SAUTéED GREEN BEANS
These sauteed green beans are the best way to cook green beans. It is a quick and easy method that makes perfectly tender and delicious garlic green beans. These make the perfect side dish for dinner and can be saved an reheated for another meal.

Steps:
- Rinse and dry the green beans completely. Break or cut off the ends of each bean.
- Heat 1 tbsp of olive oil in a large skillet over medium high heat. Once heated add the green beans and cook for 6-7 minutes for thin green beans, or 8-9 minutes for thick green beans, stirring regularly until they begin to soften and brown slightly on the outside.
- Use a garlic press to press in the garlic. Then stir in the salt and pepper to taste and cook and additional 2 minutes. Remove from the heat.
- Garnish as desired and serve.

- Place beans and water in a large skillet. Bring to a boil; cook covered until beans are crisp tender, 4-6 minutes. Drain., In now empty skillet, melt butter over medium-high heat. Add beans; cook and stir until beans are tender, 1-2 minutes. Sprinkle with salt and pepper.

- Prepare an ice-water bath. Bring a large pot of salted water to a boil. Add green beans, and cook until color is set and green beans are tender, about 2 minutes. Use a slotted spoon to transfer to ice-water bath to stop cooking; drain well.
- Melt butter in a large skillet over medium heat. Add green beans and toss to coat. Season with salt and pepper. Serve immediately.
SAUTEED GREEN BEANS TWO WAYS
Depending on which roast you're making, the green beans can be sauteed with garlic and shallots to serve with the crown roast of pork or with chili garlic paste to go with the pomegranate-glazed goose.

- Fill a large bowl with ice water, and set aside. Bring a large pot of water to a boil, and add salt. Add half the beans, return to a boil, and cook until bright green and just tender, 3 to 4 minutes. Using a slotted spoon, plunge beans into ice water to stop the cooking. Transfer to paper towels to drain. Repeat with remaining green beans. (Blanched green beans can be refrigerated in an airtight container for up to 2 days.)
- For shallot-garlic green beans: Heat oil in a large saute pan over medium heat. Add shallots and garlic, and cook, stirring frequently, until soft and caramelized, 8 to 10 minutes. Add green beans, raise heat to medium-high, and cook until heated through and beginning to brown in places, 3 to 4 minutes. Season with salt. Serve immediately.
- For Asian-style green beans: Heat oil in a large saute pan over medium heat. Add green beans, and cook until heated through, about 2 minutes. Add chili paste and sugar, and stir until well coated. Season with salt. Serve immediately.

A new twist on plain old green beans! My family calls this my "secret recipe"...but I am willing to share!! These are too good and easy not to!! I started doing it this way so they would have more flavor without the water soaking up the seasoning off the beans...and it is now a frequent request for my "secret recipe green beans"!!!
