scallops between two plates and top with the sauce.
