SAUSAGE FRITTATA WITH PEPPERS AND ONIONS
Sausage Frittata with Peppers and Onions is an easy skillet recipe with flavourful kolbassa (kielbasa) sausage and a spicy, peppery kick! It's also gluten-free and perfect for any meal of the day.

Steps:
- Add 1 tablespoon of oil to a 10-inch cast iron skillet and heat over medium heat.
- Add the sausage slices to the skillet and brown on both sides. This should take about 5-7 minutes. Transfer to a plate and set aside.
- Carefully grease the bottom and sides of the skillet with the remaining 1 tablespoon of oil. Add the chopped peppers and onions and sauté for 2-3 minutes, or until they start to soften. Add in the garlic and cook for another 2 minutes, stirring frequently to ensure the garlic doesn't burn.
- Add the sausage back in and stir everything around to ensure even distribution.
- In a medium-sized bowl, whisk together the eggs, salt, red pepper flakes and pepper. Pour over the sausage mixture. (You may need to reduce the heat to medium-low to ensure the frittata doesn't burn on the bottom. You can also swirl the egg around the edges of the pan to help it seep down around the frittata and cook quicker).
- Cook for 5-7 minutes, or until the eggs start to set around the edges.
- Place the frittata in the oven and broil for 2-3 minutes, or until the eggs are set and the frittata is browned on top.
- Remove from oven and let rest for a few minutes before cutting into slices and serving.
- Store any leftovers in an airtight container in the refrigerator and enjoy within 3-4 days.

SAUSAGE AND RED PEPPER FRITTATA

- Preheat the oven to 300 degrees F.
- Heat the olive oil in an oven-safe, 10-inch nonstick skillet over medium-high heat. Add the sausage and cook, stirring occasionally and breaking up the pieces with a wooden spoon, until no longer pink in the middle and cooked through, 6 to 7 minutes. Use a slotted spoon to remove the sausage to a plate. Add the pepper and onion to the skillet and cook, stirring occasionally, until softened, 5 to 6 minutes. Stir in the rosemary and cook until just fragrant, about 1 minute.
- Meanwhile, whisk the eggs, cream, cheese, 1 teaspoon salt and a few grinds of black pepper together in a large bowl until combined. Remove the skillet from the heat and add the sausage. Pour the egg mixture on top and gently stir to incorporate the fillings. Bake until the eggs are just set and no longer jiggly in the middle, 50 to 55 minutes.
- Let sit for 5 minutes before sliding the frittata out of the skillet onto a serving platter. Slice into wedges to serve.
SAUSAGE AND PEPPER FRITTATA

- Preheat the oven to 350 degrees F.
- Coat a nonstick 10-inch saute pan with olive oil. Add the sausage and brown. Add the peppers and saute until they are soft.
- In a bowl, add the Parmigiano to the beaten eggs and season lightly with salt. Using a heat-proof rubber spatula, stir the eggs into the pan with the sausage and peppers. Stir the eggs to evenly distribute the sausage and peppers throughout the eggs. Once the eggs set on the bottom and around the sides of the pan, place the pan in the preheated oven for 7 to 8 minutes or until the eggs are cooked through. Remove from the pan. Cut into wedges and serve hot or a room temperature.

- Cook and stir sausage and onions in oil in heavy oven-proof 10-inch skillet on medium heat 5 minutes or until light golden brown.
