SMOKED SALMON APPETIZER CREPES



Smoked Salmon Appetizer Crepes image

A creamy filling featuring smoked salmon and fresh chives is tucked inside golden, tender crepes. A splash of brandy adds impeccable flavor. Folded into quarters and cut in half, the cute nibbles are never passed up.-Karen Sue Garback-Pristera, Albany, New York

Number Of Ingredients 12

1 cup 2% milk
2 eggs
2 egg yolks
2 tablespoons butter, melted
2 tablespoons brandy or unsweetened apple juice
1 cup all-purpose flour
1/2 teaspoon salt
FILLING:
2 packages (3 ounces each) cream cheese, softened
3 tablespoons heavy whipping cream
4 teaspoons minced chives
1 package (4 ounces) smoked salmon or lox

Steps:

  • In a small bowl, whisk the first five ingredients. Combine flour and salt; add to egg mixture and mix well. Refrigerate for 1 hour., Heat a lightly greased 8-in. nonstick skillet over medium heat; pour 3 tablespoons batter into the center of skillet. Lift and tilt pan to coat bottom evenly. Cook until top appears dry; turn and cook 15-20 seconds longer. , Remove to a wire rack. Repeat with remaining batter, greasing skillet as needed. When cool, stack crepes with waxed paper or paper towels in between., For filling, in a large bowl, beat the cream cheese, cream and chives until fluffy. Stir in salmon., To serve, spread each crepe with about 2 tablespoons filling. Fold the crepes into quarters; cut each folded crepe into two wedges.

This one is requested again and again! You can use any of the good Italian hard cheeses, or a mixture of Parmesan, Asiago, Romano, etc.

Number Of Ingredients 10

6 ounces packaged smoked salmon
1 cup sour cream (light is ok)
8 ounces cream cheese, softened
1 tablespoon drained capers
1/2 cup freshly grated good parmesan cheese
1/2 teaspoon cavender's seasoning
1 cup roughly chopped mushroom
1/4 cup chopped sweet onion
1/8 cup tawny port
1 tablespoon olive oil or 1 tablespoon butter

Steps:

  • Heat oil in saute pan, then add butter to melt. Saute onions and mushrooms until nearly all liquid has evaporated. Away from heat, add port. Return to medium high heat and continue sauteing until liquid has nearly evaported. Set aside.
  • In large bowl, break up smoked salmon into small uniform pieces. Mix together sour cream & cream cheese until smooth, then add to salmon. Add remaining ingredients along with onion-mushroom mixture, blend well.
  • Spread mixture into lightly oiled baking dish (I use a 10" round ceramic bake & serve) and bake at 375 degrees for approximately 25-30 minutes, until bubbly and light golden in color.
  • I serve this warm or at room temperature with thin baguette slices which have been spread lightly with garlic-infused olive oil then toasted & sprinkled with just a bit of kosher salt!

12 ounces reduced-fat cream cheese, cubed
1/3 cup fat-free sour cream
4 ounces smoked salmon or lox
2 tablespoons capers, drained
3 green onions, chopped (white parts only)
1 tablespoon dried thyme
1 tablespoon lemon juice
1/4 teaspoon hot pepper sauce
1/8 teaspoon pepper
1 tablespoon minced chives
Assorted fresh vegetables or assorted crackers

Steps:

  • Place the first nine ingredients in a food processor; cover and process until smooth. Chill until serving. Sprinkle with chives; serve with vegetables.

Number Of Ingredients 12

3 tablespoons dry bread crumbs
5 tablespoons grated Parmesan cheese, divided
1/2 cup chopped onion
1/2 cup chopped green pepper
3 tablespoons butter
4 packages (three 8 ounces, one 3 ounces) cream cheese, softened
1/2 cup heavy whipping cream
1/4 teaspoon pepper
4 eggs
5 ounces smoked salmon, diced
1/2 cup shredded Swiss cheese
Assorted crackers

Steps:

  • Grease the bottom and sides of a 9-in. springform pan. Combine the bread crumbs and 2 tablespoons Parmesan cheese; sprinkle into pan, coating bottom and sides. Set aside., In a skillet, saute onion and green pepper in butter until tender; set aside. In a bowl, beat cream cheese until fluffy. Beat in the cream, pepper and remaining Parmesan cheese. add eggs; beat on low speed just until combined. Fold in the onion mixture, salmon and Swiss cheese., Wrap a double thickness of heavy-duty foil around bottom of prepared pan. Pour salmon mixture into pan. Place in a large baking pan. Fill larger pan with hot water to a depth of 1-1/2 in. Bake at 325° for 35-40 minutes or until center is almost set. Cool on a wire rack for 1 hour. Refrigerate overnight., Remove foil and sides of pan. Serve with crackers.
