DELICIOUS SALMON BURGERS WITH GUACAMOLE RECIPE



Delicious Salmon Burgers With Guacamole Recipe image

For a quick bite on the go, these salmon burgers are perfect enough to eat on their own. However, when dressed with the guacamole, the flavors will explode in your mouth. Perfect for a night that calls for an easy quick dinner.

2 14 oz. cans Pink Salmon (1 drained )
3 large eggs (beaten)
1 tbsp. garlic powder
1 tbsp. dried or chopped fresh parsley
1 tsp. rosemary leaves (dried)
1/2 cup all-purpose flour
1 tbsp. old bay seasoning
1 tbsp. Dijon mustard
olive oil (for frying, 1 tbsp at a time)
1 avocado
Salt and pepper to taste
1 tsp tabasco sauce
1/2 tbsp. Apple Cider Vinegar
1 tsp. Extra Virgin Olive Oil

Steps:

  • Drain one canned salmon and add it to a large bowl. Next, add the other canned salmon with the juice to the salmon in the bowl. Use a potato masher to mash the salmon. Add the eggs, garlic powder, parsley and rosemary, and flour. Mass and mix well. Then add the old bay seasoning, and Dijon mustard. Mix well to combine. Heat a nonstick skillet and add the 2 tbsp. olive oil. Use a measuring cup (1/2 cup) to add the salmon mixture to the skillet. Use a spatula to lightly flatten the salmon. Cook for 7 minutes on both sides (14 minutes or up to 20 minutes total). Remove from heat and place on a paper toweled plate.
  • In a small bowl, gently smash the avocado with a fork. Then add the salt and pepper, Tabasco sauce, apple cider vinegar, and olive oil. Mix well. Serve with salmon burgers.

1/2 lb salmon, skinless filet
1 Tbsp green peppers, diced
1 Tbsp red peppers, diced
2 clove garlic, smashed
1 egg, slighty beaten
1/4 c panko bread crumbs
1 Tbsp parsley, fresh chopped
1 tsp onion powder
1 tsp soy sauce
1 Tbsp olive oil

Steps:

  • 1. In a food processor pulse the salmon filet a few pulses.
  • 2. in a bowl combine all other ingredients.
  • 3. then gently fold in the salmon
  • 4. refrigerate at least 30 minutes.
  • 5. form patties and fry in olive oil 2 mins per side.

2 1/2 lbs fresh salmon fillets, skinned
1 cup seasoned breadcrumbs
1 bunch minced fresh onion
1 tablespoon dijon-style mustard
2 teaspoons prepared horseradish
2 eggs, lightly beaten
1 tablespoon fresh rosemary
3 tablespoons butter, melted
8 onion rolls
shredded lettuce (for topping)
sliced tomatoes (for topping)

Steps:

  • Prepare salmon by cutting into strips, then chopping or shredding salmon, being careful to remove any bones.
  • In a large bowl, combine salmon, breadcrumbs, onions, mustard, horseradish, eggs, rosemary, salt, and pepper to taste.
  • Chill for 30 minutes.
  • Prepare grill for medium-high heat.
  • Form salmon mixture into 8 patties, and lightly coat each patty with butter.
  • Cook 4-5 minutes on each side.
  • Place patties on rolls, and top with lettuce and tomato.

  • Cut the raw salmon into chunks. Add it to a food processor with parsley or cilantro, capers, onion powder and kosher salt. Pulse 8 to 10 times until roughly chopped; be careful not to over-process. (Alternatively, chop everything with a large chef’s knife until it has a uniformly roughly chopped texture.) Remove blade and stir in the panko, Dijon mustard and mayonnaise (you can do this in either the bowl of the food processor or transfer to a bowl).
  • Form the dough into 4 burger shapes that are about 3/4 inch thick. Refrigerate 15 minutes to firm up the texture (or up to 24 hours). While the burgers rest, make the Remoulade Sauce.
  • When ready to cook, heat the olive oil in skillet over medium high heat. Add the burgers and cook for 4 to 5 minutes until browned, then flip and cook another 4 to 5 minutes or until the inside registers 130 degrees Fahrenheit on a food thermometer. You can also grill the burgers on medium high heat for the same amount of time.
  • Serve on a bun garnished lettuce, tomato, red onion, and Remoulade Sauce or other salmon burger sauce. Make ahead and storage: Store refrigerated up to 2 days, or wrap in freezer safe wrapping and freeze up to 3 months. Allow to defrost in the refrigerator the night before cooking.
