2 to 3 Romaine lettuce hearts
2 to 3 medium heads raddichio
1 large head cabbage, shredded
2 teaspoons fennel seeds
3 tablespoons honey
3 tablespoons Champagne vinegar
1/2 cup extra-virgin olive oil
Gray salt and freshly ground black pepper
1 bunch watercress, trimmed of large stems

Steps:

  • Put Romaine hearts and radicchio in a bowl of ice water, soak for 20 minutes, and drain. Add more fresh water and soak for an additional 20 minutes (this removes bitterness). Drain, dry and set aside.
  • For the dressing:
  • Place the fennel seeds in a small saute pan over low heat. Toast, tossing occasionally, about 2 to 3 minutes, or until lightly browned. Crush the toasted seeds in a mortar and pestle or seal in a plastic bag and roll with a rolling pin.
  • In a saucepan, place the honey, champagne vinegar and toasted fennel seeds. Bring to a boil, stirring well. Remove from heat. Whisk in olive oil and season with salt and pepper.
  • Place the radicchio, cabbage and watercress into a bowl. Add dressing while warm and toss well. Serve immediately.

SAUTEED RADISHES AND WATERCRESS

4 bunches radishes, quartered, leaving a bit of the greens on top for decoration
2 1/2 tablespoons unsalted butter
1 teaspoon salt (preferably sea salt)
2 garlic cloves, minced
4 bunches watercress, coarse stems discarded and watercress rinsed, but not spun dry (about 10 cups)

Steps:

  • Trim radishes and cut lengthwise into 1/2-inch wedges.
  • Heat 1 1/2 tablespoons butter in a 12-inch heavy skillet over moderately high heat until foam subsides, then saute radish wedges with salt, stirring, until crisp-tender, about 12 minutes. Transfer to a platter and keep warm, loosely covered.
  • Saute garlic in remaining tablespoon butter in skillet over moderately high heat, stirring, until fragrant, about 30 seconds. Add watercress and saute, covered, until wilted, about 2 to 3 minutes. Return radish wedges to skillet to reheat quickly and serve.

4 tablespoons butter
3/4 pound watercress, trimmed of very tough stems, washed well and dried
1 medium-small head radicchio, washed well, dried and separated into leaves
Pepper vinegar (to make it, infuse 1/2 cup white-wine vinegar with 1 small whole dried red pepper or 2 teaspoons dried red-pepper flakes for at least 8 hours; strain into clean bottle and cap tightly.)
Salt and freshly ground pepper to taste

Steps:

  • Heat the butter in a large skillet over medium-low heat. Add the watercress and radicchio and toss to coat with butter. Cover and cook, tossing once or twice, for four to five minutes or until wilted but crisp-tender. Serve hot, letting each guest sprinkle pepper vinegar and salt and pepper over his or her serving.

WATERCRESS AND RADICCHIO SALAD WITH BARBECUED CHICKEN BREAST



Watercress and Radicchio Salad with Barbecued Chicken Breast image

1 tablespoon Dijon mustard
1 teaspoon finely chopped fresh tarragon leaves
Pinch sugar
1 tablespoon sherry wine vinegar
Salt and freshly ground black pepper
1 cup extra-virgin olive oil
15 cloves garlic, peeled, plus 1 tablespoon roughly chopped garlic
3 small whole chicken breasts, boneless, skin-on
1/4 cup fresh Italian parsley leaves
3 tablespoons extra-virgin olive oil, plus 3 tablespoons
1 shallot, finely chopped
1/2 pound mushrooms, such as shiitake, oyster, or cremini, cleaned and quartered
3 bunches watercress, cleaned
1 head radicchio, nice outer leaves saved whole, rest chopped into 1/2-inch pieces

Steps:

  • Make the mustard vinaigrette: In a bowl, combine mustard, tarragon, sugar, vinegar, salt, and pepper and whisk well. While whisking, slowly drizzle in the oil. Drizzle until the oil is incorporated into the dressing. Season, to taste, with salt and pepper. Set aside.
  • Preheat a grill or grill pan.
  • Bring a small saucepan of water to a boil. Add the whole garlic cloves and blanch for 1 1/2 minutes. Drain and thinly slice. Set aside.
  • Using your fingers, gently separate the skin from the chicken breasts, making a pocket. Be sure to keep the skin attached to the chicken breast. Place a few blanched garlic slices and parsley leaves under the skin of the chicken breast. Pull the skin back over the breasts. Season the outside well with salt and pepper. Drizzle the breasts with 3 tablespoons of the olive oil.
  • Place the chicken breasts on the grill, skin-side down, and cook until golden brown, about 6 minutes. Turn the chicken and cook until cooked through and the juices run clear, about another 6 to 8 minutes depending on the thickness of the chicken breasts. Remove and set aside.
  • Heat a saute pan over medium-high heat. Add the remaining 3 tablespoons olive oil and heat. Add the shallots and the chopped garlic and saute 1 minute. Add the mushrooms and saute until golden brown and cooked, about 8 minutes. Remove from the heat and set aside.
  • Slice each chicken breast into 4 slices on the diagonal.
  • Combine the watercress and the chopped radicchio in a large bowl. Toss with desired amount of dressing. Place the whole radicchio leaves around the edges of 6 plates. Pile the watercress mixture in the center. Divide the mushrooms among the plates. Top each plate with the sliced chicken breast. Drizzle with a little more dressing.

  • In a large heavy skillet sauté the garlic in the oil over moderately high heat for 30 seconds, or until it is fragrant, add the watercress, and stir the mixture until it is combined well. Sauté the watercress, covered, for 2 to 3 minutes, or until it is just wilted, and season it with salt and pepper.

2 pounds rainbow chard (3 to 4 medium bunches)
2 tablespoons (1/4 stick) butter
2 tablespoons olive oil
1 medium onion, cut into 3/4-inch pieces
4 garlic cloves, minced
1 pound radicchio (about 2 large heads), cored, cut into 1-inch wedges, leaves separated (about 8 cups)
2 tablespoons (or more) red wine vinegar
3 tablespoons currants (optional)
1/4 cup pine nuts, toasted

Steps:

  • Cut ribs from chard; chop crosswise into 1-inch pieces (about 4 cups). Slice leaves crosswise into 1-inch strips (about 16 cups).
  • Melt butter with oil in large pot over medium heat. Add onion and garlic; cook until onion is tender, stirring occasionally, about 4 minutes. Add chard ribs; cover and cook until tender, about 6 minutes. Working in batches, add chard leaves and radicchio, stirring until wilted. Cook uncovered until vegetables are tender, stirring often, 8 to 10 minutes. Stir in 2 tablespoons vinegar and currants, if desired. Season with salt and pepper and more vinegar, if desired.
  • Using slotted spoon, transfer chard mixture to bowl. Sprinkle pine nuts over.
