MINUTE STEAK WITH ROASTED FENNEL AND ARUGULA AND CAPER DRESSING

Minute Steak with Roasted Fennel and Arugula and Caper Dressing image

A lot of people assume that being healthy means that red meat is off the menu. But I'm delighted to say that it's very much on mine. That said, I am a stickler for ensuring that the meat we eat is of the highest quality and that it is always paired with an abundance of vegetables. Plants are always my main focus, but a little bit of good-quality meat here and there has worked best for me. I have tried being vegan and vegetarian but my health suffered during those phases. We are, after all, omnivores and so, unless you have a specific dislike of, issue with or reaction to meat, I think it's a food group that has an important role in our diet. If you like carpaccio, this recipe also works incredibly well with the beef served raw and very finely sliced.

Yield 4 servings

Number Of Ingredients 16

1 firm bulb of fennel
Olive oil
Sea salt and freshly ground black pepper
A squeeze of lemon juice
4 salted anchovies
1 tablespoon capers
1 sun-dried tomato (in olive oil)
1 small clove of garlic, peeled and crushed
4 green or Kalamata olives, pitted
1 bag (approx. 2 1/2 ounces) of arugula
1 ripe beefsteak tomato
Juice and zest of 1/2 a lemon
1 tablespoon extra-virgin olive oil
Olive oil
1/2 pound minute steak
Sea salt and freshly ground black pepper

Steps:

  • Preheat the oven to 350°F. Cut the fennel into thin wedges and place on a baking sheet. Drizzle with olive oil, season, and squeeze the lemon juice over it. Roast in the oven for 15 to 20 minutes, until softened and lightly charred, turning once during cooking.
  • Meanwhile, make the dressing by putting all the ingredients (except the olive oil) into a blender and pulsing them a few times. Slowly add the olive oil while you are pulsing, but don't overdo it, as you want to keep some texture. Taste and adjust the seasoning as necessary.
  • For the beef, heat 1 tablespoon of olive oil in a non-stick frying pan until almost smoking. Season the fillet with salt and pepper until almost smoking. Season with fillet with salt and pepper and carefully add to the hot pan. Cook for 2 minutes on each side for rare; 3-4 medium; 4-5 for well done, then transfer to a plate or board, loosely cover with foil and allow to rest for a few minutes.
  • Arrange the fennel wedges on a serving platter. Slice the beef thinly and place in and around the fennel. Drizzle the arugula dressing over the top.

SAUTéED FENNEL

Steps:

  • Cut off the leafy tops and fibrous stalks and trim off the root ends from fennel bulbs. If you want, save some of the feathery leaves to chop and use later to garnish the dish before serving. Peel away any bruised outer layers. Cut the bulbs in half and then slice fairly thin. Heat a heavy skillet over medium-high heat. Pour in enough oil to coat the bottom generously and add the cut fennel. Let the fennel brown for a few minutes undisturbed. Start tossing or stirring occasionally and continue to cook until the fennel is tender. Season with salt, fresh-ground black pepper, and the chopped fennel leaves. Finish with a squeeze of lemon juice or a pinch of dried chile flakes.

SAUTEED ARUGULA

Sauteed Arugula image

This spicy green is one of my favorites to toss on a salad, and I was craving something warm, so I decided to try sauteeing it in a healthy way--no oil! In just a couple minutes, I had a great warm topping to cover my lettuce and serve with other toppings. **Note: I am updating the recipe, as I think it deserves higher than the two stars it has gotten :( I have problems with onions (or my stomach thinks it does!), so I don't use them, but for those of you out there who want onions in the arugula, go for it! Here's a revised version of how to make the arugula, a bit more calorie-rich, but I'm sure many will find the taste improved. (Just for the record, I still like the greens without the onion and oil added, but I'm used to a blander diet.) Additional note: the original recipe, without the oil, onions and garlic, was 11 calories; I wouldn't worry about the onions and garlic, but you could definitely leave out the oil if you didn't want to add those extra calories.

Time 20m

Yield 4 serving(s)

Number Of Ingredients 8

5 ounces fresh arugula, washed and trimmed
1/4 cup reduced-sodium chicken broth
pepper
1/8 teaspoon onion powder
1/8 teaspoon garlic powder
1 1/2 teaspoons sesame oil
1/4 cup onion, chopped or sliced
1 teaspoon fresh minced garlic

Steps:

  • In frying pan, heat chicken broth and spices to boiling.
  • After bringing to a boil, add the arugula, tossing gently to cover all with the broth.
  • Let sit for a minute or two, stirring occasionally, until all leaves are wilted. (Additional broth may be needed to keep moist.).
  • I found this to be a great salad topping, or fantastic on top of lumpy mashed potatoes.
  • **For those who want a more flavor-rich side, try the following:.
  • Add 1 1/2 teaspoons sesame oil to the pan first; heat oil and cook 1/4 cup chopped (or sliced) onion and 1 teaspoons minced garlic until onions are tender. Then proceed with the broth, arugula and spices.
  • I hope this is satisfying! :).
