This sauteed shrimp recipe comes out juicy and seasoned to perfection in less than 10 minutes! Here are the secrets to how to saute shrimp.

1 1/2 pounds medium shrimp, deveined (tail on or peeled)
3/4 teaspoon kosher salt
3/4 teaspoon smoked paprika (or substitute standard paprika)
3/4 teaspoon garlic powder
3/4 teaspoon onion powder
3/4 teaspoon cumin
3 tablespoons butter or olive oil
3 lemon wedges
Fresh cilantro or parsley, for garnish

Steps:

  • Thaw the shrimp, if frozen. Pat the shrimp dry. In a medium bowl, mix the shrimp with the salt, smoked paprika, garlic powder, onion powder, and cumin.
  • In a large skillet, heat the butter on medium high heat. Add the shrimp and cook for 1 to 2 minutes per side until just opaque and cooked through, turning them with tongs.
  • Spritz with juice of the lemon wedges and serve immediately.

1/2 cup whipping cream
1/3 cup bottled clam juice
2 tablespoons Dijon mustard
3 tablespoons butter
3 large garlic cloves, chopped
1 1/4 pounds uncooked large shrimp
1/4 cup finely chopped fresh chives or green onion tops
Cooked white rice

Steps:

  • Whisk cream, clam juice and mustard in small bowl to blend. Melt butter in heavy large skillet over medium-high heat. Add garlic and stir 1 minute. Add shrimp and chives and sauté 2 minutes. Add cream mixture. Simmer until shrimp are just opaque in center and sauce thickens slightly, about 2 minutes. Spoon rice onto plates. Top with shrimp and sauce.

I like coconut oil for sautéing vegetables and aromatics, especially onions. They absorb the sweetness of the oil and pass that lovely nuance on to the whole dish. In one memorable meal, I sautéed scallions in coconut oil, which managed to perfume an entire pan of plump, juicy shrimp spiked with garlic, ginger and coriander.

2 1/2 tablespoons refined coconut oil
6 scallions, white parts thinly sliced; dark green parts sliced and reserved
1 tablespoon finely chopped peeled ginger
2 garlic cloves, finely chopped
1/2 teaspoon ground coriander
1 pound large shrimp, shelled
1/2 teaspoon kosher salt
1 teaspoon fresh lemon juice
1/2 teaspoon ground black pepper
Lemon wedges, for serving

Steps:

  • Heat a large skillet over medium heat. Melt the coconut oil in the pan. Add the white scallion slices, ginger and garlic. Cook, stirring, until fragrant, about 30 seconds. Add the coriander and cook 30 seconds more.
  • Add the shrimp and salt. Cook, tossing occasionally, until shrimp are opaque, about 2 to 3 minutes. Stir in the green scallion pieces and cook until just wilted, 10 to 15 seconds. Season with lemon juice and black pepper. Serve with lemon wedges.

1/4 cup finely chopped onion
2 garlic cloves, minced
2 teaspoons olive oil
1/4 cup white wine or apple juice
2 tablespoons Dijon mustard
1/8 teaspoon pepper
3/4 pound uncooked medium shrimp, peeled and deveined
1 small tomato, seeded and diced

Steps:

  • In a nonstick skillet, saute onion and garlic in oil until tender. Stir in the wine or apple juice, mustard and pepper. Bring to a boil. Reduce heat to medium-low. Add shrimp; cook and stir until shrimp turn pink, about 5 minutes. Stir in tomato; heat through.

1 lb. Medium shrimp (deveined)
1 tbs. black mustard seeds
(if unavailable use jar country mustard but remove vinegar by washing mustard in a seive under slow running water)
1 16 oz. can of coconut milk (unsweetened)
1/2 turmeric powder for color(optional)
1/2 red hot pepper powder
1 medium onion (finely chopped)
1 small tomato (finely chopped for taste and color)
2 cloves of garlic (finely chopped)
2 tbs cooking oil
2 hot green chilli pepper (optional)

Steps:

  • Prepare the mustard by grinding the seeds in a blender with small amounts of the coconut milk to a paste consistency. Reserve the rest of the coconut milk. Next, heat the oil in a saucepan at medium low heat and saute the onion,garlic,tomato until onion and garlic is translucent and tamato semi-dissolved. Do not brown. Add the turmeric, hot pepper powder, and mustard paste. Cook for 2 mins. Now add the shrimp, coating it with the paste and continue to cook until the shrimp turn pink. Do not overcook. Remove the shrimp with tongs shaking off/leaving as much of the paste as possible in the saucepan. Now, add the can of coconut milk into the saucepan with the paste and slowly bring to boil. Lower heat to simmer and add back the shrimp (and chopped hot green pepper). Simmer for 2 mins.

2 tablespoons unsalted butter
1 1/2 pounds large shrimp, peeled and deveined (tails removed)
1 garlic clove, minced
2 tablespoons minced shallot
1 tablespoon, plus 1 teaspoon all-purpose flour (spooned and leveled)
3/4 cup dry white wine
3/4 cup canned reduced-sodium chicken broth
2 tablespoons Dijon mustard
Coarse salt and ground pepper
Cooked white rice, for serving (optional)
Fresh thyme leaves, for garnish (optional)

Steps:

  • In a large skillet, melt 1 tablespoon butter over medium-high. Add shrimp and garlic; cook, tossing, until shrimp starts to turn pink on the outside but is still translucent on the inside, about 2 minutes (shrimp will finish cooking in step 3). Transfer to a plate; set aside.
  • Reduce heat to medium. In same skillet, melt remaining butter. Add shallot; cook until softened, 1 to 2 minutes. Add flour; cook 30 seconds, whisking constantly. Gradually add wine, broth, and mustard, whisking constantly. Simmer until it is as thick as heavy cream, about 5 minutes.
  • Using a fine-mesh sieve, strain sauce; discard solids. Return sauce and shrimp to skillet. Bring to a simmer, and cook until shrimp are opaque throughout, about 2 minutes; season with salt and pepper. If desired, serve over rice and garnish with thyme leaves.

1/4 cup orange marmalade, plus
2 tablespoons orange marmalade
1/4 cup orange juice, plus
2 tablespoons orange juice

Steps:

  • Peel and devein the shrimp leaving the tails intact. Combine flour, salt, pepper and paprika in a medium bowl, stirring well.
  • Make a well in center of the flour mixture. Gradually add beer stirring until batter is smooth.
  • Dip shrimp in batter then dredge in the coconut. Fry shrimp in hot oil until lightly browned.
  • Drain in paper towels.
  • Orange Mustard Sauce: Combine marmalade, juice and mustard in a small bowl, stirring well. Makes 1 cup.
