Steps:
- Preheat the oven to 350 degrees F (175 degrees C).
- Bring a large pot of lightly salted water to a boil. Add the egg noodles, and cook until tender, about 8 minutes. Drain and transfer to a greased 9x13 inch baking dish.
- Melt the margarine in a saucepan over medium heat. Whisk in the flour using a fork so that no lumps form. Gradually stir in the milk. Bring to a simmer, stirring constantly, then add the cheese. Cook and stir until smooth. Stir in the cream of mushroom soup, and then the dried beef. Stir into the noodles in the casserole dish, and top with crushed potato chips.
- Bake for 30 minutes in the preheated oven, until the sauce is thick and bubbling, and top is toasted.

DRIED BEEF AND NOODLE CASSEROLE
This is a recipe that I adopted from the "'Zaar". As it stands this is a good warm meal for a chilly night. I will be adapting at some point to see if I can make it even better!

Here's some good, down-home Pennsylvania Dutch cooking for you--dried beef is very popular here. This recipe proves there's more that you can make with it besides 'S.O.S.!' Serve with salad or a green vegetable and you have a meal that really sticks to your ribs on those cold winter nights.

DRIED BEEF CASSEROLE
I was asked to make a main dish for a breakfast meeting at work a few years ago. Everyone always made stratas and french toast casseroles. I played around with a few recipes I had and decided to try something on the cream dried beef side. I came up with this. Instead of being a french toast casserole, I just added the dried beef...
