CORN BREAD-TOPPED SAUSAGE PIE

Steps:
- Heat oven to 400°F.
- In 10-inch skillet, cook sausage, onion, bell pepper and garlic over medium heat 8 to 10 minutes, stirring frequently, until sausage is no longer pink; drain. Stir in tomato sauce, corn and mushrooms. Heat to boiling; remove from heat.
- In medium bowl, stir all topping ingredients except cheese. Beat vigorously with spoon 30 seconds. Stir in cheese.
- Spoon sausage mixture into ungreased 2-quart casserole. Pour topping over hot sausage mixture, spreading evenly.
- Bake uncovered 20 to 25 minutes or until topping is golden brown.

- Brown sausage in skillet.
- Drain and put sausage in greased pie pan.
- Pour drained can of corn over sausage.
- Salt and pepper to taste.
- Prepare corn bread mix according to package directions.
- Pour over sausage/corn mixture.
- Bake at 400° for 25-30 minutes, or until corn bread is golden.

This is a very interesting recipe. I found this recipe in a cookbook for people with diabetes. My father has diabetes and he loves this recipe.

Steps:
- Preheat oven to 375°F.
- Cook sausage, onion, and garlic in a large skillet over medium heat until meat is browned and crumbled.
- Add tomatoes, chilies, corn, and chili powder and simmer 20 minutes.
- Spoon mixture into an 8-inch baking dish coated with nonstick cooking spray. Set aside.
- Combine cornmeal, flour, baking powder, and salt in a medium bowl, mixing well.
- Combine egg, milk, and oil in a small bowl.
- Add to dry ingredients, stirring just until moistened.
- Spread corn bread mixture over sausage mixture.
- Bake for 30-40 minutes or until golden brown.
- Let cool for 5 minutes. Enjoy!

Cornbread is a staple here in the South. I added sausage and cheese to a cornbread recipe and came up with this satisfying dish. It goes especially well with soup.

- In a skillet, cook the sausage and onion over medium heat until meat is no longer pink and onion is tender; drain. In a bowl, combine cornmeal, flour, baking powder and salt. Add the corn, milk, eggs and oil. Pour half into a greased 10-in. ovenproof iron skillet. Sprinkle with the sausage mixture and cheese. Spread remaining cornmeal mixture on top. Bake at 425° for 45-50 minutes or until a toothpick inserted in the cornbread comes out clean.

- In a large cast iron skillet, heat the oil over medium heat. Add the sausage and cook until brown on all sides, rotating as necessary. Transfer sausages to a cutting board and slice, crosswise on a diagonal into 1-inch-thick slices.
- In the same skillet, add the onions and cook, stirring occasionally for about 4 minutes. Add the garlic and the kale, season with salt and pepper. Continue to cook until the kale begins to wilt, about 2 minutes. Remove from heat and add the sausage pieces back into skillet and toss with the vegetables.
- Prepare the cornbread topping: in a mixing bowl, whisk together the corn muffin mix, parmesan and season with pepper. Whisk together the milk and the egg then add to the dry ingredients. Stir all to combine. Spread the corn muffin batter over the sausage mixture. Bake until golden brown, about 15 to 20 minutes.
