- Heat oven to 350ºF.
- Cook pasta as directed on package, omitting salt; drain. Rinse with cold water; drain well.
- Brown sausage with onions in large skillet on medium heat 7 min.; drain. Return sausage to skillet. Add spinach; cook and stir 1 min. or just until wilted. Remove from heat. Stir in 1 cup pumpkin.
- Pour 1/2 cup broth into 13x9-inch baking dish. Spoon pumpkin mixture into pasta shells; place in baking dish. Cover.
- Bake 30 min. or until heated through. Meanwhile, cook cream cheese spread, bacon and remaining broth in large saucepan on low heat 5 min. or until cream cheese is melted and mixture is well blended, stirring frequently. Add remaining pumpkin; mix well. Cook 1 min. or until heated through, stirring occasionally.
- Spoon cream cheese sauce over shells. Top with mozzarella; bake, uncovered, 10 min. or until melted.

PASTA WITH PUMPKIN AND SAUSAGE

- Heat a large, deep nonstick skillet over medium high heat. Add 1 tablespoon of olive oil to the pan and brown the sausage in it. Transfer sausage to paper towel lined plate. Drain fat from skillet and return pan to the stove. Add the remaining tablespoon oil, and then the garlic and onion. Saute 3 to 5 minutes until the onions are tender.
- Add bay leaf, sage, and wine to the pan. Reduce wine by half, about 2 minutes. Add stock and pumpkin and stir to combine, stirring sauce until it comes to a bubble. Return sausage to pan, reduce heat, and stir in cream. Season the sauce with the cinnamon and nutmeg, and salt and pepper, to taste. Simmer mixture 5 to 10 minutes to thicken sauce.
- Return drained pasta to the pot you cooked it in. Remove the bay leaf from sauce and pour the sausage pumpkin sauce over pasta. Combine sauce and pasta and toss over low heat for 1 minute. Garnish the pasta with lots of shaved cheese and sage leaves.
- Serve pumpkin sausage pasta with pumpernickel or whole grain bread and Spinach Salad with Apple and Red Onion.
- Place spinach, apple, and onion in a salad bowl. Place oil, vinegar, mustard and honey in a small plastic container and fit lid on container. Shake dressing to combine, 1 minute. Pour dressing over salad, toss, and season with salt and pepper, to taste.
SIMPLE STUFFED SHELLS
A make-ahead version of an Italian classic, these cooked pasta shells are stuffed with hearty beef, ricotta and mozzarella. Make a double batch and keep one in the freezer for a handy potluck dish.

- Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
- In 2-quart saucepan, heat oil over medium heat. Add onion and garlic; cook 2 to 3 minutes, stirring occasionally, until softened. Add beef. Cook 8 to 10 minutes, stirring occasionally, until beef is thoroughly cooked. Stir in tomatoes. Season with salt and pepper. Reduce heat to low; cook uncovered about 20 minutes until liquid is reduced.
- Meanwhile, cook and drain pasta shells as directed on box, using minimum cook time. Rinse with cold water to cool; drain.
- In medium bowl, mix ricotta cheese, 1 cup of the mozzarella cheese, the egg and 2 tablespoons basil.
- Spoon about 2 cups meat sauce into baking dish. Using small spoon, carefully fill each pasta shell with about 2 tablespoons cheese mixture (do not overfill). Invert shells and place on sauce in baking dish. Spoon remaining meat sauce over shells. Sprinkle with remaining 1 cup mozzarella cheese.
- Bake uncovered about 30 minutes until sauce is bubbly and cheese is melted. Garnish with additional basil.

- Bring a large pot of water to a boil and cook the pasta shells for 7 minutes. While the pasta shells are cooking, put ice and water in a large bowl and set aside. When the pasta is done cooking, drain and put the pasta into the cold ice water and set aside for later.

- Cook the pasta shells according to package instructions*. Drain and rinse shells and allow them to cool before handling.
- *While the water is boiling for the pasta, combine the ground turkey, garlic, parsley, Italian seasoning, ¾ teaspoon of the salt, ¼ teaspoon of the black pepper, the minced onions, fennel seed, paprika, and crushed red pepper flakes in a mixing bowl. Mush together with a fork or your hands until thoroughly combined. While the pasta is cooking, mist a large skillet with cooking spray and bring over medium heat. Add the seasoned ground turkey to the heated pan and cook, breaking up the meat into bite-sized pieces and stirring occasionally until the meat is cooked. Add the spinach to the pan and stir. Cook for another 2 minutes or so until the spinach is wilted. Remove from heat and stir in the ricotta cheese until well combined.
- Pour the broth and milk into a small saucepan and bring over medium heat. Cook until you start to see the first signs of bubbling and then add the pumpkin and reduce the heat to low. Whisk the pumpkin into the liquid until it absorbs and the sauce becomes creamy. Add the remaining ¼ teaspoon salt, ¼ teaspoon black pepper, marjoram, sage, and 1 ounce of the shredded parmesan. Stir together until the parmesan is melted into the sauce.
- Pre-heat the oven to 350. Spread about ½ cup of the pumpkin sauce across the bottom of a 2 quart casserole dish (such as a 7x11) and set aside. Make sure the pasta shells are cool enough to handle, then use a spoon to stuff them full of the turkey/ricotta filling. Lay the stuffed shells in a single layer in the prepared casserole dish, open side facing up. Pour the remainder of the pumpkin sauce over the top of the stuffed shells to coat evenly. Sprinkle the remaining ounce of shredded Parmesan over the top. Place the dish in the preheated oven and bake for 30 minutes.
