- Preheat a grill pan over medium-high heat.
- Sprinkle the shrimp in a bowl with the oregano, 1 tablespoon olive oil, 1/2 teaspoon salt and a pinch of pepper.
- Heat a skillet over medium-high heat, then add the butter and let melt. Add the flour and cook, 1 minute. Add the garlic and continue to cook, whisking, 1 minute more. Whisk in the milk and cook until very thick, 2 to 3 minutes. Stir in 1/4 cup Parmesan and remove from the heat. Season with a pinch of salt and pepper.
- Preheat the broiler to high.
- Roll out the pizza dough on a lightly-floured work surface into two 10-inch ovals. Brush the grill pan with the remaining tablespoon olive oil. Grill the dough on both sides until there are grill marks, 2 to 3 minutes per side. Remove the crusts to a sheet tray. Add the shrimp to the grill pan and grill on both sides until fully cooked, pink and opaque, about 4 minutes total. Spread the white sauce on the dough in an even layer. Scatter the shrimp over the sauce. Sprinkle with the mozzarella and the remaining 1/4 cup Parmesan. Place under the broiler until the cheese is melted and bubbly, keeping a close eye so it doesn't burn, 2 to 7 minutes. Sprinkle the red pepper flakes and parsley on top before serving.

- For white sauce, in a small nonstick saucepan, melt butter. Stir in the flour, mustard, cayenne and salt until smooth; gradually add milk. - Preheat oven to 450ºF. Transfer dough to pizza pan. Cover bottom with mozzarella cheese. Place evenly crab meat, prawns and scallops on top. Sprinkle vegetable mixture and then ladle Mornay sauce over. Sprinkle parmesan cheese and some hot paprika.
- Transfer to the preheated oven and bake for 22 minutes or until seafood are cooked. Let it sits for 15 minutes before slicing.

I adapted this rich treat from a friend's seafood enchilada dish. The thick creamy cheese sauce is an ideal match for the scallops, shrimp and imitation crabmeat. Plus, it's special enough for guests and can be made in a hurry.

- Prepare pizza dough according to package directions. Press onto a lightly greased 12-in. pizza pan; build up edges slightly. Prick dough thoroughly with a fork. Bake at 400° for 5-6 minutes or until crust is firm and begins to brown., Meanwhile, in a large saucepan, melt 2 tablespoons butter over medium heat. Stir in flour until smooth. Gradually stir in milk and broth. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat. Stir in Monterey Jack and Swiss cheeses until melted. Remove from the heat., In a large skillet, melt the remaining butter over medium heat. Add scallops; cook and stir for 3-4 minutes or until firm and opaque. Stir in the shrimp, crab and 3 tablespoons cheese sauce. Remove from the heat., Spread remaining cheese sauce over the crust. Top with the seafood mixture; sprinkle with mozzarella cheese and paprika if desired. Bake for 13-16 minutes or until golden brown. Let stand for 5-10 minutes before cutting.

- Add toppings to pizza dough and bake in the lowest part of the oven for approximately 15 to 20 minutes or until dough is cooked through and golden.
- In a measuring cup, combine water and sugar. Dissolve dry yeast in warm water mixture. Set aside for about 5 minutes, allowing yeast to become active.
- In a large mixing bowl, combine 2 cups of flour and salt. Make a depression in the flour mixture and add oil and foamy yeast mixture. Mix dough ingredients until they stay together. (Alternatively, place dry ingredients in the bowl of a food processor and pulse a few times. Add oil and yeast mixture and pulse again until dough begins to form a ball.) Turn out onto a floured surface and knead for 8 to 10 minutes. If the dough appears wet or sticky, add flour, a little at a time, to achieve a smooth consistency.
- Oil the inside of a clean dry bowl. Place the ball of dough in the bowl and roll it around so that it is covered with a layer of oil. Cover the dough with a towel and allow it to rise for about 1 1/2 hours in a warm area free of drafts.
- Preheat oven to 450 degrees F as you begin to roll out dough.
- After the dough has risen, punch it down and place on a floured surface. Roll out or press out to desired shape and place on hot stone or baking sheet.
SEAFOOD PIZZA
This was created to mimic the wonderful seafood pizza we used to enjoy at Pizzeria Uno in Cincinnati Ohio. It's especially easy with a boboli crust but making your own crust may taste better. I recommend using the fake crab rather than canned, but fresh crab would be best. It's rich and delicious. I love to dip it in cocktail sauce. YUMMY!!

- Add shrimp and crabmeat, mixing well with garlic and olive oil.

SAVORY BUTTER CHICKEN PIZZA
Marinated chicken thighs are simmered in a homemade butter sauce and baked atop naan for a "pizza" version of the favorite Indian dish.

- Cut chicken into bite-sized pieces. Combine yogurt, ginger paste, garlic paste, garam masala, cumin, turmeric, chili powder, salt, and lemon juice for marinade in a large glass or ceramic bowl. Mix ingredients together, then add chicken and toss to combine. Cover the bowl and refrigerate for at least 30 minutes, or up to 24 hours.
- Heat butter for sauce in a saucepan over medium-high heat. Add sliced onions and cook until translucent, about 5 minutes. Add tomatoes, chicken stock, ginger paste, garlic paste, cumin, chili powder, fenugreek, coriander, salt, and jalapeno. Stir in heavy cream and garam masala. Reduce heat and let simmer.
- Meanwhile, remove chicken from marinade and cook in a grill pan over medium-high heat until about 75% done, 3 to 5 minutes, flipping halfway though.
- Use an immersion blender or electric blender to puree the sauce to desired consistency. Add chicken to the sauce and continue to simmer until chicken is cooked through and flavors have melded, about 10 more minutes.
- While sauce simmers, preheat the oven to 350 degrees F (175 degrees C). Drizzle naan breads with olive oil.
- Bake naan in the preheated oven for 15 minutes.
- While naan is baking, remove sauce from heat and let cool to room temperature.
- Remove naan from the oven and cover with a layer of butter sauce. Top with some of the paneer and jalapenos; add chunks of butter chicken, cilantro, and more paneer cheese. Reserve remaining paneer for topping after baking.
- Return to the oven and bake for 10 minutes. Remove and sprinkle with remaining paneer and cilantro. Serve.
