Steps:
- Preheat oven to 200C/390F (standard) or 180C/350F (fan / convection).
- Place Vegetable ingredients in a large bowl. Toss well to coat.
- Add sausages and toss briefly.
- Transfer into roasting pan. Pan should be of a size so the vegetables are stacked about 2 deep - see photos and video. Rearrange sausages so they are on top.

SAUSAGE CASSEROLE RECIPE

Steps:
- Heat the oil in a large sauté pan and fry the sausages for 8-10 mins, turning frequently until browned all over. Remove from the pan, cut in half and set aside.
- Drain any excess oil from the pan then add the onion and garlic and sauté for a few minutes to soften. Add in the leeks, potato and smoked paprika and cook for 4-5 mins.
- Pour in the tomatoes, red wine and stock and bring to the boil. Reduce the heat and return the sausage pieces to the pan, along with the cannellini beans. Cover with a lid and cook for 20-25 mins over a low heat, stirring occasionally. Remove the lid and continue to cook for a further 5-10 mins.
- Season to taste, and scatter with parsley or chives. Serve with crusty bread.

- Preheat oven to 375 degrees.
- Grease large casserole.
- Cut precooked sausages into 2" pieces, and both peppers into 1/4" slices.
- Cut precooked potatoes into fourths, lengthwise, then into halves.
- Combine sausage, peppers, potatoes, onion, undrained tomatoes,and basil into large bowl.
- Mix very gently.
- Spoon mixture into casserole.

- Preheat oven to 375.
- Butter 13x9x2 glass baking dish.
- Remove sausage from casings and sauté over medium heat until browned, about 10 minutes. Add green onion. Drain oil packed tomatoes and add along with 2 tablespoons parsley, stir until mixed well.
- Spread sausage mixture in prepared dish. (At this point you can cover and refrigerate overnight.Continue the next step the following day.).
- Whisk eggs, egg yolks, half and half, whipping cream and mozzarella in a large bowl, blend well.
- Pour over sausage mixture then sprinkle remaining 2 tablespoons parsley on top.

- Place the potatoes in a medium pot and cover with cold water. Season the water with a little salt and bring to the boil over a high heat. Parboil the potatoes for 15 minutes or until a knife inserts into them easily. Remove and drain and slice into 1cm rounds.
- Using a peeler, shave strips of rind from the lemon and arrange in the bottom of a large oven tray. I used an enamel rectangular 24x18cm tray but use anything you have on hand, as long as everything can fit snuggly in a single layer and the tray has a slightly deeper edge to keep in all of the juices. Bash the garlic with the palm of your hand or the side of your kitchen knife, peel them and add to the tray, along with the capsicum and herbs. Arrange the potato slices onto the tray. Drain the tinned tomato from their juices (reserve for another use, see tips above) and squeeze the whole tomatoes on and around the potatoes. Drizzle with most of the olive oil and all of the red wine vinegar and season well with salt and pepper. Nestle the sausages into the potatoes and drizzle with the remaining olive oil.
- Bake in the preheated oven for 30 minutes. Turn the sausages over and rotate the tray. Cook for a further 15-20 minutes until the sausages are golden and the potatoes beginning to colour.
