Sausage, Cheese & Potato Breakfast Wraps = a delicious and easy breakfast recipe.

1 - 20oz bag Simply Potatoes Steakhouse Seasoned Diced Potatoes
1/4 cup vegetable oil
5 flour tortillas
1 cup crumbled, cooked pork sausage
1 cup triple cheddar shredded cheese

Steps:

  • Heat a large skillet over medium heat with oil. Once oil is hot, add potatoes, stir and cover.
  • Stir potatoes every 3 minutes for 15-20 minutes, until fully cooked and tender.
  • Warm tortillas in the microwave for 30 seconds.
  • Build your wrap with a layer of potatoes, sausage and a sprinkling of cheese. Fold the tortilla and serve warm.

1 medium green pepper
1 medium sweet red pepper
1 medium sweet yellow pepper
1 package (14 ounces) smoked turkey kielbasa, sliced
2 large potatoes, cut into wedges
1 medium onion, chopped
4 teaspoons lemon juice
4 teaspoons olive oil
1/2 teaspoon garlic powder
1/2 teaspoon pepper
Lemon wedges, optional

Steps:

  • Cut peppers into 1-in. pieces; place in a large bowl. Toss with the next 7 ingredients. Divide mixture among 4 double thicknesses of heavy-duty foil (about 18x12 in.). Fold foil around mixture, sealing tightly., Grill, covered, over medium heat until potatoes are tender, 30-35 minutes. Open foil carefully to allow steam to escape. If desired, serve with lemon wedges.

1 pound bulk spicy pork sausage
1 package (28 ounces) frozen O'Brien potatoes
4 eggs
1/2 cup milk
Salt and pepper to taste
12 flour tortillas (8 inches)
Sour cream and salsa, optional

Steps:

  • In a large skillet, cook sausage over medium heat until no longer pink; drain. Add potatoes; cook until lightly browned, about 15 minutes. , In a large bowl, whisk the eggs, milk, salt and pepper; add to sausage mixture. Cook and stir over medium heat until eggs are completely set. Divide mixture among tortillas; roll up tightly. , Place in a greased 13-in. x 9-in. baking dish. Microwave, uncovered, on high for 2-4 minutes or until heated through, or microwave individually for 30 seconds. Serve with sour cream and salsa if desired.
