1 whole chicken, cut up for frying
Carolina Treet BBQ Sauce www.carolinatreet.com
Sweet Baby Ray's BBQ Sauce

Steps:

  • 1. Place chicken pieces in shallow baking pan and add about a cup of water just enough to surround the chicken and cover the bottom of the pan (this keeps it moist while baking) 2. Coat top side of each piece of chicken with "Carolina Treet" (This is a tangy cooking BBQ sauce made in Wilmington NC and found in most grocery stores in NC. The bottle has a website www.carolinatreet.com and number 1-800-616-6344 written on it) 3. Coat chicken again using Sweet Baby Ray's BBQ sauce. 4. Place the pan of chicken in the oven at 375 degrees for about an hour and fifteen minutes or until chicken is done. 5. Turn chicken half way through baking and coat the other side with the two sauces. If you see the water evaporating too quickly you can add a little more while it is cooking. I think the secret is the water in the pan keeping it moist and the combination of the two sauces.

1 pound chicken wings, cut into segments, tips removed and discarded
1 tablespoon salt
1 tablespoon freshly cracked black pepper
1/4 cup ketchup
1/2 cup red wine vinegar
1/4 teaspoon red chili flakes
1 tablespoon adobo sauce
1 teaspoon dry mustard
2 teaspoons granulated garlic
1 teaspoon sugar

Steps:

  • For the wings at home:
  • Preheat the oven to 350 degrees F.
  • Season the wings with salt and pepper. Arrange the chicken wings on a baking sheet in a single layer. Put in the preheated oven and cook for 45 minutes.
  • Remove the wings from the oven to a bowl and allow to cool. Cover and refrigerate until ready to finish at the event on the barbecue.
  • For the Carolina sauce at home:
  • Combine all of the ingredients in a resealable gallon-size plastic bag and combine well.
  • For the wings tailgaiting:
  • Preheat a grill to 350 degrees F, prepared for indirect heat. Add all the wings and cook for 10 to 15 minutes to reheat and get some grill marks, turning after 7 minutes. Remove the wings from the grill to a serving bowl. Add the sauce and toss to combine.

A friend gave me this recipe some years ago for a vinegar-based sauce with mustard seed. You can use smoked pork neck bones in place of ham hocks if available.

2 cups apple cider vinegar
1 ½ cups apple cider
1 cup dark brown sugar
1 tablespoon yellow mustard seed
2 tablespoons Dijon mustard
½ cup tomato paste
¼ teaspoon salt
¼ teaspoon fresh ground black pepper
2 smoked pork neck bones

Steps:

  • Combine the cider vinegar, apple cider, brown sugar, mustard seed, Dijon mustard, tomato paste, salt, black pepper, and neck bones in a heavy-bottomed saucepan over medium heat; simmer until the sauce thickens, 30 to 40 minutes. Skim any foam from the surface of the liquid and discard. Remove and discard the neck bones. Cool the sauce to room temperature or use immediately.

3/4 lb. Yukon gold potatoes (about 6), cut into 1/2-inch chunks
1 cup HEINZ BBQ Sauce Carolina Tangy Vinegar Style, divided
1 lb. boneless skinless chicken thighs (about 6)
2 ears corn on the cob, husks and silk removed
1/2 lb. fresh green beans, trimmed, cut in half
3 Tbsp. butter, melted
1/2 tsp. onion powder
1/4 tsp. garlic powder

Steps:

  • Place potatoes in microwaveable bowl; cover with waxed paper. Microwave on HIGH 5 min.; drain. Cool completely.
  • Heat oven to 425°F. Cover rimmed baking sheet with foil.
  • Add 1/4 cup barbecue sauce to potatoes; mix lightly. Spoon onto center of prepared baking sheet.
  • Toss chicken with 1/2 cup of the remaining barbecue sauce; place next to potatoes on one side of baking sheet.
  • Cut each ear of corn into 4 pieces; place in large bowl. Add remaining ingredients; mix lightly. Spoon onto other side of potatoes.
  • Bake 25 to 30 min. or until chicken is done (165°F).
  • Brush chicken with remaining barbecue sauce. Serve with vegetables.
