THE BEST OVEN BAKED (FOIL-WRAPPED) BABY BACK RIBS
Tender, tasty and juicy these ribs are always requested by my family.

Steps:
- A day before, in a large saucepan over medium heat, mix together the ketchup, tomato sauce, brown sugar, wine vinegar, molasses, liquid smoke, and butter. Season with garlic powder, onion powder, chili powder, paprika, celery seed, cinnamon, cayenne, salt, and pepper.
- Reduce heat to low, and simmer for up to 20 minutes. For a thicker sauce, simmer longer, and for thinner, less time is needed. A sauce can also be thinned using a bit of water if necessary. Brush sauce onto any kind of meat during the last 10 minutes of cooking.
- Preheat oven to 300 degrees F.
- Pat ribs dry with a paper towel and remove the membrane that covers the bony side of the ribs.
- Apply Bar-B-Que Creole Seasoning Blend Recipe rub to ribs on all sides.
- Lay ribs, bone side down on a long sheet of foil.
- Lay another layer of foil on top of ribs and roll and crimp edges tightly, rolling the edges facing up to seal.
- Place on baking sheet and bake for 2-2 1/2 hours or until meat has started to shrink away from the ends of the bone.
- Remove from oven.
- To finish ribs under the broiler, set oven to broil and place the ribs bone side up, on a broiling rack, brush with barbeque sauce and place, uncovered, under the broiler for about 5 minutes until the sauce is bubbly and cooked on, watch carefully, so they don't burn. Turn the ribs over and repeat on the meaty side. Remove the ribs from the broiling pan and let rest 5 minutes before slicing.
BARBECUE RIBS

- For the ribs: Pat the ribs dry with paper towels. Combine the brown sugar, black pepper, salt, paprika, garlic powder, onion powder and cayenne pepper, in a small bowl. Completely coat both sides of ribs with the dry rub, pressing it into the meat. Wrap each rack tightly in aluminum foil and refrigerate for at least 6 hours and up to overnight.
- Preheat the oven to 300 degrees F. Put the foil-wrapped ribs on a baking sheet and bake for 2 hours. Cool for 15 minutes, then carefully remove and discard the aluminum foil.
- For the barbecue sauce: Meanwhile, put the sugar, cayenne, red pepper flakes and garlic powder in a medium saucepan. Mix well together to break up any lumps. Stir in the ketchup, cider vinegar, Worcestershire sauce and salt and bring to a simmer over medium heat. Cook, stirring occasionally, until the sugar is melted and the sauce thickens slightly, about 5 minutes. Makes 3 1/4 cups sauce.
- Preheat a grill to medium-high heat. Brush the ribs liberally with the barbecue sauce and grill until the sauce starts to darken, about 10 minutes. Cut into individual ribs and serve warm with any extra barbecue sauce on the side.
BEER RIBS
Beer isn't just for drinking. Here, it's drizzled on top of the ribs to help the meat break down as it cooks low and slow in an oven. It's also the star ingredient in the barbecue sauce that glazes these super tender ribs that are finished off on a grill for a slightly smoky flavor.

- Combine the light brown sugar, smoked paprika, celery salt, garlic powder, onion powder, allspice, 2 tablespoons salt and a generous amount of pepper in a small bowl. Rub the mixture on both sides of the rib racks.
- Wrap each rib rack in 3 pieces of aluminum foil and refrigerate for 6 hours and up to overnight.
- Preheat the oven to 300 degrees F. Place the ribs side-by-side on a baking sheet. Unwrap the foil slightly, pour 2 tablespoons beer over each rib rack and then seal the foil tightly. Bake until the ribs are tender, and the meat can easily be pierced and pulled away with a fork, about 2 hours 30 minutes. Let cool, uncovered, until warm, about 20 minutes. Alternatively, cover and refrigerate for up to 1 day.
- Put the shallots and remaining beer in a small saucepan and bring to a boil over high heat. Boil until the beer reduces to 1/4 cup, about 10 minutes. Whisk in the ketchup, molasses, whole-grain mustard, chipotle in adobo sauce, chopped chipotle and sherry vinegar. Reduce the heat to medium-low and let simmer, stirring occasionally, until the sauce thickens slightly and reduces to about 1 1/4 cups, 8 to 10 minutes.
- Prepare a grill or large grill pan for medium-high heat. Clean and oil the grill grates.
- Brush the top of each rack of ribs with 1/4 cup of the barbecue sauce. Working in batches as needed, grill, sauce-side down, until browned and slightly charred, about 4 minutes. Cut the ribs between the bones, slather with the remaining 1 cup of sauce and serve.
GRILLED SPARE RIBS WITH BARBECUE SAUCE
Wrapped in foil, the spiced ribs oven-cook in intense heat; the foil locks in their moisture for supremely tender results. On with the sauce and over to the grill, and they're ready.

- Preheat oven to 400 degrees. Season ribs with chili powder, salt, and pepper. Stack slabs on a double layer of aluminum foil; wrap tightly. Place on a rimmed baking sheet. Cook until meat is fork-tender, 1 1/2 to 2 hours.
- Meanwhile, make barbecue sauce: In a medium saucepan, melt butter over medium heat. Add onion and garlic; season with salt and pepper. Cook until soft, 2 to 3 minutes. Add ketchup, vinegar, Worcestershire, cayenne, and desired variation (see below). Bring to a simmer. Cook, stirring occasionally, until slightly thick, about 5 minutes. Set aside.
- Heat grill to medium-high; lightly oil grates. Carefully remove ribs from foil, pouring off any accumulated liquid. Brush ribs generously with sauce; grill until charred, 2 to 3 minutes per side. Serve with extra sauce, if desired.
BARBECUE RIBS
This recipe is easier than it sounds. I usually cook the ribs the day before and grill them for a quick dinner the next night. FYI: the sauce is much better after it is cooked. It is not a dipping sauce.

- Preheat oven to 350 degrees F (175 degrees C). Cut spareribs into serving size portions, wrap in double thickness of foil, and bake for 1 1/2 hours. Unwrap, and drain drippings. (I usually freeze the drippings to use later in soups.) Place ribs in a large roasting pan.
- In a bowl, mix together brown sugar, ketchup, soy sauce, Worcestershire sauce, rum, chile sauce, garlic, mustard, and pepper. Coat ribs with sauce and marinate at room temperature for 1 hour, or refrigerate overnight.
- Preheat grill for medium heat. Position grate four inches above heat source.
- Brush grill grate with oil. Place ribs on grill, and cook for 30 minutes, basting with marinade.

- PREHEAT grill to medium heat. Mix together barbecue sauce, marmalade and pepper sauce until well blended; set aside.
- CUT ribs into 2- or 4-rib sections. Center half of the ribs in single layer on each sheet of Reynolds Wrap Heavy Duty Aluminum Foil.
