CAMPFIRE HOT DOGS

Condiments take a hot dog from good to great. Our ultimate campfire dogs are made with yellow cheddar cheese and bacon, which are grilled with the hot dogs until the bacon is crisp and cheese has melted.

6 hot dogs
3 ounces yellow cheddar cheese, thinly sliced into 2-by-1/2-inch pieces
6 strips good-quality bacon (about 1/2 ounce each)
6 hot dog rolls
Condiments, such as mustard, relish, ketchup

Steps:

  • Heat a charcoal grill to medium-high. Slice hot dogs lengthwise without completely cutting through. Fill with cheese. Beginning at one end, wind the bacon around each hot dog to cover completely.
  • Place hot dogs on grill, cheese side down, and cook, covered, for 2 minutes. Uncover, and turn, cooking until the bacon is cooked through and crisp, 3 to 4 minutes. Place a hot dog in each roll, and top with desired condiments.

SASSAFRAS CAMPFIRE HOT DOGS

No hot dog tastes better than one which has been cooked over a campfire on a sassafras stick! The flavor of the sassafras just adds something heavenly to a good dog. Learn to identify sassafras trees so that you can cut sticks, (be aware of government park and forest rules about removing plants!), preferably where someone will let you walk into their woodlot and cut 2 or 3 sticks for a family. The sassafras tree/shrub has FOUR leaf shapes: "fork" (3-prong), "spoon", "left-handed mitten", and, "right-handed mitten". Crush a leaf and smell it and you will know for certain that you have found a small sassafras tree -- the ones about 6 feet tall (found in understory of a woods) are best. Cut it near the base (a new sprout will come up next year from the root), trim the main stalk of side twigs and at the terminus, try to make sure that you end up with 2 prongs, for 2 hot dogs, each about 5-6 inches long. Trim the bark off the end prongs where the hot dogs slide on. Enjoy!

  • Slide a hot dog on to your sharpened sassafras stick and cook it until it browns over the HOT COALS of a campfire, (not direct flames), turning the stick as necessary.
  • Slide the dog into a bun and add your favorite condiments!

SEATTLE DOGS

I'm from Seattle and everynight when all the bars are closing, party-goers flock to the multitude of hot dog stands lining the streets (affectionally called "street meat"). The most popular option is the tried and true Seattle Dog. It sounds like a wierd combination but it is oh so delicious! Some places also add sauteed cabbage if you want to give that a try.

2 hot dogs or 2 vegetarian hot dogs
2 hot dog buns
1 onion, halved and thinly sliced
1 teaspoon oil
1 teaspoon butter
1/2 teaspoon brown sugar
salt
pepper
3 ounces cream cheese (or more, i like a lot!)

Steps:

  • Heat the butter and oil in a skillet over medium-high heat. Add the onion and sugar, cook for 20 minutes or until onions are caramelized, stirring regularly. Season with salt and pepper to taste.
  • As the onions are caramelizing, heat the cream cheese in a pot until soft and warm but not melted/cooked.
  • Cook the hot dogs according to the package directions and toast the buns.
  • Spread cream cheese on each warm bun. Top with a hot dog and onions.

ALL NATURAL CARROT DOGS

This sounded just wierd enough to try it. Obviously a carrot is the same shape and close enough in color to make a decent hot dog substitute. But the real question is about the taste. The marinade really takes it to the next level. I think the sesame oil does it, but the vinegar gives it that "cured" flavor too. Adapted from Healthy Slow Cooking.

4 carrots (cut into bun lengths)
1/4 cup rice vinegar (or apple cider vinegar and a dash of salt)
1/4 cup water
1 tablespoon sesame oil
2 tablespoons soy sauce
1/4 teaspoon garlic powder (or 1/2 clove garlic minced)
1 dash liquid smoke (or 2 dashs)
pepper

Steps:

  • Fill a pot about half-way full of water, heat it on high until it boils. Turn down to medium heat and add the carrots. Cook until you can just pierce it through with a fork. You want it to still have a snap when you eat it. Run cold water over them to stop them from cooking more.
  • Combine the other ingredients to make the marinade. Use a container that has a tight lid so you can easily shake it without spraying it all over your kitchen. Marinate at least 3 to 4 hours, though they are fine for almost 2 days.
  • Put the carrots in the container and marinade for a few hours to up to a few days. If you marinate them longer they take on more of the vinegar flavor. If the carrots are very skinny I would not marinade them for more than 1 1/2 days so they don't taste too sour.
  • To serve heat the carrots in a 350 degree oven or on in a grill pan on a hot grill until heated through. It should take about 10 to 15 minutes.
  • Serve in a toasted hot dog bun with your favorite toppings. They're great the southern way topped with chili and cole slaw! Prep these on a weekend and you're ready for a quick weeknight treat.
  • You could also cook them in your slow cooker in the marinade. You will need to check on them so they do not get mushy, so it's not an overnight or all day affair. If they get mushy when you re-heat them it will make a mess. Cook until a fork just goes through the carrot, but the carrot is still slightly firm.

1 (10 count) package frankfurters
10 preformed taco shells
2 cups shredded cheddar cheese

  • Put hot dog sauce in a saucepan and cook at medium heat until hot.
  • Place a frank in each taco shell. Top with the heated chili sauce and cheese.
  • Place in microwave and and heat for 30 seconds or until the frankfurters are warm.

6 hot dogs
3 sticks string cheese, cut or peeled into thin strips
1 can pizza dough, cut length wise into 6 1 in (2 1/2 cm) wide strips
½ cup ketchup
½ cup mustard
½ cup relish
½ white onion, finely chopped
6 wooden skewers, 12 in (30 cm)

Steps:

  • Insert a skewer into a hot dog. Cut a spiral by holding your knife at a diagonal to the top of the hot dog and rolling it down along a cutting board until you reach the bottom.
  • Wind a strip of cheese into the spiral groove on the hot dog. You may need 2 strips of cheese to fill the entire spiral.
  • Lay a strip of pizza dough on a cutting board and place the end of the hot dog skewer on a diagonal. Gently roll the hot dog in the dough, ensuring that the dough overlaps so no cheese leaks through. Gently remove the skewer and loosely wrap the hot dog in a sheet of foil so the dough has room to expand as it cooks. Repeat with the remaining hot dogs and dough.
  • Place the hot dogs over low heat on a campfire or grill. Let them cook for 10 minutes, check to see that the dough has puffed, then flip over to cook through, about 10 minutes more.
  • Let the hot dogs cool for a few minutes before carefully unwrapping, then serve with ketchup, mustard, relish, and onion.
  • Enjoy!
