CHERRY TOMATO RELISH
A simple and delicious tomato relish recipe, perfect for keeping in the fridge or to give as gifts.

Steps:
- Add the oil to a medium-sized saucepan (see Kitchen Notes below).
- Cook the onion and garlic with a pinch of sea salt over medium heat for about 5 minutes until they have softened.
- Add the cherry tomatoes, sugar, vinegar, sea salt and pepper.
- Mix well.
- Turn the heat up to high and let the mixture come to a boil.
- Keep cooking at high heat for about 15-30 minutes, or until the mixture has thickened and looks jammy. The tomatoes will release some liquid during cooking, and the mixture will start to thicken once the liquid evaporates.
- During this time, gently break down any tomatoes with a wooden spoon and stir the mixture from to time to prevent it from sticking to the bottom of the pan.
- Once the mixture has thickened, taste for seasoning. You may want to add some more sugar or more vinegar.
- Serve the tomato relish warm, or spoon the mixture into a warm sterilised jar and seal.

- Slowly fry the onions, garlic and spices in a little olive oil soft and translucent.
- Add the anchovies and cherry tomatoes (which you can blanch and remove the skins first if you like.) Shake around and add the sugar, vinegar and salt and pepper at this point.
- Bring to the boil, stir and simmer gently for 30 minutes before seasoning well to taste and transfer to a few small, sterilized airtight jars, rather than a large one, and seal.
- If unopened, the chutney will improve in flavor and last up to a year in your cupboard. Once opened, keep in your refrigerator for 1 to 2 months.

- Fill a saucepan with water, and bring to a boil. Place tomatoes in boiling water, and cook for 3 to 5 minutes, or until skins begin to crack and peel. Remove from water, cool, and peel.
- Puree tomatoes with ginger and garlic in a food processor or blender.
- Place tomato mixture, sugar, vinegar, onions, and golden raisins in a large saucepan. Season with mixed spice, chili powder, paprika, and curry paste. Simmer over medium heat until thick. Refrigerate until ready to use.
