SAUTEED ONIONS AND PEPPERS



Sauteed Onions and Peppers image

6 large yellow onions
1/4 cup olive oil
2 red bell peppers, julienned
2 yellow bell peppers, julienned
2 cloves garlic, minced
1/4 cup sherry vinegar
1 tablespoon tomato puree
1/2 teaspoon red pepper flakes
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper

Steps:

  • Cut the onions in half, and then slice them into 1/8-inch-thick half-rounds. (You will have about 10 cups of onions.)
  • Heat the olive oil in a large saute pan over medium heat. Add the onions and saute for 15 to 20 minutes. Add the peppers, garlic, vinegar, tomato puree, pepper flakes, salt and pepper and continue cooking an additional 10 minutes.

2 bunches leeks
1 tablespoon olive oil
1 tablespoon butter
1 teaspoon tarragon
1/2 teaspoon ground coriander
1/2 teaspoon salt
black pepper

Steps:

  • Thinly slice leeks. Use white and light green parts of leeks. Separate rings and place in colander. Rinse well and drain well. Try to get leeks as dry as possible.
  • Heat olive oil and butter on med-high in frying pan large enough for all the leeks. Remember that they will wilt down!
  • Add leeks to frying pan. Stir until all the leeks are coated with oil and butter. At this time, add tarragon, coriander and salt and pepper.
  • Reduce heat to medium.
  • Stirring frequently, cook until leeks are close to caramelized, approximately 25 minutes.
  • Serve and enjoy.

Steps:

  • Spray large skillet with cooking spray; heat over medium heat until hot.
  • Add vegetables to skillet; spray with cooking spray.
  • Cook, covered, over medium heat until vegetables are wilted, 5-8 minutes.
  • Stir in bouquet garni and cook, covered, over medium heat until vegetables are tender. Season to taste with salt and pepper.

10 leeks (white part only) cut in 2-inch pieces, washed thoroughly
10 peppercorns
4 sprigs fresh rosemary
4 sprigs fresh thyme
1 cup water
Juice and zests of 1 lemon
Salt and freshly ground pepper

Steps:

  • In a large cast iron pan on medium heat, heat olive oil and add leeks, peppercorn, rosemary, thyme, and a pinch of salt. Cook for 5 minutes, until caramelized. Add water, zest and juice of one lemon and continue cooking for 5 minutes. Season with salt and pepper. Keep warm.

3 medium leeks
2 tablespoons butter
3 garlic cloves, smashed
4 medium parsnips
1 teaspoon salt
1/2 teaspoon pepper
1 1/2 teaspoons arrowroot
1/2 cup half-and-half or 1/2 cup light cream
1/4 cup water, as needed

Steps:

  • Clean the leeks and discard the dark green portions.
  • Cut the leeks lengthwise then into one-inch pieces.
  • Melt the butter in a medium skillet, med. heat.
  • Add the garlic and fry 'til fragrant.
  • Add leeks and fry until the leeks are tender, about 6-minutes.
  • Meanwhile, peel and chunk the parsnips into one-inch pieces.
  • Place in a steaming basket and steam 'til they are as tender as you prefer. I like them fork-tender. Drain parsnips and add to the skillet with the leeks. Add salt and pepper.
  • Gently sautee together for 5-minutes.
  • At this point you can serve it, OR continue on and cream it:.
  • In a jar with a screw top, add the half-n-half and arrowroot. Shake 'til blended.
  • Turn heat to low under the leeks and parsnips. Pour in the arrowroot mixture, stirring gently as you pour.
  • If too thick, gradually add the water (or use milk if preferred). Let simmer for a couple of minutes. Taste to adjust seasoning, probably an additional 1/2 teaspoon salt.
  • Serve warm.

  • Saute the onions until tender and starting to brown.
  • Add Mushrooms and continue cooking for apprx 3 minutes.

2 tablespoons butter

  • Combine leeks, carrots, chicken broth, butter, sugar, thyme, salt, and pepper in a skillet; bring to a boil. Reduce heat and simmer until liquid evaporates, about 15 minutes. Cook and stir mixture until leeks and carrots are lightly browned, 2 to 3 minutes.
