We always have plenty of pork sausage around, so when I need a quick supper, I use this handy recipe. The colorful vegetables give the hash a bold look to match its flavor. -Virginia Krites, Cridersville, Ohio

Number Of Ingredients 7

1 pound bulk pork sausage
1 medium onion, chopped
2 medium carrots, grated
1 medium green pepper, chopped
3 cups diced cooked potatoes
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a large cast-iron or other heavy skillet, cook the sausage over medium heat until no longer pink; drain. Add the onion, carrots and green pepper; cook until tender. Stir in the potatoes, salt and pepper. Reduce heat; cook and stir until lightly browned and heated through, about 20 minutes.

This Sausage and Potatoes Breakfast Hash Recipe is an easy 2 ingredients meal. Ground pork sausage and fried potatoes will keep you full well into your day.

1 Lb Country Style Ground Pork Sausage
4 Large Yukon Gold Potatoes - cut to cubes equal in size
2-3 Tablespoons Oil
Salt/Pepper - to taste
Favorite Seasoning Blend - to taste

Steps:

  • Brown and crumble sausage in large bottom pot or pan. I use a potato masher to achieve small crumbles. Cook to desired crispness. Remove sausage and set aside. Leave oil in pan.
  • Add potatoes to pan and fry over medium/high heat. Add additional oil as needed. Toss and fry until potatoes are browned and tender.
  • Add sausage back to pan. Season with salt, pepper and seasoning blend. Toss and serve.

I did a pantry, freeze, fridge raid and this is what I came up with for supper. A delicious way to use breakfast sausage.

Number Of Ingredients 6

2 lb sausage
6 red potatoes
1-2 green bell pepper
1 small sweet onion
1 tsp ea. of mrs. dash original blend, granulated garlic
1/2 tsp ea. of black pepper and granulated onion

Steps:

  • 1. Wash potatoes and poke a hole in them with fork or knife. Place in microwave for 6 min.
  • 2. Break sausage up into skillet. Use your favorite, I used half fresh pork sausage and half fresh smoked jalapeno pork sausage. Add diced bell pepper and onion. Cook over med high heat. Break sausage apart into bite size pieces as it cooks.
  • 3. Cut microwaved potatoes in half and allow to cool until cool enough to handle. Then dice them into small bite size cubes. Add to sausage.
  • 4. Continue to cook and stir until sausage is done. You can cover with a lid or cook uncovered. Be sure to stir fairly often to ensure even cooking.

1/2 pound maple pork sausage
1 large sweet potato, peeled and cut into 1/2-inch pieces
1 medium red onion, chopped
2 teaspoons chili powder
1/4 teaspoon plus 1/8 teaspoon salt, divided
1/4 teaspoon plus 1/8 teaspoon pepper, divided
1/2 cup shredded cheddar cheese
1 tablespoon butter
4 large eggs
Salsa, optional

Steps:

  • In a large nonstick skillet, cook sausage over medium heat 4-6 minutes or until no longer pink, breaking into crumbles; drain. Stir in sweet potato, onion, chili powder and 1/4 teaspoon each salt and pepper. Cook, uncovered, 15-20 minutes or until potatoes are tender, stirring occasionally. Remove from heat. Sprinkle with cheese; cover and let stand until cheese is melted., Meanwhile, in another nonstick skillet, heat butter over medium-high heat. Break eggs, 1 at a time, into pan; immediately reduce heat to low. Cook, covered, 5-6 minutes or until whites are completely set and yolks just begin to thicken. If desired, carefully turn eggs and cook second side to preferred doneness. Sprinkle with the remaining salt and pepper. Serve hash with eggs and, if desired, salsa.

1 package (12 ounces) fully cooked sun-dried tomato chicken sausage links or flavor of your choice, coarsely chopped
1 package (20 ounces) refrigerated diced potatoes with onion
1/2 cup chopped sweet onion
1/4 teaspoon plus 1/8 teaspoon pepper, divided
1/2 cup chopped roasted sweet red pepper
1 tablespoon butter
4 large eggs

Steps:

  • In a large nonstick skillet, heat 1 tablespoon oil over medium-high heat. Add sausage; cook and stir 4-6 minutes or until lightly browned. Remove from pan., In same pan, heat remaining oil over medium heat. Add potatoes, sweet onion and 1/4 teaspoon pepper; cook, covered, 10-12 minutes or until golden brown, turning potatoes every 2 minutes. Stir in red pepper and sausage; heat through., Meanwhile, in another large nonstick skillet, heat butter over medium-high heat. Break eggs, one at a time, into pan; immediately reduce heat to low. Cook, covered, 5-6 minutes or until whites are completely set and yolks just begin to thicken. If desired, carefully turn eggs and cook second side to desired doneness. I love hash (roast beef, corned beef or turkey)...It can be a good use for leftovers...And I love the annual Taste of Home cookbooks! Here's a variation of a meat Hash (this time with pork sausage), from the 1999 Annual Taste Of Home cookbook, placed here for safekeeping!

1 lb pork sausage (by bulk in a roll)
1 medium yellow onion, chopped
2 medium carrots, grated
1 medium green bell pepper, chopped
3 cups potatoes, diced and cooked (yukon or red bliss)
1/4 teaspoon black pepper

Steps:

  • In a skillet, on medium heat, saute the sausage; then add the onion, carrots and bell pepper.
  • Stir to combine and cook until the vegetables are tender; Stir in the potatoes and seasonings; reduce heat to low.
  • Simmer for approximately 20 minutes or until sausage is fully cooked and the mixture is heated through.
  • NOTE: lighten the recipe by substituting turkey sausage for the pork sausage.

  • Heat the olive oil in large non-stick frying pan over medium heat, then add potatoes, carrots & rosemary and stir well to coat.
  • Place a tight-fitting lid on the pan and leave to cook on medium heat for 8 minutes - see my notes for suggestions if your pan doesn't have a lid.
  • After the 8 minutes is up remove the lid and add sliced sausages, chopped onion and bacon to the same pan and stir well to coat.
  • Allow everything to fry on medium heat (not covered) for 8-10 minutes (without moving), turning the hash every 2 minutes with a large spatula, (this will give you good colour and caramelisation).
