Number Of Ingredients 7

6 ounces plain flour
1/2 teaspoon mustard powder
2 ounces unsalted butter
2 ounces Stilton cheese (may substitute blue cheese)
2 ounces double Gloucester cheese, grated (may substitute cheddar)
6 ounces crunchy peanut butter
1 egg, beaten

Steps:

  • Ingredient weights are DRY weights, not fluid ounces.
  • Place flour and mustard in a bowl.
  • Add butter and rub in until the mixture resembles fine breadcrumbs.
  • Stir in cheeses, and then add the peanut butter and egg and mix well.
  • Roll out on a floured work surface to ¼ inch thick, cut out with a 2 inch biscuit cutter or into assorted shapes.
  • Place on ungreased baking sheets and bake at 200ºC/ 400ºF/ Gas Mark 6 for 10-15 minutes.
  • Cool on a wire rack.
  • Serve warm or cold.
  • Store in an airtight container or cookie tin at room temperature.

  • Put the flour, salt, butter, one of the eggs and 40ml/1½fl oz water into a bowl and mix well for five minutes until you have a smooth dough. Divide the dough in half.
  • On a lightly floured work surface, knead the poppy seeds in to one half of the dough and the parmesan and sun-dried tomato paste to the other.
  • Using a rolling pin, roll out each piece of dough on a lightly floured work surface to about 3mm thick. Place each piece of dough on a baking tray, cover with cling film and refrigerate for 30 minutes.
  • Preheat the oven to 200C/180C(fan)/Gas 6. Dust two large baking trays with flour.
  • Using a 7cm/2¾cm round cutter cut out 18 rounds from each half of the dough, re-rolling as necessary. Place the rounds on the baking tray.
