2 cups crushed gingersnap cookies (about 45 cookies)
1/2 cup English toffee bits or almond brickle chips
2 tablespoons butter, melted
FILLING:
2 packages (8 ounces each) cream cheese, softened
1-1/2 cups sour cream
1 cup sugar
1/4 cup all-purpose flour
2 teaspoons vanilla extract
3 large eggs, lightly beaten
TOPPING:
3/4 cup caramel ice cream topping
1/2 cup English toffee bits or almond brickle chips

Steps:

  • In a small bowl, combine cookie crumbs and toffee bits; stir in butter. Press onto the bottom and 2 in. up the sides of an ungreased 9-in. springform pan., In a large bowl, beat the cream cheese, sour cream, sugar, flour and vanilla until smooth. Add eggs; beat on low speed just until combined. Pour into crust. Place pan on a baking sheet., Bake at 350° for 45-50 minutes or until center is almost set. Cool on a wire rack for 10 minutes. Carefully run a knife around edge of pan to loosen; cool for 1 hour. Cover and chill overnight. Combine topping ingredients; serve with cheesecake. Refrigerate leftovers.

2-1/2 packages (6.70 ounces each) Girl Scout Toffee-tastic™, divided
1/4 cup butter, melted
4 packages (8 ounces each) full-fat cream cheese, softened
1 cup sugar
1/4 cup cornstarch
2 large eggs
3/4 cup heavy whipping cream
1 tablespoon vanilla extract
1 cup brickle toffee bits, divided
Caramel or chocolate ice cream topping, optional

Steps:

  • Preheat oven to 350°. Crush 2 boxes of cookies in a food processor or blender. Add melted butter; press onto bottom of a greased 9-in. springform pan. Place on a 15x10-in. rimmed pan. Bake 10 minutes; cool on a wire rack., Meanwhile, beat cream cheese until creamy. Combine sugar and cornstarch; on low speed, gradually beat into cream cheese until smooth. Add eggs, one at a time, blending well after each addition. Beat in whipping cream and vanilla just until combined (do not overbeat)., Chop remaining cookies into bite-size pieces. Fold cookie pieces and 1/2 cup toffee bits into cream cheese mixture. Pour over cooled crust; return springform to rimmed pan., Bake cheesecake until edges are light golden and center is almost set, about 60-70 minutes. Cool on a wire rack 10 minutes. Sprinkle with remaining toffee chips. Loosen sides from pan with a knife. Cool 1 hour longer. Refrigerate overnight, covering when completely cooled., Remove rim from pan. If desired, top cheesecake with caramel or chocolate topping.

Unsalted butter, for greasing
2 pounds cream cheese, at room temperature
1 1/4 cups granulated sugar
Generous pinch kosher salt
1/2 cup sweetened condensed milk
1 1/2 cups heavy cream
1 tablespoon grated fresh ginger
1 teaspoon ground ginger
1 teaspoon vanilla extract
Zest of 2 lemons, minced, plus zest of 1 lemon plus 1 tablespoon lemon juice
6 large eggs
1/3 cup all-purpose flour
1 cup prepared lemon curd
2 tablespoons limoncello liquor
2 tablespoons sour cream
Powdered sugar, for dusting
Fresh basil, chiffonade, for garnish

Steps:

  • Preheat the oven to 400 degrees F.
  • Grease one side of 2 to 3 sheets of parchment paper. Lay them butter-side up inside a 10-inch springform pan, arranging so that they cover all sides, and crimping the edges to ensure they stay in place. Place the springform pan on a sheet tray.
  • In a mixer fitted with the paddle attachment, combine the cream cheese, granulated sugar and salt. Cream on medium-high speed until smooth, about 1 minute. Scrape down the sides.
  • Turn the mixer down to medium and add the condensed milk. Beat to combine, then scrape down the bowl. Add the heavy cream, fresh ginger, ground ginger, vanilla and minced lemon zest. Fully combine, then scrape down the sides.
  • Turn the mixer to medium-high and add the eggs one at a time, being sure that each is fully combined before adding the next.
  • Add the flour, then beat again, scraping down the sides.
  • Pour the cheesecake into the center of the springform pan and tap it lightly on the counter to remove any air bubbles.
  • Bake for 30 minutes, then rotate. Continue to bake until dark golden brown, another 30 to 35 minutes. Allow to cool to room temperature, then refrigerate until completely set, 6 hours.
  • Remove the cheesecake from the pan, then peel down the paper. (You can leave the paper in place for a rustic look.)
  • Mix together the lemon curd, limoncello, sour cream, lemon juice and remaining lemon zest in a bowl.
  • Pour evenly over the top of the cheesecake, then sprinkle with the powdered sugar and garnish with the basil. Cut into slices and serve.

BANOFFEE CHEESECAKE

Cheesecake meets banoffee pie in this creamy soft-set caramel dessert, guaranteed to impress at a dinner party or occasion

200g digestive biscuits , crushed
100g butter , melted, plus extra for frying
4 bananas , peeled and sliced
150ml double cream
3 x 280g tubs full-fat cream cheese (not low-fat - this will stop the mixture from setting properly)
85g icing sugar , sifted
1 tbsp maple syrup
300g dulce de leche or caramel sauce (we used we used Carnation Cook with Caramel)
150ml double cream (keep chilled, it whips faster)
25g dulce de leche or caramel
1 banana , cut into 8-10 slices

Steps:

  • For the base, mix the digestives with the melted butter in a bowl. Spoon the mixture into a 23cm springform cake tin and press firmly over the base with the back of a spoon. Chill in the fridge.
  • Heat a frying pan until hot and add a knob of butter and the bananas, frying for 2-3 mins until golden brown. Remove from the pan using a slotted spoon and set aside to cool.
  • Arrange the cooled bananas on top of the biscuit base. For the cheesecake, whisk the double cream using an electric whisk until softly whipped. Put the cream cheese and icing sugar in another large bowl and whisk until smooth. Make sure you don't over whisk the mixture as it will loosen and stop the cheesecake achieving a soft-set. Add the whipped cream to the cream cheese, as well as the maple syrup and the dulce de leche.
  • Spoon the sweet cream cheese filling into the cake tin, covering the bananas, and use the back of a spoon or palette knife to spread evenly. Place in the fridge for at least 4 hrs (preferably overnight) to set.
  • For the topping, whip the cream, put into a piping bag with a medium star-shaped nozzle and set aside. Melt the dulce de leche over a low heat in a small saucepan with a splash of water until it can be drizzled (dulce de leche varies, so you may need to add more water). Place in a second piping bag (or plastic bag) and snip the very end off it, to leave a tiny hole.
  • Starting from the edge of the cake, swirl the dulce de leche sauce in a circular motion around the cake. Pipe 10-12 medium-sized swirls of whipped cream around the edge of the cheesecake and rest a fresh banana slice on each. Serve immediately.

1/2 cup butter, melted

1 cup semisweet chocolate chips
1/4 cup heavy whipping cream
4 teaspoons instant coffee granules
3 packages (8 ounces each) cream cheese, softened
1-1/3 cups sugar
1-1/2 cups sour cream
1 tablespoon vanilla extract
1/8 teaspoon salt
3 large eggs, lightly beaten
4 Heath candy bars (1.4 ounces each), chopped
1 dark chocolate candy bar (1.45 ounces)

Steps:

  • Place a greased 9-in. springform pan on a double thickness of heavy-duty foil (about 18 in. square). Securely wrap foil around pan. In a small bowl, combine wafer crumbs, butter and sugar. Press onto the bottom and 1 in. up the sides of prepared pan. Place pan on a baking sheet. Bake at 350° for 10 minutes. Cool on a wire rack., In a microwave-safe bowl, melt chips and cream; stir until smooth. Stir in coffee granules until dissolved. Set aside. , In a large bowl, beat cream cheese and sugar until smooth. Beat in the sour cream, vanilla and salt; gradually beat in chocolate mixture. Add eggs; beat on low speed just until combined. Pour into crust. Place springform pan in a large baking pan; add 1-1/2 in. of hot water to larger pan., Bake at 350° for 55-65 minutes or until center is just set and top appears dull. Remove springform pan from water bath. Cool on a wire rack for 10 minutes. Sprinkle with Heath bars., Carefully run a knife around edge of pan to loosen; cool 1 hour longer. Refrigerate overnight. Chop the dark chocolate candy bar; melt in a microwave and stir until smooth. Drizzle over top of cheesecake.
