A very easy pineapple cake with a cream cheese frosting.

2 cups all-purpose flour
2 cups white sugar
2 eggs
2 teaspoons baking soda
1 teaspoon vanilla extract
1 (20 ounce) can crushed pineapple with juice
1 (8 ounce) package cream cheese
½ cup butter
1 ½ cups confectioners' sugar
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 baking dish.
  • In a large bowl, mix together the flour, sugar and baking soda. Make a well in the center and add the eggs, vanilla and crushed pineapple, with liquid from can. Mix well to blend.
  • Bake for 45 minutes, or until a toothpick inserted into cake comes out clean.
  • To make the frosting: in a medium bowl, combine cream cheese, butter, confectioners sugar and 1 teaspoon of vanilla. Beat until creamy. Spread on warm cake.

5 individual cream-filled sponge cakes, split in half lengthwise or 7 slices pound cake (about 3/4 inch thick)
1 can (20 ounces) crushed pineapple, drained
1-1/2 cups cold milk
1 package (3.4 ounces) instant vanilla pudding mix
2 cups whipped topping, divided
1/2 cup chopped walnuts

Steps:

  • Place cake in an ungreased 11x7-in. dish. Top with pineapple; cover and set aside. , In a bowl, beat milk and pudding mix until smooth. Fold in 1/2 cup whipped topping; pour over pineapple. Spread remaining whipped topping over pudding. Sprinkle with nuts. Chill until serving.

1 ½ cups milk
½ cup orange juice
4 large eggs
3 tablespoons unsalted butter, melted
1 teaspoon vanilla extract
1 ½ cups all-purpose flour
1 tablespoon white sugar
1 tablespoon grated orange zest
½ teaspoon salt
1 pint heavy cream
¼ cup white sugar
1 (3.4 ounce) package instant vanilla pudding mix
1 (8 ounce) can crushed pineapple, drained

Steps:

  • Add crepe ingredients to a blender in the following order: milk, orange juice, eggs, melted butter, vanilla, flour, sugar, orange zest, and salt. Blend until smooth, 15 to 20 seconds.
  • Refrigerate batter for at least 30 minutes, up to overnight.
  • Preheat a nonstick 8-inch pan over medium heat. Add 1/4 cup batter to the hot pan. Immediately move the pan from side to side to form batter into an even circle. Cook for 1 to 2 minutes per side. Remove to a plate and repeat to cook remaining crepes.
  • Whip cream and sugar for filling with an electric mixer until stiff peaks form. Add instant pudding mix and blend until well combined. Mix in drained pineapple.
  • Assemble cake by placing one crepe on a serving plate. Use a spoon to spread 1 tablespoon filling into a thin layer over the crepe. Continue layers with remaining crepes and filling.

1 (15 ounce) can crushed pineapple, juice reseved
1/2 cup mayonnaise
12 ounces Cool Whip, thawed
2 (3 ounce) packages instant vanilla pudding

Steps:

  • Preheat oven to 350 degrees.
  • Combine cake mix, eggs, oranges, crushed pineapple and mayonnaise.
  • Beat for 5 minutes or until blended.
  • Pour into a 9x13 pan that has been greased and floured.
