3 Kellogg's® Eggo® Homestyle Waffle
5 strawberries
2 canned pineapple rings, drained and cut into 12 total pieces
¾ cup frozen non-dairy whipping topping, thawed
12 slices ripe banana
2 tablespoons chopped pecans
Chocolate ice cream syrup

Steps:

  • 1.Prepare Kellogg's® Eggo® Homestyle waffles according to package directions. Cut each waffle into four triangles.
  • 2.On waffle pieces layer strawberry slices, pineapple pieces and whipped topping. Top each with one banana slice. Drizzle with chocolate syrup. Sprinkle with pecans. Serve immediately.

1 1/2 cups all-purpose flour
1/2 cup cornstarch
2 tablespoons baking powder
2 tablespoons bakers' sugar (finely ground granulated sugar)
1 1/2 teaspoons salt
1 teaspoon ground cinnamon
2 yolks
1 1/2 cups club soda
2 bananas
Vegetable oil, for deep-frying
2 cups sugar
1/4 cup water
2 tablespoons unsalted butter
1/2 cup heavy cream
Pinch kosher salt
1 pint vanilla bean ice cream
1/4 cup banana chips
1/4 cup toasted pecans

Steps:

  • Preheat your oil in a heavy-based pot for deep-frying to 365 degrees F.
  • In a large mixing bowl combine flour, cornstarch, baking powder, sugar, salt, and cinnamon. Make a well in the center and add the yolks and club soda. Using a whisk, stir from the inside working your way out, slowly incorporating the dry ingredients without forming any lumps. Peel the bananas and dip in the batter to coat well. Fry in hot oil for 4 to 5 minutes until batter is puffy and golden brown. Drain on paper towels.
  • While bananas are cooking, prepare caramel sauce. Combine the sugar and water in a large heavy saucepan over medium heat. Cook, swirling the pot around, until the mixture is a deep caramel color and looks like syrup, about 8 minutes. Add the butter then carefully pour in the cream (it will bubble up) and continue to cook for another minute. Add a pinch of salt and cool before serving.
  • To serve the banana split, cut the bananas lengthwise and top with a large scoop of vanilla bean ice cream. Pour warm caramel sauce over the top and finish with a sprinkle of banana chips and toasted pecans.

  • Mix 1 tablespoon brown sugar with 1/2 teaspoon cinnamon and a pinch of salt. Halve 4 bananas lengthwise; brush with 1 tablespoon melted butter and sprinkle with the cinnamon sugar. Wrap in foil and broil until golden, about 3 minutes. Top with frozen yogurt, toasted almonds and chopped chocolate and/or raspberries.

I believe this is an old Helen Corbitt recipe. It is an excellent, easy dessert and complements so many things.

4 large bananas (firmly ripe or slightly underripe)
2 tablespoons sugar
1 teaspoon cinnamon
1 tablespoon lemon juice
2 tablespoons unsalted butter

Steps:

  • Cut bananas crosswise into 1/4" slices.
  • Toss slices in a bowl with the sugar, cinnamon and lemon juice.
  • Heat saute pan over medium-high heat, add butter.
  • When butter is bubbly, add the bananas.
  • Holding the pan by the handle, toss the bananas every 10 seconds or so for 2-3 minutes until tender.
  • (The slices should hold their shape and be carmelized) Serve on a warm plate-- good with ice cream or angel food cake or by itself!

1/4 cup brown sugar, packed
1/4 cup raisins
1 teaspoon lemon juice
3 bananas, sliced

Steps:

  • Melt butter. Dissolve cornstarch in water. Add to skillet. Add brown sugar and raisins.
  • Boil for 2 minutes, stirring constantly.
  • Remove from heat, add lemon juice.
  • Slice bananas and stir into mixture. Serve immediately. (Do not cook the bananas.).

2 tablespoons butter
4 bananas, peeled and sliced in 1/2 crosswise and then lengthwise
1 orange, juiced
2 tablespoons sugar
Dash salt
Tangy-Sweet Cream, recipe follows
4 tablespoons sour cream
2 tablespoons light brown sugar
1 teaspoon finely grated orange zest
1/4 teaspoon ground cinnamon

Steps:

  • In a large saute pan, add the butter and melt it over medium-high heat. Add the bananas and saute until they begin to caramelize. Add the orange juice, sugar and salt and cook an additional 1 to 2 minutes. The bananas should be nicely browned, and the orange juice and sugar will have formed a glaze. (If needed, add a tablespoon of water.) Serve on a dessert plate with a tablespoon of Tangy-Sweet Cream.;
  • In a medium bowl, mix all the ingredients until creamy and smooth.

2 ounces unsweetened chocolate
4 1/2 ounces semisweet chocolate
1/4 cup light corn syrup
1/3 cup hot water
1 1/2 cups heavy cream
2 tablespoons sugar
3 banana leaves (optional)
6 bananas
1/2 cup coarse sugar
1 quart vanilla ice cream
1/2 cup salted peanuts
6 large mint sprigs

Steps:

  • Combine the 2 chocolates in the top half of a double boiler set over barely simmering water. Stir constantly until all chocolate is melted, then whisk in the corn syrup and water without removing the double boiler from the heat. Whisk until smooth and shiny. (The sauce can be made up to 24 hours in advance and refrigerated. To re-warm, stir over low heat or heat in a microwave.)
  • Whip the heavy cream and add the sugar when the cream starts to grow in volume. Continue whisking until light and fluffy.
  • Build a banana split in a tall martini glass by placing a triangle of banana leaf at the back of the glass. Cut banana in half then split them lengthwise. Dip the cut sides in coarse sugar and caramelize with a torch or place under broiler. Lay in the glass like rabbit ears. Add scoops of ice cream, then chocolate sauce, whipped cream and peanuts. Finish with a sprig of mint.

1 cup chunky peanut butter

4 tablespoons honey, eyeball it
1 teaspoon ground cinnamon
1 canister whipped cream
1 package (2-ounce pouch) chopped nut topping, available on baking aisle

Steps:

  • Peel and slice the banana down the center lengthwise and place in dessert boats or bowls.
  • Place peanut butter in a small pan and melt gently over low heat.
  • Scoop vanilla ice cream into bowls or boats on top of bananas, 2 scoops per sundae. Top 1 scoop of ice cream with melted peanut butter sauce, the other with a drizzle of honey and a sprinkle of cinnamon, use about 1 tablespoon of honey per dessert. Garnish sundaes with whipped cream and chopped nut topping.
