Steps:
- Preheat the oven to 425°F. Grease a large baking sheet with cooking spray.
- Slice the onions into 1/2-inch wide rings then place the rings in a bowl of water.
- In a medium bowl, whisk together the flour, 1 teaspoon salt and 1/4 teaspoon pepper. In a second medium bowl, whisk together the egg whites and the mayonnaise. Add the breadcrumbs to a third medium bowl.
- Remove each onion ring from the water, shaking off any excess and then placing it immediately into the flour, tossing until it's thoroughly coated, then dip the onion ring into the egg white mixture until it's thoroughly coated and then into the breadcrumbs, pressing them firmly onto all sides of the onion ring. Place the onion ring on the prepared baking sheet and repeat the coating process with the remaining onion rings.
- Throughly spray the onion rings with cooking spray (this is optional, but it helps them brown more evenly). Bake the onion rings for 10 minutes then flip them once and bake an additional 5 minutes until they're golden brown and crispy. Serve immediately with your favorite dipping sauce.

Steps:
- Heat your oven to 400 degrees. Line a baking tray with parchment paper.
- Mix together all the dry ingredients in a medium sized bowl. Mix together the wet ingredients in another bowl.
- Slice the onion to make rings that are about 3/4 of an inch wide. Peel the skin from each ring and carefully separate the rings from each other.
- One at a time, take each ring and dip it into the wet mix. Then drip it into the dry. Coat it well, but make sure to tap all the excess back into the bowl. Place the ring on the baking tray.
- When all the rings are coated, spray the rings with olive oil spray. You want to coat them, but not get too much. Flip them over and spray the other side.
- Pop them into the oven. Check them after 9 or 10 mins and flip them over. Cook for an additional 4 mins or so.
- Take them out and serve them right away.

SIMPLY THE BEST BAKED ONION RINGS!
These baked onion rings are incredible! There is no way that you feel like you are eating healthy and low fat when you eat these. This is a slight adaptation of a Yahoo Health recipe. I dip mine in ketchup but my husband is a purist who prefers his plain. And while the prep time can be a little long, make it a social time. I talk to everyone in the house while I make these, and then sit back and enjoy how great they smell as they cook!
